Nutters corner....ScanBran cake addicts society

I used this recipe hun:

SPICEDFRUIT SCAN BRAN TEA CAKE
-------------------------------------
5 scan bran (5 syns)
large cup of strong black tea (brew 2 teabags for about 10 mins)
35g raisins (5 syns)
1 tbsp malt extract (2 syns)
3 beaten eggs,
6 tablespoons sweetener,
1 tsp mixed spice (2 tbsp of mixed spice is a bit much!)

Method:

Soak the fruit and scan bran in the strong tea for 15 minutes. Drain off the excess liquid, add the remaining ingredients and microwave for about 5 minutes.

When I make it again I'll probably leave the malt extract out as you can't taste it in the final cake (I couldn't resist trying a piece! :D)

How did you get it so cake looking? Mine always looks a little flat but tastes good. X
 
Went to make the Spiced Fruit SB Cake today.
Started to make it and realised I hate no raisins so used figs instead. Hopefully it'll turn out okay x
 
I was a Scanbran cake virgin until this morning. The first was so good, I immediately made a second!

The first was simply a banana and custard one, using 2tbsp of sweetener. I sampled this whilst still warm (patience is not my strongest suit) and thought it a bit too sweet. I was interested to find that the sweetness seems to diminish and the bran taste gets stronger as the cake cools.

The second was with a toffee Muller and a hazelnut Options (2 Syns) and 1 tbsp sweetener but I haven't sampled it yet.

I think Scanbran cakes but just be the answer when I need a sweet fix - cut into little squares it will help with those ' I've just to eat and eat and eat' times!

One word of warning to other first timers: I used an electric hand whisk the first time. Big mistake as the mix went everywhere!
Just beat vigorously with a fork until everything is well mixed.

Next time, I'm going to experiment with a savoury one to have for a packed lunch. Think it might be best to wait for a few days first!

(Has anyone tried freezing them? Individual slices would be handy).
 
I always use the blue packet Katie - to be honest I dont think theres much difference between them.

How was the cherry cake?

It's nice it looked better than my first one but somehow I liked my banana and custard one better ;-)

Looking forward to try the toffee flavour next been the asda and stocked up in mullers ;-)
I'm thinking toffee and raisins what you think I could put instead of raisins ;-) X
 
Haha I like my food to look presentable then it makes it taste good.

Its just 0% total yogurt mixed with a little essence and then some choccy sprinkles on
 
Think I need to take note haha mine looks dry and baldy haha !!
Think I've laid of the cakes for long enough so anything cake type would taste like heaven to me lol ;-)
Have you tried the tea cake version ? X
 
Lol loving the apple pie and custard theory.

The mint one is the same basics - 5 scan bran, sweetener,eggs, and a mint choccy options, then I added mint essence. Cook for same time, thenI add a little essence to the yogurt for topping yum yum
