After your fab holiday, 5.5lb is an excellent result, and you know that you will be able to shift it ;)

Are you going to go weekly to class, particularly after being welcomed back into the fold, so to speak ;)

Well, I've done e/easy again! - perhaps I'm becoming a convert (that's convert, Dawn NOT pervert).

Breakfast today was toasted soldiers (HEXB) and spread (3 syns) 2 lovely soft-boiled eggs* + capuccino (2.5syns)

Lunch was a salad made with them fishy/prawn/lobster look-ailke things that Asda do (forget the name!) with 1.5syn for the dressing.

6.5 syns worth of lamb curry (sauce held the syns) with and rice for this evening.

My snacks at work were a medley of berries inc. blueberries, blackberries, strawberries and grapes (are grapes berries?) all combining toward the 1/3 super-free. - oh and of course the banana and apple double.

Tonight I will have a yoghurt to watch a movie.

Still 100% but some bad news is I appear to have twisted my right knee. I missed the gym tonisht as aggravating it on the cross-trainer was not an option. I have two weekend walks planned, and although walking is less strenuous than cross-trainer, I am concerned with the knee and walking in rain and boggy/muddy conditions.

By the same token, I DO want to push and test myself and NEED the countryside. Next week will be a poor week without exercise. Certainly if I am to get more than a couple of pounds off.

I must be feeling this competitive pressure from Dawn.:eek:

Good to see you back on track though sweetie, much more like the old Steve :D Yesterdays food sounds really nice, especially the fishy salady thing. Was the curry one you made yourself or a bought one? Sarah's coming to dinner next Saturday & I'm doing the lamb rogan josh from the new '50 free original recipes' book. We've had it at a taster night and it was gorgeous :drool:

Now I know you want to go walking but think seriously about whether your knee has fully healed before you go x. Of course it might affect your weight loss this week and make all the difference as to whether you win the challenge or not but hey...you were never going to win anyway!!! :8855:

Salads just ain't enough and so I need to checkout the winter warmers section. I knew I should have stayed in Florida!

At least I looked skinny there, whereas Dawnie makes me look positively huge. Still, I've made Dawn look this good, so now it is my turn to get inspired.

Weetabix & Milk (HEX A & B) cappucino (2.5)

Prawn salad and huge fruit medley, apple, banana, apple & plum! (too much fruit!!)
packet of cheese and onion french fries (5)

Ham salad with remaining prawns, cottage cheese & pickled onions (can you tell I was getting rid of leftovers lol)

Will make a nice vegetable soup for the weekend (hot and filling!) and get some good extra lean mince, and lamb, beef etc. to make some stews etc.

Steve definately make a stew. I made one in the slow cooker on Wednesday and I've had a few dinners from it and its delicious. I cheated and threw in stewing steak, extra lean mince, 2 beef knorr stock cubes, red onion, and a bag of casserole veg :D

Let's get a little serious just for a second. I have some lovely bits of steak and extra lean mince, should I just bung them in the slow cooker and add some onions, carrots, parsnip, potatoes, mushrooms and a stock cube or two? - any specific amounts or just throw it all in?

Ok, my knee has not given me any further twinges or cause for concern. I have decided to do the back-to-baqck hiking beginning with approx 6 miles tomoorw (more of a birdwatching walk to help a mate really) then 10.5 proper hiking in the N Yorks Moors on Sunday.

All being well, I will have my stew (or possibly vegetable soup I will make tomorrow) in my food flask on Sunday.

So...your stew. Just throw it all in Steve. I usually add a tin of baked beans to thicken up the gravy and maybe a tin of chopped tomatoes. Thats the beauty of a slow cooker stew...you can put just about anything in and it'll be lovely! :eating:
 
Steve - if you're doing EE you could even add something like garbanzos (oops chick peas to you). They make a really nice twist. And if you don't mid a few syns a glass of red vino makes the gravy soooooo much nicer.

