Daz FINALLY has a food diary

I don't tell people off Kay, just stand firm on my outlooks.

Funnily enough im literally just looking at the recipe for the cajun chicken, i have 2 fillets roasting on some chopped peppers at the moment, and seeing about cutting the cajun ingredients in half to do the other 2 fillets i have defrosted. Im ahead of myself though as i still have half of the doner, 3 ocean burgers, the roasted fillets, and now the possible cajun fillets, to get eaten before losing the food. I need to stop getting excited by the recipes and taking food out of the freezer too early. lol.

As for the doner, it will be good later, im going to try some home brew, sod the weight. lol.

I made some fish curry yesterday but am out of rice grrrr, but I have a cauliflower so am off to challenge myself to make some cauliflower rice, yum yum. Never made it before but have heard so much about it. I will try and spice it up like fried rice, if it comes our good then will post pics, if not then straight in my tummy lol .

An Indian without rice in the house, that has to be close to a hanging offence surely? lol. I do enjoy rice, in many forms, although i really do like to egg fry it. But i would be interested to hear how cauliflower rice comes out. As for fish curry, i have realised, after the ocean burgers, just how much i really do not like fish. Unless its battered from the chippy, and of course that is a no no. I used to make a beer batter and fry my own, but can't even do that now. There is a variation in the book, but im not too certain i would like it.
 
I agree I use a lot of spices to mask the smell of the fish. It's a tricky one because it has to be delicate, there's nothing worse than over cooked fish. Marinated in spices and baked in the oven slowly, its amazing !! I will be doing one on my express indian curries thread in the summer, I'm sure I will convert you ! :D Ok I'm off now, catch u later ! Will let you know how the cauliflower rice comes out ;).

Ive also got the Doner Meat in the fridge chilling ready to cook later tonight - Ive decided I need a food processor lol
 
Not mine lol - ive never needed one I used my hand blender to mix it and now I cant get the little bits of meat off that are fastened tightly around the underside of the blade grrrr


Ooops, that was silly Mother.

i hope you have packed the mince down tightly and weighted it.

Yes, but what they fail to allude to is that its not compact enough really, couldn't slice it thinly enough as it was crumbling. Needed to be compressed somehow, though i have no idea what would be the best way.
 
Mine crumbled too - maybe leaving it until cold would help but defeats the object really!! OH and myself enjoyed it, son on the other hand ate it but wasnt impressed lol - well it wasnt the real thing was it :mad:. It was nice enough though and will make it again

Its not something ive ever fancied trying Kay :( maybe give it one more try and then if its still not to your liking give up on it lol.. x

Its like i said, it needs to be compressed and weighted while in the fridge to compact it, then it wont crumble. Looks good though. How do you get your chips like that? i cannot get them to brown all over like that, even on one of those mesh things for the oven specifically for doing chips.

I cut them as normal then put them in the microwave for about 7 mins, then onto the mesh tray and spray with frylight into the oven on about 190 degrees until crispy and brown theyre lush

Strange, i must have a weird oven as that is what i do, unless its just being impatient, lol. Some brown quicker than others, maybe i should learn to try to cut all the chips the same size. haha. Or buy an actifry. :eek:

Do you take them out and shake them part way through? I do. Mine are not all the same size lol noooooooooooooo not an actifry lol

Well the idea of the mesh is meant to be so that you don't need to do that, hence why i bought it, but i shall try it next time.
