Laura's Low Carb Diary

I did tend that way to start, went back to square one and started again just with yogurt as my extra carbs, loving it and having no cravings, can even eat just one celebrations chocolate and then leave them alone, such a difference from before!

Yeah i totally want to get my cravings and over eating under control before I introduce stuff back. I'm really enjoying induction so why change anytime soon?

Morning Laura, I agree about induction, but you do need to think about OWL at some stage love

Oh yeah def jim... Just not now... Maybe around October time.

I stayed on strict induction for 6 months love, I did find it hard to leave that comfort blanket to be honest

Agree it's a comfort blanket. Also finding it difficult when scales dont move even though i'm trying to maintain for a bit! Heads huh?!;)

Bren - cant believe you can just eat ONE celebration - i wouldn't dare!!!! Congrats:)

No celebrations for me... That's a
Slippery slope! I don't really crave sweet stuff tbh just savoury stuff. I only have 2 stone left to lose before January so more than halfway there!! Yaaaay!

Do you think this was ok for yesterday's menu...

Breakfast half an avocado coffee with a dash of lacto free milk and a sweetener

Lunch chicken, a few jalapeños, pesto lettuce half avocado

Dinner red cabbage, paneer, pepperoni

Water... 3 litres approx

Maybe not enough veg??? Trying to cut down on dairy as well.

Today so far

Breakfast fried mushrooms with pepperoni
Coffee with lacto milk and a sweetener, peppermint tea

And for lunch I have half an avocado and a small portion of the cabbage/paneer concoction from last night

Mmmmmm I haven't had paneer in a while, where do you get it Laura?

I make my own jim... It's very easy and way nicer than buying it... It will post recipe when I get in from work x

The tesco stuff is very rubbery tho

I keep meaning to make paneer! Looking forward to reading your recipe :)

It's reallllllly easy... All you do is get a big jug of blue milk, put it in a big pot and heat till it boils, as soon as it boils take it off the heat and keep adding White vinegar until it separates into curds and whey ( but slowly so you don't add too much and the paneer is all vinegar) get a muslin cloth preferably or I guess you could use a fine sieve... And push the whey out of the curds ( you can use the whey for cooking if you wish but I chuck it out lol) then I twist my muslin up and get something heavy to sit on top and leave overnight or at least for a few hours to squeeze all the excess whey out and to push it into a big slab. Next morning unravel muslin and slice paneer... Voila! My ex bf was Indian and I learned many a good cooking skill :)

Was going to ask what blue milk is ..... And then the penny dropped! Doh! Thanks for posting Laura! :)