Our quantities for 2 are :
300 gm stew beef
1 large onion - roughly chopped
1 large clove garlic - finely chopped
1 stick celery - finely chopped
4 small spuds - halved
2 carrots - ½" slices
2 parsnips - ½" slices
1/2 small swede - diced into ½" cubes
8 mushrooms - halved
1 beef stock cube made up in 120 ml water
120 ml red wine (4 syns)
OPTIONAL
200 gm chick peas (either tinned or pre-soaked ones)

I do it in a pressure cooker rather than a slow cooker - same result but much quicker.

If its runny, I usually thicken with 1 level tsp cornflour mixed into a small amount of water at the end (1 level tsp = 1 syn). But you do have to boil it then to cook out the cornflour.

Easy peasy, very tasty, makes heaps and is VERY filling.

ENJOY !

You can turn it into boeff bourgignon by adding 1 heaped tbspn of tomato puree (syns ?), 2 slices smoked bacon chopped into lardons and dry fried first, use whole button mushrooms, and replace the chopped onions with 12 whole shallots. Leave the parsnips and spuds out of the casserole and serve separately. And deffo don't put the garbanzos in!

Well I managed 7.3 miles walking today with the group. Not a bad warm-up for tomorrow' "proper" ramble in the N Yorks Moors.

As expected, the "stew" for want of a better term really was a treat after a bracing day at the coast:)

Eventually I decided on extra lean mince, then lean chunks of beef. Onion (coarsely chopped), carrots (chopped 1/2 in) Parsnip chopped 1/2 in), New potatoes, (quartered) button mushroom, mixed peppers and peas. I added mixed herbs to the mix and Bovril cube & water as I was concerned it might be too dry.

First hour cooked on full, (8am-9am) then on low from 9.00am until I got home at 5.15. I could become a fan of this extra easy if this concoction is anything to go by! I forgot to add swede, so it may get even better;)

Not sure about portion control though:eek: - yes I did have seconds - I think it was adding the Lea & Perrins that sent it into overdrive:cool:

I needn't have added the liquid as the slow cooker retains moisture. I will get used to this as normally pans work the opposite way to this. Next time i will just sprinkle a stock cube or two as Jackie mentioned;)

Are you sure it is all free? - it tastes too good and filling, warming etc.

My breakfast today was 2 X Weetabix (6.5) milk (HEXA) and cappucino (2.5)

Lunch was triple-deck ham sandwich (3x w/w Danish as HEXB), spread (2) crabsticks, cheery tomatoes, apple, banana, plum.

The above sustained me during the walk:cool:

I will have to learn what is the correct amount to throw in a slow cooker for one person. Otherwise if I just fill it I'd be tempted to finish it.

Just need to ensure I do sufficient superfree if I'm to continue with e/easy.

I picked up some syn-free sausage and burgers for a SW-style "grill-up" tomorrow morning.

Am also currently making a vegetable soup as befits this mountain man tomorrow.

Keeping me busy, that's for sure. I know I said I'm fed up of salad, but will probably have one tomorrow evening after rambling - keeps the super-free quota going.

The casserole sounds good, and just what you needed after a day out walking!

It looks good for me on extra easy, but I'm a red girl, and not 100%

Not a lover of a slow cooker myself, prefer more traditional casserole cooking....long and slow in the oven;)

I'd say it was more a stew than a casserole. I prefer casserole in a casserole dih and in the oven for double the recommended time:cool:

Sausage casserole is a tasty change from the old chicken. - the reason I called it a stew is because it was left to stew in its own juices for over 8 hours!

Having said all of that, I'm going to "risk" a chicken madras in there tomorrow, or possibly Monday, just to see how it copes with that.

I think i mentioned I need a new refrigerator, well, it seems I might need a second freezer too:eek: - either that or a bigger kitchen/house.

Anyway, I have now made and "blitzed" my vegetable soup which is all ready for heating up in the morning and transferred to the food flask. Just the thing for a mountain man in the cold weather.

I've come to the conclusion I need 2 big fridges and 2 freezers doing SW... I dont have them obviously but in an ideal world and a bigger house I would :8855:

I have a massive american style fridge / freezer that lives in the garage - by the entrance to the kichen (it was too big to get through the kitchen door! :8855:) plus a fridge in the kitchen. And there's only me and him!!

Admittedly the fridge in the garage is half full of beer and wine though! :D
