MinkyDinkys SW Success Diary!!

Good luck in London. Hope you get a chance to spend a little while in the sun and soak up the energy. It is nearly weekend - well working week starts for me today.

Better to use a skanky loo than pee yourself. The gourmet veggie burgers are gorgeous. We had them on Tuesday. Favourite with everyone.

Breakfast looks yum!
Did you make it to the loo???? Xxx
They were frozen raspberries defrosted over night and were bleeding lovely! Only just made it to the loo tbh, and now I'm on the tube heading over to Kensington and guess what... Yup! Need the loo again!! Xx

So no syns for breakfast, 1.5 for lunch, 0.5 for a small gum sweet, 1 HexB (oats) and 1 HexA (lattes).

Now, I can use my syns on either :
4 for 20g soreen and 1 tsp choc philli.
6 for mr Kipling victoria slice
7.5 for mr Kipling almond slice
Ooooor 3.5 for frozen yogurt

Hmmm. Decisions decisions....

Wash your mouth out Joanne! What is soreen... Pfft! :D it's malt loaf m'dear, it's squidgy and delicious but 20g is a tiny amount and I do prefer thick butter on it but I settle for chocolate philli ;) xx

Ooooh! :D I can remember having that at my Grandma's when I was younger lol! Enjoy! xx

I've already got rid of the higher synned almond slice - offered it to the boy with a cuppa and at first he turned his nose up because it had almonds on (dur?!). But I then explained it tasted like cherry bakewells :D he is having it after tea. I've kept myself so occupied I've not thought about what I want but guarantee after tea I'll want some thing sweet.

Tonight's dinner is ready to go in the oven. The mozzarella past bake.
Pre baking - didn't have peas as per recipe so I added sliced mushrooms (everything is better with mushrooms!)

I also managed to snaffle some of it and make a little takeaway tin version. BUT!! The most mega part of it is that I quickly fried off some sliced courgette and leek, whacked on top of the pasta (to up the superfree) and a HexA mozzarella too!

Yummy scrummy green/EE day snack/lunch/dinner *delete as applicable!* ready to be reheated. Win!

Your dinner looks delish. How did you make the pasta?

Your dinner looks delish. How did you make the pasta?

It's so simple - it's one of the magazine recipes.
Fry off an onion, couple of cloves of garlic and some chilli flakes (I used powder as ran out of them :(). Cook pasta while you are doing this. Add pasatta with garlic and herbs to the onion mix, simmer for a couple of mins. Add frozen peas and basil (I have neither in so just fried mushrooms with the onions). Mix in cooked pasta, pour in dish, top with a HexA mozzarella per person and bake till melted. Voila!

I've got some brocolli, cauliflower and baby Brussels cooking to go with as it says to serve salad but I prefer veggies xx

Thanks minx will add this to my meal planner for next week xx
