Soup with cottage cheese?! That sounds crazy moo. Do you just put the cheese in the soup? Does it melt?
Oh yeah I love his classes. I go to his spinning class too. I can't really afford the £100 a month but it's worth it if I get to feel confident and beautiful on my wedding day!
Moo I'm worried because I ate a whole mango today. I know they're superfree but they're so sweet!

Cottage cheese in soup is really nice but you must remember I can not live without cottage cheese so maybe its only me, lol. As ginger soup is pretty spice I add cottage cheese to take make it little less spice . I add 2 spoon full of cottage cheese per serving and usually I dont mix it into soup. No cottage cheese do not melt but it will have little rubbery texture and I like it.
Dont worry about mango - its not so much either and it is superfree so enjoy and if you like have one more and enjoy some more
Seljanka is russian heaven =) Ill add a link for very good recipe but ofc everyone do it little different and I do it little different too but this is very very good one to look at
Estonian Cooking and Eating: Seljanka
Seljanka can be done from meat / in original seljanka have 7 different types of meat in it, including heart and kidney of big or cow if you like to , different kind of sausages and
wieners, meat beef and pork, salami/
But you can do fish seljanks then you will need different kind of fish /red fish and white fish / smoked fish and fish from cans are not suitable here
And then there is mushroom seljanka - again different types of mushroom - it will be very nice with salted wild mushrooms. We have 110 different mushroom in our forest and we use to eat em more. In here I can see only different kinds of button mushrooms or maybe just in those shops where I go there is not much to choose from.
Seljanka
Onions
sour pickles
olives
capers
lemon
tomato paste
and what ever you choose - meat , fish, mushroom
spices ( salt, pepper, bay leaf, (stock if needed ) , sugar ( sweetener ) , allspice
I start by slicing onions and frying them on slow heat about 30 min. Then add them sliced pickles. You can not put pickles and onions on pan at the same time because pickles will not let onions to go golden then and sweet. Thats why it is important to fry onions first. Ok- i add pickles and let them fry another 10-15 min. Then I add tomato paste and sweetener. I do no like sour taste of tomato paste , thats why I always add little pit of sweetener ( sugar when I cook something with tomatoes ). Few min then I add olives- you can slice them or leave as it is, your choice. Capers. Let this be on pan about 10 min, until everything is nice and thick.
This is the base for seljanka , you can deepfreeze it if you like and take it out next time. Or you can make it into soup right away.
Now depends what kind of soup you making - for fish and mushroom one, you just need to add water and let it to boil. Season with salt, pepper, allspice and bay leafs and stock cube if needed. When soup is boiling add fish or pre-fried mushroom mix. Lemon wedges and let soup to boil another 5 min . Done - serve with sour cream and fresh herbs .
If you want meat soup then there is few ways you can do it. Either like the link I shared - you boil your stock from bones, you boil meat and later cut them into small cubs and add to soup. Or you use sausages only.
Some people add potato too into soup. I dont like it , but you can if you like to.
Decent seljanka takes 2-3 hours to make and is so so worth it. But you can do speedy version with sausages or chicken (chicken is not really good for this soup and soup itself is so rich, chicken will just stay too dry and kind of tasteless in this soup )
For SW way of this soup would be without olives and sausages. Using dark meat only- pork or beer or both. Or fish or mushrooms.
Think I got everything in there , but again Im a chef and some things that seems so natural for me may look little odd for others, any questions - please ask =)

So today I did my round in gym and spent 280 kcal in one hour. I did my KB swings and boy it really is hard to do them with decent weights. Well , its only start and Im sure soon Im able to do more.
People in my WI are so nice to me and saying I look great and beautiful and all I can say is thank you and thank you- Sometimes I feel I need to say more , but what else there is to say. One girl joined us last week - sorry I do not know her name. She come in with her mom and I think she is same weight that I was when I started.She looks about the same to me. I sit next to them last week and so did today and before class started they asked me right away how much I have lost. And when I said 1,5 lbs the girl told me - you got your 6 st award then. She must have remembered it from last week. Im surprised but maybe thats good thing, maybe then she can get motivation to keep going. They asked if I have photos to show and I found the before and after photo that was made at 5,5 st. They were amazed and said they cant believe I was that size - nor can I , tbh.
Consultant asked what is the best thing happened after I lost 6 st - what have changed. I do not know what is the BEST thing as there is so many things that are good, but what is the best ???? I said that my legs dont hurt so much anymore as this is the thing I really can be happy about. Everything else is good too, ofc but constant pain in legs is something I ever want to get back to. My legs hurt so much that I could not sleep , I kept rubbing them all night and in morning my first steps out of the bed were so painful that I had tears in my eyes. Working 12 hours in shift is hard, but working 12 hours in shift when you weight over 25 st is dam hard. I was smoking so much - 2 packs a day. Only to be able to sit down. Im one of those smokers who can stop when ever they want.
I never smoked at home or when I had day off or holiday - I did not care for nicotine but at work -2 packs in 12 hours - only to get change to sit down , this is so wrong, but thats how it was. I dont smoke anymore- stop smoking when I moved to UK . I have e-sigar but I dont enjoy it , so it just there, just when I want to have it.
Other hand - give me night with girls, my dear bottle of red and I will be smoking like chimney
its the company that make me want to have a smoke.
Anyway back to today - our consultant asked us to do challenge for this week
to have 15 speedy and superspeedy foods in day. And I will do my best to stay on that challenge.
