*deep breath* my journey to a thinner / healthier me

come on Emm you can do this :D just remember my lovely whatever happens, bad day, stress, ill still log in and own up. It stops a blip turning into anything other than a blip. The support and friends on here is brilliant :D xxxxxxxxxxxx

Thanks hun :bighug:

I just got really embarassed that I hadn't been able to get back on plan like I had planned to

emmy, i tend to read everybody elses diary and avoid mine when i am struggling:eek:
but it doesn't help, its normal to struggle to get back on plan (i should know) but you will :D

focus on your goal, but don't put to much pressure on your self you are changing long ingrained habits and it won't happen over night
you are doing so well and will continue to do so, don't hide from us cos we just want to support you xxx:bighug::bighug:

hope that doesn't sound to bossy xxx

It doesn't sound bossy at all hun, I really appreciate it :bighug:

Really need to drag Chris out shopping so I can get some decent meals planned, but that needs to wait until next week when he gets paid :(

I'll start building the water / fluid back up tomorrow. I do have to say I'm expecting either a sts or gain on monday morning. But I'm more than prepared to get back on at it and get rid of it and more besides xx

If you do gain then at least you know why and are being honest with yourself and to us and not being in denial about being off plan, that alone is a good thing! :)
Hope you're feeling much better now! X

hey, me too! finally decided this year was the year to lose weight and get healthy, been going for a month and already lost 28 1/2 pounds but was 24 stone to start off with, am loving it and feeling really positive, hang in there!:)

I'm feeling loads better now thanks hun, just glad to have given myself a kick up the backside and got back on here if that makes sense?

Right, I might be a bit quiet today, but it is for a good reason ;)

My plan for today is to search the internet for new slimming world friendly freezable recipes ready for next week.

If anyone has any recommendations they would be very much appreciated :flirt2:

Hi Emily x

Glad you're back and rating to go! Bolognaise is always a good one and if you make it veggie it'll suit any plan. :)

ooohhh yum :D can do a chilli too, thanks hun

I've also got a paella and sweet and sour on the list at the moment.

Definitely raring to go, and I have to say it feels pretty good

I'm currently cooking up a ratatouille in the slow cooker but sure you could do it in a sauce pan. I've chopped up courgette, Auvergne, onion, 2 Tins of chopped tomatoes, seasoning, and would have used chopped pepper too but forgot to buy them. You could add mince too? Then serve with rice, pasta, jacket potato, meat, anything really and you can freeze portions of it.

Ahhhhh I should have put the slimming world magazine on the list for when Chris went shopping for my mum earlier.

He got me 24 pour and seal bags for the freezer so that I don't have loads of bulky boxes taking up space. So far on the list of things to make I have

Mushroom soup
Sweet and sour sauce
Chilli con carne
Bolognese
Paella
Sausage and bacon casserole

I've also just been in touch with someone about arranging a private boat trip while we're in turkey. It's an absolutely stunning boat so I'm super excited :woohoo:

And I'm also trying to persuade Chris to let us go on a quad bike safari  He's having non of it at the moment though :banghead:

Hey sweetie, glad you're feeling better and back in the game :hug99:

Didn't I start sending you my list of recipes via email? did you ever get them? and if so where did I get to (they are alphabetical lol) if not I'll have a look and send you some more but for now I will post my recipe for Morroccan aubergine rolls/lasagne...it should be rolls but I was lazy and did it like a lasagne and it's totally freezeable and so scrummy I'm sure you'll love it xxxx:hug99:xxxxx

Moroccan Aubergine Roll
Filling:
1 x Red pepper, deseeded and diced finely (I use a V slicer)
1 x Green pepper deseeded and diced finely
1 x Large red onion, diced finely
½ Butternut squash, diced into small chunks and microwaved for about 6 mins to soften
125g broccoli, chopped finely
2 x Aubergines, finely sliced lengthways
2-3 tsp Moroccan spice (Ras El Hanout)
Extra Lean Mince (Optional)
Sauce:
1 x Large jar of Passata
1 x Tsp crushed ginger
1 x Clove crushed garlic
Mix all this together and set aside.
Method:
Spray a large frying pan with fry light, place all the diced veg into the pan and cook until soft, and add the spice.
Meanwhile place your strips of Aubergine on a baking sheet and spray with fry light.
Bake in a hot oven for about 10 mins, turning once during cooking time. Remove from oven, take 2 strips of aubergine, laying 1 strip over the other to form a cross shape.
Take a big spoonful of the veg mix and place in the centre of your aubergine, wrapping the aubergine around the mixture to form a parcel.
Place the parcels into an oven proof dish, pour over the sauce and bake in oven 180-200 for about 30-40 mins.

This dish freezes well, make the dish up but don’t cook it for the 30-40mins, pour over the sauce and freeze.
When ready to defrost, make sure it is thoroughly defrosted at room temperature and cook as per normal.

SYN FREE AND SUPERFREE ON ALL DAYS EXCLUDING THE RICE OR COUS COUS
I made this the other night and couldn’t be bothered to make the rolls so I cooked the aubergine and then layered an oven proof dish with the aubergine and then put the mince on top and then another layer of aubergines and then the sauce and a hexa of cheese, yummy xxxx

Ohhhhh gosh, I totally forgot about them  We got to C :D

I'm just having a leaf through them now and saving them all to the computer ready to print :woohoo:

Can you tell me the last one I sent you as I will start from there resending them lol...I am a dozy mare at times, forget my own head if it weren't sewn on :giggle: xxxxxx

Actually we got to Ds and the last one you sent was Doner Kebab :giggle:

I've got loads of new ideas for this week, am going to try the cheesy tuna quiche and the morrocan soup

Great well I will continue to send you the recipes, there are hundreds more to go, so I suggest you just print the ones you think you'd actually do and maybe save the others to disc like I have xxx:hug99: xxxx
