LoChan's diary - hello!

Can I ask keep seeing these hifi bar do you get them from supermarkets-I am normally rushing round, as I hate being out and have a baby that's decided he will twist out of the trolley even though he is strapped in! So grab what we need don't get to browse anymore!

xxx

They only sell them in meetings I'm afraid :( I get a friend of my mum's who goes to group to buy me some now and again - don't buy hifi bars from ebay as the prices are a rip off - I think they cost 1.49 for a pack of 3 from meetings and you'd end up paying at least double that online :sigh:

Alpen lights are a good supermarket alternative and you get two of those for one healthy b choice :)

ahhh never mind- but thanks for explaining for me, i like the alpen lights so that will be just as good :) xxxx

Hope you have a good day, looking forward to some more of your meal photos :) xxxx

I didn't take any yesterday as a lot of it was a repeat of the day before lol

I'm experimenting with a weetabix kitkat cake today though so will take a pic of that for better or worse at least. Hoping it tastes better than the scanbran cake, that stuff is bad (to my tastebuds at least).

Need to make myself go for a walk everyday this weekend as I'm childminding on my own next week so won't have much time or energy to do much exercise then

Ummmm Kitkat and weetabix cake sounds yummy :)

Sounds like you have a busy week planned next week hun :)

Food diary for Friday (Day 22 GREEN)

B: Scrambled egg and baked bean on toast (hexb), clementines

L: Quorn 'lamb' strips, sw chips and minted mushy peas.

D: Meatball marinara (hexa) & spaghetti. Lemon quark & strawberry cheesecake (4 syns)

S: Carrot, squash and coriander soup with toast (hexb), mullerlight, butterkist light popcorn (6.5 syns), almond milk latte (hexa), kitkat (5.5 syns)

Have no idea what I'm doing today re EE/RED/GREEN - keeping it neutral until I work out what I fancy eating. Possibly green as want to make up some syn-free bbq sauce, can make stuffed potato skins with that :D

Aye, two three year olds plus my own 11yr old to entertain... I'd best start praying for good weather as I don't fancy experiencing cabin fever with those three lol

2 three years argh!!! I used to work in a nursery and have been a nanny-they are good fun :)

Meat ball sound yummy hun.

Just tried to give little man some of my soup-he wasn't keen!!!

xxxx

Heh does he prefer solid food? I don't think kids are that keen on soup when they're that ave, it'd be like going back to baby food I guess.

I work with my mum usually so on a mnormal week we have 6 kids between 7 months and 3yrs, so two on their own might seem quiet to me lol

Will do proper food diary stuff later but tjought I'd report on the weetabix cake. It came out rather flat but it tasted good and it's all gone now :D

Damn my spelling is terrible while using my iphone, excuse me lol

Having to play tomb raider with my O/H now so will come back later for diary catchups etc

Sometime the more children you look after i think the easier it is cause they entertain themselves-depending on ages :) but then sometimes not!!!

cake looks scrummy glad you enjoyed it.

It doesn't work that way with our lot, they all want each others toys all day so there's always scratching, biting, spitting and kicking going on, I think they might be possessed lol
weetabix cakes looks slightly more appetising than scan bran cake :8855: hope you are enjoying the long weekend :) x

I should have learned my lesson about scanbran when I did those weekly challenges a couple of years ago lol It would be hard for it to go wrong with weetabix and kitkat really wouldn't it? :D

I'm having a lovely weekend thanks, full of cooking, clearing out kitchen cupboards and defrosting the freezer. Doesn't sound like fun I know but it gives me that 'Ahhh, lovely everything is sorted out' sort of feeling :)

Hope you're feeling less panicky and can enjoy the weekend too xxx

Omg those potato skins look amazing! Any chance of the recipe and method as I am a terrible cook!

No probs Amy. The syn free bbq sauce recipe is on this link http://www.minimins.com/sw-sizzling-summer-recipes/101921-syn-free-bbq-sauce.html

To do the potato skins:

1. Prick the potatoes all over with a knife, wrap them in foil and bake them for about an hour until they feel 'squidgy'.

2. When they've reached the 'squidgy' stage, take them out and leave them to cool for a fews mins then cut in half and scoop out most of the middle, leaving a bit around the edges so they don't tear apart.

3. Spray the skins with frylight and sprinkle with a little salt and return them to the oven for 5 to 10 mins to crisp up.

4. Whilst those are back in the oven mix a little of the scooped out potato with some bbq sauce then spoon the mixture into the potato skins, top with a hexa of cheese and bake in the oven until the cheese is golden and bubbling.

You can experiment with fillings with whatever takes your fancy really :)

Ohhhhhhh I made double of that bbq sauce for my chicken, know what I will be doing with them :) The look yummy.

Your hot pot looks yummy too, how did you make it hun?

I am off to hunt out free or low syn food on red days for lunch :) xxx

If in doubt and you've got one near you, a subway salad bowl usually serves me well for a red day lunch when I'm working :)

The hotpot was pretty easy:

Peel and slice the potatoes and parboil them for a few mins until soft but not mushy. While their going chop up a bit of onion and soften this in a small saucepan (I usually add a splash of water to it - helps it get to the 'translucent' stage without having to use oil) - add a bit of mixed herbs. I used two quorn hot dogs (the frozen kind, 1 syn each) - defrosted them in the micro then chopped them up and added to the onion with a tin of baked beans, mixed and leave to simmer until potatoes are ready. Pop the bean mix into a casserole dish and layer the potato on top - spray with frylight and bung in the oven until the potatoes are golden and crispy :)
