Update for Friday 11Th October

Breakfast - gluten free cereal, milk and sweetener, cup of earl grey tea and milk

Mid morning - cup of coffee with milk - didn't actually make it to the staffroom to collect my food.

Lunch - two slices gluten free brown bread, ham and mustard, cherry tomatoes, one ounce lightly salted kettle crisps, bunch of grapes, a clementine

At home after school - one slice of my gluten free fruit loaf with a little butter, coffee with cream

....Later - another slice, toasted and served with ginger syrup. I know, two slices, but it is very good! A cup of vanilla chai tea and milk.

Dinner - small jacket spud with pork pieces cooked with jerk seasoning, baked beans and Jack Daniel's BBQ sauce, an apple and a clementine

Total calories for today 2148/2160 -12 calories)

Me too! We were planning to go to the Robin Hood Country Fair in Ipswich today, but the weather is so awful here and according to the weather forecast as bad, if not worse down there, so we decided on a change of plan - cooking, cuddles, coffee and chocolate, although not necessarily in that order! That appealed a lot more than standing in a field in the rain watching people jousting! Am planning quite a few hours in the kitchen this afternoon and tomorrow. So far, on the weekend cooking agenda, we have... roasted chick peas and perhaps some hummus, mushroom and cashew nut pate, smoked peppered mackerel with sweetfire beetroot and salad with toasted sesame seeds, (today's lunch) something with chicken thighs for tonight's meal -at the moment we are leaning towards chicken and butterbean casserole. I am trawling through my gluten free recipes and books for a good looking pastry recipe, as I want to make some quiches for work next week and some gluten free yorkies to go with tomorrow's roast pork. I am also on the lookout for some more gf cakes/buns/muffins to try - maybe something with lime and coconut. A gf trifle may also put in an appearance. Looks like I will need to make a start soon!
 
Week four of metabolism reset completed. Results are in for WI this morning!

Average daily calories this week were 2168, 8 calories per day over my TDEE. Weighed in at 15st 4.4lbs this morning which is up since last Saturday, but at least down since that blip at the beginning of the week.

What is important here is the long term results though, so they show only a 2.8lbs gain in the 4 weeks of the reset so far, eating an average of 2224 calories a day. That averages 64 calories a day over my calculated TDEE over the four week period. I reckon if my TDEE is correct and I can stick pretty close to it over the next four weeks that I *should* expect to stay around the same weight now over the next four weeks.

Anyway 2224 calories a day and only a 2.8lbs gain. I think that is phenomenal!

Today I will mostly be cooking and eating!

I'm liking your 4 Cs ;-) Unfortunately only the 1st will feature in my day! I'm loving the sound of Mushroom and Cashew Nut Pâté, is that Veggie? Let me know how the Chickpeas turn out :) Lime and Coconut Muffins sound amazing, I had one of those at the Primrose Bakery (not GF unfortunately) and the Flavour Combo was sensational! Interesting Results there MW! It's amazing to think you can eat 'that much' and have 'only' gained 2.8lbs in 4 Weeks! I managed to put nearly that on when I went to Butlins lol ! It's probably a good reminder of what we do to our bodies when we are constantly dieting. X
 
Glad you are pretty happy with the results of the reset so far. I am strangely responsible for whether it works for you! You may well find you have to tweak the calories a bit further down the line but sounds like you are on the right lines.

Your food plans for the weekend sound gorgeous. Definitely a weekend for pottering at home and in the kitchen than standing in a field I think. We were hoping to go walking tomorrow but the weather forecast suggests that wouldn't be much fun! I do wonder why the Robin Hood Country Fair is in Ipswich, not known for its links with Robin Hood ;) Apart from a high volume of people from Ipswich moving to Nottingham because its better ;p

Thanks Nessa. I am certainly enjoying eating this much and am happy with the results. 4 more weeks and then I will be dropping my calories a little, but still will be able to eat quite a lot.

