I was scared of cooking fish before as well, but now I love it! A few tips:
- use 1 tbsp of chilli oil (2 syns) to oil some tin foil. Put tuna steaks in and rub the oil on them. Add some sliced garlic and bung in the oven at whatever temperature and for however long it says on the packet.
- when pan frying (I particular enjoy rainbow trout and it's not too expensive) heat up the fry-lighted pan and put the fish in skin side down. Splash some lemon juice on the flesh of the fish and salt and pepper it. Try not too turn more than once!
- salmon works well in pasta - cook 3 fillets for 4 pasta portions as above in pan, then flake up. While the pasta is cooking, fry up onions, garlic, chilli, peppers, leeks, broccoli, courgette, whatever you like. Add in extra light Philadelphia (for syns) or light Philadelphia (HExA) and a splash of lemon juice and mix until melted and coating the veg. Add back in the salmon and the drained pasta. Yum! Alternatively use Kerry low low cheese spread with red pesto or whatever sauce you fancy.
- fish pie: cook 1 onion and 1 garlic clove and 400g fish / prawns. Add 200g Philadelphia and mix until melted and coated. Meanwhile cook 500g sweet potato until soft and mash. Put the fish mix in the bottom of a dish, cover with the potato. Top with 28g grated Parmesan. Cook for 20 minutes at 200 degrees. My fave!
- buying fish: I find fish can be cheaper if you buy frozen. Asda do lovely pre-cooked prawns and tuna steaks frozen. Prawns can be chucked into stir frys or curries frozen and will cook through quickly. They also do a fish pie mix which is lovely (and pre-chopped!). They also do a bag of individually wrapped salmon fillets. This is nice salmon and it means you can defrost only as much as you need. Rainbow trout (not frozen) isn't very expensive but is super tasty yummy. Look out for deals on the fish counter and get the fishmonger to fillet whole fish for you.
