Thought I'd give it a go!

Hi,

I kind of made it up as I went...

385g dry soy beans (substitute with your fav beans)
vegetable stock cubes x 3 (I used 1 veg and 2 beef cubes)
150g cherry tomatoes halved
215g carrots peeled and chopped
115g sweet red pepper chopped
180g white cabbage chopped
140g celery chopped
1.5 tablespoon brown sugar
good dash of: onion powder, garlic salt, chilli powder, cumin, cayenne powder & tobasco sauce

Fresh onion & garlic would taste better but might not keep as long. If you use fresh, I'd lightly sauté them in a skillet first, along with all the spices. If you're not into spicy food, go easy on the cayenne and tobasco!! Add salt and pepper to taste. I think bean soup tastes best when slightly salty. Would be great with kidney and black beans.

Soak the beans overnight in water in the fridge. Drain and rinse well. Combine all ingredients and cook on high for 1.5 hours, stir well, turn to low and cook for 8-10 hours total.

This recipe is more Mexican.... Today I'm planning to make it again but using ham stock cubes and leaving out the Mex spices for something different.

Forgot to mention, fill slow cooker to top with water! I have the biggest slow cooker Argos carries, and it made 5 fairly big portions.

Pepper
Bit of chilli

Boil then blend :)

Took our dog to a cancer specialist this morning. Unfortunately there's nothing they can do. They said she probably only has a few weeks :-( Just when I started losing weight again too! :-(
 
Awww caz I'm so sorry to hear that :( it's such a cruel world isn't it. I know it's hard but try to not let it make you turn to food because if you put weight on it will make you feel even worse-trust me im a serial comfort eater! Xhugsx
 
Thanks, I will try!!!!! Took today off work as I was really upset this morning. The good news is I managed to do some exercise over the weekend and it didn't hurt my foot too much :) xx
 
OMG just tried on my bridesmaid and I zipped it up!!! I tried on the Monday before Christmas and it was inches too small!! It was too tight and. Squashed my back fat up but not bad for 2 weeks work!!! I will fit into it comfortably by May-positive thoughts!
 
I stayed strong and went to sleep! Woke up not hungry at all but my hubby made me crumpets and coffee because id asked last night when I was starving! He's already done them when I came out the shower so couldn't not eat them! It's weird I hardly eat breakfast Now but would have never missed it for the world before! Got a cheese sandwich and quavers for lunch and a graze box treat to snack on :)
