Extra Easy: My weekly promise - 1 new thing

I've picked up dried pineapple, it comes in 100grm bags & 45grms is hexb so I'll syn the 10grms & dried figs, yikes they are expensive I thought but it's a 250grm bag which equals 5 hexbs at 40p each so that seems ok. BTW it's only 3.5 figs :( per hexb

I don't often have scallops but it's the only shellfish OH likes so I have cooked them. I fry off a bit if bacon, add the scallops and a few handful of fresh sage fry for just a minute or two ( it says on oack how long to fry the scallops for) then just serve with a squeeze of lemon juice.

I have looked in my cupboards and have some AH chilli and lime quinoa to have its three syns for the packet. I am planning that for my lunch as I have never had it. The best before dates Oct last year but looking on we. It says quinoa lasts for a couple of years so going to risk it! If I dont like it though I will try some in date stuff!!

Thanks I was just thinking that as I'm reading, I've got dried figs, dried pineapple, soya, oh & that mackerel but can't count that as new I don't think, seeing as I normally eat mackerel, and those spicy chicken sausages, which weren't that spicy:(
 
I'm not sure how nice mini scallops would be if you had them seared. King scallops are lovely but the mini ones might go a bit rubbery :(

Are you not a big fish fan? I wasn't until my OH made me try some things! Bravery found!

I love prawns just to eat as they are, I loved smoked cod and of course cod in batter from the chippy lol, I like tinned tuna and salmon but not fresh im a fussy bugga lol x
 
Think im gonna try this one - Prawn Scallop and Fried Rice

Ingredients

Serves: 2


  • 1 fresh small pineapple
  • 1 tablespoon oil
  • 1 tablespoon diced garlic
  • 1 medium onion, finely sliced
  • 1 large green capsicum, sliced
  • 1 tablespoon red chilli sauce
  • 2 tablespoons water
  • 2 tablespoons curry paste
  • 1 tablespoon sugar

  • 2 teaspoons vinegar
  • 12 prawns, shelled and deveined
  • 2-3 large scallops, halved horizontally
  • 1 tablespoon oil
  • 4 eggs, whisked
  • salt, to taste
  • fish sauce, to taste
  • 175g cooked white rice
  • 5-6 leaves Thai basil


Directions

Preparation:15min › Cook:12min › Ready in:27min


  1. Remove 1/4 of the pineapple lengthways leaving the green leaves intact to the main portion of the pineapple. Scoop out the pineapple flesh using a spoon then dice the flesh.
  2. Heat a large frying pan with oil over high heat. Saute the garlic and onions for 3-4 minutes. Stir in green capsicum, red chilli sauce, water, curry paste, sugar, vinegar, prawns and scallops; cook for 4-5 minutes.
  3. Turn off the heat add the diced pineapple and stir. Set aside
  4. Heat the same frying pan with oil over high heat. Pour in 1/3 egg into the frying pan then stir quickly. Add a little salt, 1/2 remaining egg, fish sauce and rice. Stir well. Add the remaining egg and stir well.
  5. Add the seafood back into the frying pan with the rice then stir well. Add the basil and serve.
