Sorry! It's from the Curry Heaven book, Classic Chicken Curry:
brown an onion in Frylight,
then fry spices (curry powder 3tbsp, plus tsp each of coriander, cardamom, ground cloves, cumin, paprika, cinnamon, plus two garlic cloves chopped fine and grated ginger root) with the onions
add four chicken breasts (cut into large chunks), and brown slightly,
add a tin of chopped tomatoes and some chicken stock (300 mls),
simmer for 45 minutes.
I added fat-free fromage frais at the table, and added some green chillis to MrL's portion too.
Serves four (or two really hungry people)
