Amazing Lemon Cake

I've adapted some of the cake recipes floating around and came up with this, which I think is gorgeous!

Total syns for whole cake: 14

Ingredients:

6 eggs, separated
9 tbsp Splenda
1 tsp vanilla extract
1 tsp lemon extract (2 syns - it's made with sunflower oil)
grated zest of a lemon
2oz (56g) self raising flour (9 syns)

Topping:
1 tbsp lemon curd (3 syns for Waitrose one - slightly less for others)

In a bowl, using an electric beater, whisk egg whites until stiff.

In another bowl whisk egg yolks, , Splenda, vanilla, lemon extract & zest. Add flour and whisk again. Add egg whites and whisk until it's all combined.

Line a loose bottomed cake tin with nonstick baking parchment. Pour batter in (don't worry, it will nearly reach the top). Bake at 190 for 15-20 mins until toothpick or knife inserted comes out clean. You may need to cover loosely with foil for the last 5 mins to prevent the top from scorching.

Remove from oven and spread the lemon curd over. Leave to cool, then remove and cut into slices, although it's equally gorgeous eaten straight from the oven!

You're welcome! I have to thank GymClassHero for the inspiration though!

I think this cake is soooo lovely! It really doesn't taste like diet cake! In my opinion though it is worth using the extra syns to use proper lemon curd (rather than the SW syn free version) to just take away from the artifical sweetness of it all. Having said that, I've not tried the SW version of lemon curd so I'll have to give it a go!
 
I made some of the mini quiches that are on the SW site. They were delicious and are free on Red and EE.

It is very moist! I was suprised how 'cakey/spongey' it was, actually! I can't recommend it highly enough. It's my new obsession for the next week or so! LOL

Slow Cooker Adobo Pork

Here was my dinner last night - slow cooker adobo pork loin. Yum! 1 sliced red onion, 8 sliced cloves garlic, 3/4 cup light soy sauce, 1/2 cup vinegar, pork loin roast. Popped it all in the slow cooker in the morning and by the time I came home dinner was ready!