The chick peas are soaked and cooked. Will let them dry out overnight and bake them tomorrow. Yes the mushroom pate is veggie - it was one of our favourites when we were veggie. It is so adaptable and you can use whichever nuts you fancy and vary the herbs too. It is basically cooked mushrooms, chopped onion and garlic with some herbs, salt and pepper. While they are cooking I blitz the nuts in the food processor (we like them quite fine) and then add the mushrooms etc and blitz the whole lot together with some lemon juice. I can't give you amounts as I always just 'wing it' with whatever I have, but with your cooking skills I know you'd manage!

I too have gained more than that in one 'dieting' week, so I am really pleased with how it is going,
 
Forgot to say that you can swap out some of the nuts for low fat soft cheese in the pate to keep the calories down, but it really does need some nuts for flavour and to hold it together.

I think you're doing an excellent job! I've never thought about making my own Pâté, how long is its shelf life once it's made? I need to make another batch of Chickpeas when I have the oven on next! X

Your last sentence threw me for a couple of seconds until I remembered you came from the Ipswich area to Nottingham and then it made sense! I said to the OH the other day that I don't ever remember Robin Hood having a disagreement with the Sheriff of Ipswich! It is a shame about the weather because there were all sorts of displays, stands, craft show, dog shows etc., and a food tent too. I had planned out a visit to a nearby pub where one of the owners is coeliac and a large amount of the menu is gluten free too, but never mind. I enjoyed the lazy morning instead and the afternoon in the kitchen.

Mixed results with the cooking - the gluten free carrot cake is fantastic - not too carrot-y actually and a lovely texture. We have already tried some - not even got round to icing it first, so may not bother and just have a dollop of yogurt or cream cheese with lemon juice with the other slices. The gluten free pastry - hmmm. Let's just say I think it is unlikely that cornmeal based pastry will feature much on my menu. It was completely un-rollable as it just fell apart, so I had to push it into shape in the tin! I made one larger quiche which is still cooling, but I am ready to bet that picking it up as a slice will be impossible. Sure it will be tasty as the quiche filling was delicious, but I really wanted it to take as slices to work.

The gluten free trifle (cointreau, lime jelly, clementine segments and dried cranberries with gluten free lemon sponge) is cooling in the fridge with a second one for OH using ordinary trifle sponges. Will top them tomorrow with home made real custard and whipped cream!

The mackerel lunch was delicious (picture in a while) but the chicken for the casserole was off! I had frozen and defrosted it properly but it smelt awful! I took it from the front of the open fridge at Morrison's, which I never normally do - I always rummage right to the back, as I never feel that the front can really be cold enough. I was in a bit of a hurry and just grabbed them, but will not do it again! So, last minute change of plan to 'hunt the beef' stew. Had a tiny portion of cooked beef in the freezer so bunged that into the slow cooker with onions, leeks, carrots, turnips, potatoes, the cooked butterbeans and gravy. Will be eating it any moment and will update with calories and pics later.

I keep it in the fridge for about 4-5 days. It is usually all gone by then, but you can always stir leftovers into soups etc if you need to use it up.

Oooooo that sounds promising, I was worried I would have to eat it in 24 Hours lol! I'm loving the sound of all your Cooking, the Trifle particularly caught my interest, puddings don't get made in this house as Poppy isn't a fan! X

My OH would eat pudding after every meal given a chance! I am enjoying the opportunity to eat more of them at the moment, but they will probably be the first thing to go when I get to the cutting down stage after the reset.

Haha. I plan to! I forgot to say that the pate consistency isn't like a meat pate. I know you are a veggie, so wouldn't eat them anyway, but not sure if you have in the past. It is probably more accurate to call it a mushroom spread, but pate does sound better! By the way - how do you get the accents etc., on your letters? I usually post from either my kindle or 'phone - presume I would have to switch the keyboard or something. I want an acute accent over my pate too! Will have to investigate.

I've been Veggie since birth so have never eaten 'real' pâté, Ive bought some awful ones from H&B so thinking this night be a better alternative!

Oh and I can't take responsibility or credit for my acute accent, it's all due to auto correct on the iPhone or iPad!!!

I've just put kettle on too, it's FREEZING here today :-( x
