thank you all my lovely sw buddies, i am absolutely shattered didn't finish work til 7:45, so i am off to bed but just got to share this:

had a bowl of rice pudding left in fridge which i had mixed with a rhubarb yogurt, just added some drinking chocolate and reheated, it tastes like turkish delight! yum x sleep well x

Slow cooked the honey & mustard chicken today as i knew i would be late leaving work (finally got home at 8pm) omg i will always cook thighs and drumsticks in the crockpot from now on, the meat had just all fallen from the bone it was scrumptious!

Cheese & Mustard Potatoes:

served (me with carrots/tomatoes and paul's with baked beans)

For each potato, rub each potato with little bit of frylight then roll in salt. Bake in the oven for 1 hour on gas mark 6.

Mix together 1 egg yolk, 1 teaspoon of mustard powder & grate 42g Kerry's low low cheese.

Remove potato from oven and gently ease it apart. Scoop out the inside, fluff with a fork & mix in the cheese mixture, season, then spoon back into the potato.

Return to the oven for 10-14 minutes or until the cheese is melted and golden.

Delicious!

Stroppyfellow Pasta, serves four 1.5syns EE

AKA: Zizzi's strozapretti pesto rosso.
Serves 4

4 chicken breasts
300g strozapretti pasta (any will do though)
handful of chopped parsley
1 red onion, finely chopped
4 tbsp ff cremé fraíche (2syns)
2tbsp red pesto (4 syns)
Juice of a lemon
Mixed herbs (any will do)

Boil the pasta for 8 mins
Whilst that is boiling fry the chicken, onion, lemon juice and mixed herbs until cooked

Drain the pasta (i leave a little water so that the sauce goes further)
Add cremé fraíche and pesto and heat through until warm!

The whole meal it is 6 syns so is only 1.5 per portion!

chorizo = 28g = 2.5 syns Red/EE, 4 Green

I've tweaked this a little tonight:

2-3 chicken breasts, cut into small bite size pieces (I used the Iceland 400g cooked chicken chunks £4 per bag, used 1/3 of the bag)
110g chorizo, thickly sliced, cut into small pieces (10 syns)
1 large red onion
1 red pepper, thinly diced
1 green pepper, thinly diced
1 crushed garlic clove
2 green chillies, finely chopped
1tbsp chilli sauce (2tbsp) optional

2tbsp tomato puree (2 tbsp) optional
Frylight
2 chicken stock cubes/1.5-1 pint boiling water
Pinch tumeric
350g long grain rice
Tin tomatoes

Frylight pan and fry chorizo and chicken until chicken turns pink, remove from pan
Add bit more frylight if necessary, fry onion and garlic for 3 mins, add peppers and green chilli to pan and fry for further 2 mins
Add chicken and chorizo to pan, add rice and then stock and tin of tomatoes, stir well, add pinch tumeric and season, chilli sauce and tomato puree if you are using
Place lid on pan and leave to simmer for 30-40 mins, add drop of water if neccesary

D E L I C I O U S

Total dish = 10 syns (14 if you use chilli sauce/tom puree), serves 4 filling portions = 2.5 or 3.5
 
Had a nice day today, caught up on some tv, i watched the Hugh Fernly-Whatever his name is Fish Fight, I was in tears, i am really going to try and incorporate a bit more "uncommon" fish to our menus, have already done meal plan til 27th, its disgusting the discarded fish that get thrown back into the sea...did anybody see it

Also sky+ a few of the Jamie Oliver fish recipes, gonna pop on c4 website and copy them down as they were nearly all sw friendly!

does anybody have any fish recipes, bearing in mind i dont really do fish
 
Hi Donna, I usually read your diary at work so can't see the pictures, so it's a real treat to come on on an evening and drool over your recipes!!
I didn't see Hugh's fish prog but I did watch Jamie's fish recipes and there were lots of good looking recipes, most seemed quite easy too... I especially liked the look of the fish curry but it had curry paste from a jar and coconut milk so probably quite synful. I didn't realise that so much fish was thrown back into the sea, it would be OK if they were still alive and able to swim away but absolutely crazy that they're thrown away dead. I have to say that I reckon restaurants and chippies must be much bigger purchasers of cod and haddock than households so I think they need to aim the campaign at those businesses as much as individual consumers.
Certainly makes you think. I remember the chicken one they did a few years back, put me right off supermarkets' "value" meat let me tell you!

My little tip, if you like cooking is, I grab the recipe books they do at the tills at asda and sainsburys, they are free ones, and always have little recipes in it that can be SW tweaked. I am doing a chicken recipe tonight from the sainsburys one. Will put it in my food diary tonight. I love sainsburys recipe card meals for £5 as well for the same reason. :)
 
Hi PCS, substitute the coconut milk for creme fraiche or fromage frais, then use either coconut essence or coconut powder and a bit of freshly chopped coriander ...scrummy

had a lovely day today, one of my dearest friends came over, we met when we were both pregnant and poorly in hospital in 2009, our boys were born 2 weeks apart...she is moving 2 hours away boo hoo!!! told her she has to buy a house with an extra bedroom so we can come for holidays lol! shall miss her dearly!

Yes they do, and I always go and check the tills for new recipe booklets lol I am a recipe nut lol I tweak them for SW and sometimes change them a little. I love to use my syns for my cooking, nothing nicer than yummy tasting food. I find that if I cook lots of different things I dont get bored.
