The curry recipe we always use is the top search result on Google if you search 'slimming world chicken curry' - you simmer onions in stock, add spices and meat (I've done it with chicken, lamb, beef and even just veggies) then stir in fat free yoghurt at the end - it's honestly delicious. Definitely worth a try and totally syn free.

Oh that sounds lovely. What spices do you use? Like is there an exact amount such as 1 tablespoon of curry powder or something. And how much stock? I will definitely try it. Does it be thick? I'm really excited to start trying lots of low-syn recipes and making the most of my syns ;)

Really just can't wait to get in to the swing of things.

Hey hun how was our first day back at class?
 
Happy Wednesday lovely Minimins Ladies! I cannot wait for the weekend. I know it's only Wednesday but it's nearly 11am so it seems OK to finally say that. Work is so busy at the moment and I just can't wait to do something nice this weekend. The weather here is glorious. It's such a pain sitting in the office when it's 25'C out. It is like Spain weather. I went out on my lunch break yesterday and bought a diet coke and I swear to God it was the best 15 minutes of my whole day, the sun beating down on me, fresh air and a cold crisp can of the good stuff. I was not a happy camper coming back in though, lol!

My first Slimming World meeting and weigh-in went very well on Thursday. I ended up being 14 stone 13lb which is about 4lb heavier than my last SW weigh-in but that was months ago and I went AWOL since then and tried various different things. Overall since I started my journey I have lost about 15lb. This is literally in about 2.5 years but I don't care, I am somewhat still happy because at the end of the day had I not yo yo'd and atleast TRIED for the past 2 years I would probably be about 20 stone now and miserable. There has to be something said here about trying! It really is not easy and if it was we would all be skinny minis with no struggle at all. That being said, I am ready to break the yo yo train and start consistently losing weight. I am taking a bit of a 'break' from focusing on the charity challenge and focusing on doing it for me. That's the most important thing. The weightloss will then follow and I'll get back in to blogging etc in a couple of weeks when I make some progress.

So back to Monday. The meeting was dead because presumably the sunny weather kept people away. To add to that my leader was on holidays and we had a replacement who God love her just wan't the best. Needless to say though I was SO happy to be back and it really felt liberating. Seeing some of the people I knew really hit home because some of them have lost so much weight since I last saw them. One of the girls has lost 3 stone and she looks amazing! She joined only a couple of months ago. It was a great motivator.

So I started fresh yesterday morning and here is yesterday's food diary...

Breakfast - 2 slices of Nimble bread toasted (HexB) with 2 teaspoons of butter (3) and a banana. Little sip of freshly squeezed orange juice (1)
Lunch - OH's gorgeous sausage cassarole which is just amazing. Syn free sausages (Mallons is the brand, I think they're Irish) with tonnes of superfree like courgette, chopped tomatoes, mushroom, loads of peppers, garlic and chickpeas. Yum! Packet of salt and vinegar velvet crunch (4) and a Liberte 0% Greek Style yoghurt (1)
Dinner - M&S Sushi Snack Pack (.5) Is this correct? Can't believe it's so low, happy days! Fruit salad from M&S and then another small bowl of the cassarole which I added some curry powder and HexA cheese to. So tasty!
Snack - an apple with 3 syns of peanut butter (random I know) options orange flavour hot chocolate (2) with low fat milk (3)

HexA - 40g low far cheddar cheese
HexB - 2 slices hovis Nimble bread

Syns - 14.5/15

Bit of a random day with food. I wouldn't be having the peanut butter again, it's just too high. Although it was a weird day I still stayed within my syns which I am really happy about. I'd like to keep today's syns under 10 though :D
 
I like the idea of having goals so I want to set myself a little mini-goal right now. I really want to be in the 13's by the time I go on holidays in 5.5 weeks. That would be a 14lb loss! I'm going to London in that time but don't plan on going crazy over there either. I really want to be under 14 stone going away. I know I will inevitably gain weight on holidays but if I can keep it to a 5lb gain I could totally lose that in 2 weeks when I get back and I would still be making a lot of progress. So the hope is that I will lost about 10 pounds before London and then another 4/5 pounds in the two weeks after London. That is the hope and I plan to use that to keep me focused. London shouldn't be too bad. There will be alcohol but I'll stick to vodka probably, and I will make good choices for breakfast and lunch. I might treat myself at dinner time and have a dessert if I fancy it but in general I don't want to go off the rails and eat crisps and chocolate when I don't need it. I can perfectly enjoy our few days there by eating 80% Slimming World friendly. I know I can do it! I'll also have my two Zumba Classes before and 2 Zumba classes after it so that should also help.

I am in a different place with all of this, and I am trying to be more realistic which I feel will lead to actual success! :eek:
 
Today's Food Diary for accountability...

