Of course I will - it was really quick and simple and tasted great!

Finely grated zest of 1 lemon
Juice of half a lemon (I used the whole one, as I like it really lemony!)
275ml veg stock
1 garlic clove peeled and crushed
1cm piece of root ginger, peeled and finely grated (I used a frozen cube, as I didn't have any fresh)
1tbsp sweetener
1level tbsp cornflour
salt and pepper (don't think I used any, only just noticed it!)

Place the lemon zest, juice, stock, garlic and ginger in a pan. Bring to the boil and simmer for 5 minutes, until the lemon zest has softened. Stir in the sweetener. Mix the cornflour to a smooth paste with 1tbsp water and stir into the mixture. Heat gently, stirring continuously until thickened (only a couple of minutes in my case). Season to taste (if you want!) before serving.

I had cooked some chicken chunks and stirred it into the lemon sauce before piling it on some boiled rice... It says it serves 4, but we had it between 3. It's 4 syns for the whole sauce - syn bargain!!
 
Well, I've had another good couple of days and last night's meal out wasn't a complete disaster!

D: mozzarella (2.5 syns), tomato salad (tomato, onion, coriander), Lasagne (no idea really on syns, but made with lean mince, and low fat cheese, so going to count 10 syns), salad
s: 1 hotel chocolat choccy (3 syns), 1 x hifi light (half HEB)

So, WI this morning and I lost the predicted 1lb. I am a bit disappointed, but at least it's coming off. I had a word with my C, saying I was a bit disheartened and she told me to keep going for a couple of weeks as I am and if it's still slow/non-existent, then we can have a rethink about whether I need to mix it up a bit more with some red, green or success express days.

I've booked my flights today, off for a week in the sun on 10 April. Got 6 more WIs before then, so setting myself a target of losing 10lbs before I go. Tough, but doable!
 
Had a lovely tea last night - very simple, but totally delicious! My OH cooked it, which was an added bonus.

He poached some chicken in water and about 6 tbsps of lemon juice, roasted some veg in the oven with whole cloves of garlic, the lemon quarters and fresh oregano and made potato wedges in the actifry with a few tbsps passata, cayenne pepper and smoked paprika. Delicious and totally syn free!

Made the scanbran curlywurly cake yesterday, as I'm determined to get some scanbran in this week, to see if it makes a difference! It was actually reasonably palatable - also looked through the scanbran recipe thread and am going to try a couple of others - cherry bakewell and maybe a coffee version with the Douwe Egberts flavoured coffees, which I have in the cupboard. I'm using the scanbran as syns, rather than HEBs, as I can't go without my hifis for long!!!

Also went on our dog walk yesterday and avoided lemon drizzle cake - which is my absolute favourite - so I felt very virtuous.

Had another delicious dinner - felt really naughty too - made the sknny cheese fries again - recipe here: www.minimins.com/slimming-world-recipes/306385-omg-look-what-i-found.html , but with small gammon chunks instead of bacon and lots of extra jalapenos - delicious!

Another goodish couple of days - felt very virtuous yesterday, as I was in London for the day and a colleague suggested pizza for lunch - sorely tempted, but stuck to my guns and said no - we ended up going to a Vietnamese restaurant, where I had chicken (and picked all the bits of skin off with chopsticks!!) with mushrooms and boiled jasmine rice. Seemed pretty similar to chinese chicken and mushroom in terms of potential syns, so going to count it the same!

Oooo, I made the Peking lemon sauce...it's absolutely divine! I used slightly less stock so it only serves 2, but at 2 syns per portion it really is worth it! Think it's going to be a new favourite :) Now to find an orzo recipe for my other new thing this week! :)

Woohoo! 2lbs off this morning! :D

I was very surprised to be honest, not because I haven't had a good week, just because it doesn't seem to have been coming off very easily at all, so I expected a pound at the most. Lovely surprise though, so I celebrated by buying the new SW Asian cookbook - it's absolutely brill - lots of fab recipes, all of which look very easy to cook. Trying the first one tonight, on the hob at the moment and smells great!

I saw a friend today I haven't seen for a few weeks and she greeted me by saying 'I can see the diet's going well!' so that was a great boost too - bring on next week!
 
Really nice dinner last night - made a burmese chicken curry out of the new SW Asian cookbook. Felt a bit strange having a curry with noodles and chopped egg, but it was lush and only 1 syn per portion!

I did have one good point to the week - I'd encouraged a friend I don't see very often to try Sw when she was moaning about her weight a few weeks ago - saw her today and she's lost 9lbs in 4 weeks, just by following the diet plan in the magazine - well done her!
