MinkyDinkys SW Success Diary!!

Your dinner last night looked absolutely amazing!! So healthy and fresh :)

Can't say the same for this morning's brekkie though lol ... what is it??

:D it's just porridge oats and hot water, dash of milk from allowance. Didn't look too appetising there granted, but was surprisingly nice and filling. Didn't become the normal wall paper paste that I usually turn porridge into!

Dinner was great, having leftovers for lunch with extra spinach and sweetcorn, nom! Xx

Extra spinach and corn added. Got the thumbs up from 2 colleagues who tried it - only a little spoonful each... Can't have me starving now can we? ;) xx

Afternoon snack. Red pepper houmous, carrot and cucumber sticks. 1.5 syns for hoummie!

Very pretty snack lol. Is the houmous homemade?? Or have you bought it??? X

I never end up eating the houmous when I make it, but your snack looks yum. I was going to have your dinner as my lunch co-incidentally. but i fell into fruit toast. your left overs look even tastier than pre-left-over

They were surprisingly a lot nicer today - bizarre?! I've got a bag of dried chickpeas to get through and think I'll make some houmous with them at the weekend, I've fallen in love with it recently! Xx

It was a shop bought houmous. Sainsburys do the 3 flavour stack of reduced fat humnie, and a tbsp is 1.5 syns, it's actually a lot and done me fine for the amount of sticks I had earlier xx

Dinner. One of my favourite meals of the day.

I slowly fried 5 slice mushrooms, 1 whole onion and 3/4 red pepper

Pinged 2 small ish potatoes in the microwave, wedged, spritzed with fry lite and seasoned before baking in the oven till crisp but still fluffy

Top wedges with veggies

Now the best bit.... Adding the cheddar... Mmm.

Made the meal slightly more substantial by topping up the plate with piping hot beans, the rest of the veg and remaining cheese (full HexA used in total)

Happy days!

Now I've only used 1.5 syns today... Do I want more??

*drools* that looks good! I have had cravings for campfire stew from you. Had it this evening (and tomorrow for lunch) now I soo want this dinner too. Nom comfort food.

It was awesome! The boy had the same but with 3 sausages with hot pepper sauce - they looked so good!

I have campfire stew planned for next week, we love it. Must be the night for it as my best friend text me to say she cooked it tonight too! Although she adds a lot of chilli and chilli baked beans, the repercussions of it have given the dish a new nickname of 'campfire poo'! Ha! Xx

I didn't have any extra cash on me and didn't realise the mag was out so I've got to wait ANOTHER week, boo! Are there some good recipes in there this month?

Sad I know but I love curling up with a cuppa and flicking through reading the recipes :D xx

Oooh I will be off to the shops in search if it tomorrow!
Your tea looks good ;)

Munched a hifi bar for me second HexB choice today and used my second HexA on the cheese in dinner.

Totally on plan, both hex choices used, and crazily only 1.5 syns used. That'll be a different story tomorrow ;)

Got some oats in yogurt in the fridge ready to attempt those magic pancakes, see what the fuss is about. Will plan my day in the morning xx

I should say it isn't in the shops yet, it is only just in the groups. The 7 day plan meals suck a bit but there are some nice weekend recipes, and several dishes from one mince mix (a bit like the ragu one a few issues ago) a few quick mid week meals too. A feature on Italian food and another on puds (blah). Definitely a few I'd like to try out! I was planning burgers this week anyway so hopefully do the bloody Mary ones.

Food looking scrumptious!!! :)

Ohhh looking forward to your verdict on the pancakes, have never got round to trying but love manic porridge.

Xx