Ugh, I don't feel too good right now. Just had two long meetings and during the second my stomach started gurgling and I could barely hold 'it' in. I ended up being in the bathroom for about 20 minutes and I just feel empty now. Sorry for the TMI but it was really awful, I feel really drained now. I woke up with the same thing this morning. The water in our building has been dodgy so I wonder if it's because of that. Or maybe switching back to 'normal' Slimming World eating? However I've been doing that for a good 5 days now so I doubt it. I also got my lovely mother nature surprise today so in general I feel quite shitty. I have Zumba tonight which I love so I'm hoping I feel tip top by then. Planning a nice easy dinner which I can throw together in 15 minutes when I get home, so I'm looking forward to that.

Today's Eats...

Breakfast - a banana and a liberte 0% Greek style yoghurt (1)
Lunch - 2 slices wm nimble bread (HexA) with sliced ham, rocket, and 75g of coleslaw (5) packet of velvet crunch (4) and a little over half a Danio Blueberry yoghurt (2) really wanted the full thing but it tasted a bit grainy and then I saw the expiry date was yesterday so I didn't finish it because I got turned off it then. It genuinely felt different though, that's why I checked the date. I wouldn't mind but I only bought it today. Hmm.
Snack - apple
Dinner - I plan to make a pasta dish using spagetti (whomemeal if I have it) tin of chopped tomatoes, red pepper, chilli, rocket, bacon medallions, cherry tomatoes, onion and topped with HexA cheese. I am excited for this!

I'll have a cup of tea after Zumba with some low fat milk from my HexA allowance.

HexA - 30g reduced fat cheddar and some milk in 1 tea
HexB - 2 slices wholemeal nimble bread
Syns - 12/15

I am quite happy with that day. I know the coleslaw is so syn-ladden but I really fancied it and I have yet to make one that I like the taste of. The one I made before was so mushy and not the way coleslaw should be, I also didn't love the strong extra light mayo flavour and felt it needed something else. ADo you guys grate the cabbage or put it in a food processor? All advice welcome because I would love to make a low-syn version that I actually like the taste of.
 
OMG I totally forgot how much I love Slimming World. My dinner was absolutely amazing!! Like unbelievable. I licked my plate. And the best part? It was totally syn-free and the cheese was my HexA. So so good :)

Yes I sure did hun. I fried off some onion, 1 red peppee, half a red chilli,4 cloves of garlic and some chopped smoked bacon medallions, then added about 10 cherry tomatoes which I chopped in half and then a tin of chopped tomatoes. I let that simmer away for about 10 minutes and adde garlic powder, smoked papeika, salt and pepper. It was so gorgeous :)
 
Good morning everyone! In three minutes I can say afternoon, now that's progress.

I am in a bit of a stinker today work-wise. I really truly dislike my job. Don't get me wrong I'm glad to be working and the money is good so I am extremely grateful, but the actual job sucks. I will never ever work in sales again after this. I absolutely hate the pressure. I just got an email from my boss basically saying my enquiry lists should be up to date as he is 'checking tomorrow'. It's so threatening and the pressure is unreal. I try and be calm and not let it get on top of me but that's really hard. The sales targets he has set are beyond difficult. I am the only person who works here other than the accountant who works part time and 17 hours per week. So I do everything - all the admin, marketing, sales and every other task imagineable. It's impossible to get it all done. I just hate it. I really do. I'm hear a year today and I hope that this will be my last July here...

We're planning to go to Canada! Me and OH that ia. The plan is to go in June next year so I hope to finish up here by the end of May. That is only 10.5 months away and I hope it flies in. So yes, I am so excited for that. I am such a home bird so it will be hard to say goodbye to my family but we plan to come home for Christmas so it will really only be goodbye for 6 months each time. I can't wait, it's the only thing keeping me going in here right now. A lot of planning and saving to be done, but we will get there.

Anyway, here is today's food. Well the plan for i anyway...

Breakfast - tried to make breakfast couscous but made it too watery, not enough, and I used frozen fruit which made it even more runny. All free anyway and superfree in the frozen berries.

Lunch - 2 slice wm nimble toasted with coleslaw (5) ham and lots of rocket. Packet of velvet crunch (4) and a muller greek style yoghurt (.5)

Snack - apple and banana

Dinner - roast chicken with roast stock potatoes (from Vintage Pockets blog, thanks hun) and broccoli, roast pepper and green beans. Gravy (2)

Dessert - sugar free jelly and maybe some yoghurt or something (2)

HexA - will have two teas later so 250ml low fat milk
HexB - two wholemeal nimble

Syns - 13.5/15

The coleslaw is really racking up the syns but i've bought it and not much else to have till we go shopping. And I am still within my syns :)

Sorry to hear about the job stress, hun. I can totally appreciate how you feel (see my diary from last summer up to April when I left my old job!!). I think working for a small company makes it much worse because you don't have any of the support or infrastructure that you get in a big company, which just makes little things in your life easier. You end up being responsible for things which aren't anywhere near your job description, or are beyond your control. And there always seems to be a horrible blame culture.

It's great that you have an escape plan - Canada sounds fantastic. We went to Cuba on holiday last year and met lots of Canadians, it really made me want to go and visit. It's such a gorgeous and varied country.
