MiM's & flaxseed recipes

Great news! Well, for me anyway...

I went back to H&B and got some different flax seed. I was wrong, this stuff is really nice! I think the cocoa flavoured stuff I got last time was just too bitter.

This time I bought Linwoods pre-milled flax, almonds, brazil nuts and walnuts + Q10.

Really nice. 16g fat and 1g carbs per 30g serving.

This stuff is going to transform my diet.

Pink packet? I loooooooooove that one, it makes a nice change from the plain one I normally use.
 
If its a mim with one egg then that usually makes about 2 slices for me. I'll eat one or both depending how hungry i am. As of yesterday im not having more as makes me uncomfortable!

Yeah that's the one. Is nice. I haven't tried the plain one yet. Is there much difference??

Shame it's £5 per pack but worth it for the results. Do H&B do any other brands of pre-milled flax? I couldn't see any :(
 
Also, about these mims...

Do you use the whole egg or just the whites? Do they taste of egg?

What consistency should the mix be before I microwave it, please?

I use whole egg - yes they are quite eggy (DD was moaning about the smell)
for consistency it depends what you want. For toast i tend to make mix thinner so spreads out to form a slice and i can bake two separately. I bought a plastic container that was exactly toast shape/size to make it easier to do!

Can I alter the mix to include less egg/more water/another binder?

I was wondering about liquid egg whites?
 
I imagine you can do anything you like lol!

I have also tried the cracker recipe on here which is just flaxmeal and water. You get a crunchy biscuit so best to make them pretty thin. I also made them in rolled out and then cut round. Felt just like cheese crackers.

i did mine for the first time yesterday in a jug. I then just sliced a bit of at a time as it was just like a little patty and wasnt sure how much you were like to eat. Quite a strange food but strangely nice.
Dont think I will ever miss bread again as long as I have a mim to hand.
 
I use a square microwave plastic dish, and mix the Mim with a bit of water before I zap it, then turn it out and give it 5 mins - then it's ready to slice into two bits - (almost) just like bread! :)

I find the water helps it not sit in my tum like a big weight either :)
 
The wetter the better, just like proper bread. If you make it a bit too wet it just needs longer in the microwave, does not make it a problem. I use the smallest egg I can, have read of someone on here previously that has split an egg between 2 mims so yes, just practice and experiment till you get what you want. I can't cope with the savoury mims - just too eggy (even though I love eggs on their own) that is why I do the cracker recipe instead - no egg - just water, still not as nice as the sweet ones but if you need savoury it helps.
 
For my birthday cake in July I am gonna make a bigger version of the Rich Chocolate MIM recipe I listed here ages back. Just delicious, esp with cream cheese and splenda 'frosting' or filling and some very low black cherry jam or fruit puree.

Might splash out and make one for Easter, too! Yum.
