Hi Jo, it was roughly half a large tub of yogurt. The contents of a cup would have different weights depending on what you're measuring (e.g. a cup of splenda wouldn't weigh the same as a cup of sugar). What I *do* know is that a cup is 240ml so if you want a more precise measurement and have a measuring jug, maybe use that? I wouldn't worry too much though... Oh I also didn't use any milk, I wanted to use all my HEA on cheeeeeese :D

Last night's Supper was Salmon on a bed of Couscous........

Couscous with Knorr herb stock pot, spring onion, apricots, tomato.

The Salmon was marinated in honey & soy sauce
 
Yesterdays Dinner, Spag.Bol.


Pete’s Spaghetti Bolognese-2


Serves 2


Ingredients

1 small onions, chopped
1 garlic clove
1 small carrot, chopped
1 red pepper, deseeded & chopped
1 green pepper, deseeded & chopped
125g mushrooms, chopped
1 large celery stick, chopped
250g low fat beef mince
1 400Ml can/box of chopped tomatoes
1 Tsp Worcester sauce
1 Knorr Beef Stock Pot
1 Tbsp mixed Herbs
400g cooked wholemeal spaghetti
Parmesan Cheese

Method

In a frying pan cook the meat until any fat is cooked out & browned. Put to one side.

In a deep saucepan spray with Fry Light and cook the onion until transparent, then add, garlic, carrot, peppers, mushrooms, celery and stock pot to the mix, cook for 10 mins.

(If you want a smooth sauce then remove from the heat and using a hand blender blitz to a smooth sauce.)

Add the meat and the tomatoes, Worcester sauce, herbs and season to taste, cook for 30 mins until it thickens.

Add spaghetti to the sauce, mix and serve, sprinkle with Parmesan if required.

Hi Jo recipe for Carbonara is 1 onion
3 cloves of garlic
3 whole eggs
3 egg yolks
Tub of Quark
Bacon or ham or Gammon
Pasta
Sorry I am not exact with the bacon or pasta measurements but I have used different amounts each time lol. Last night I added cooked leftover chicken as well but it didnt add anything so wont bother again. You could also add mushrooms to the mix but my Hubby and Son hate them so no mushrooms for me :-(

Anyway you cook the onion and garlic in the pan until soft. Then add the bacon and cook until cooked I usually allow it to crisp because thats how we like it.(If you were adding mushrooms add them at this stage as well)
Boil your pasta.
When the pasta is cooked add the bacon onion mixture to it and mix well.
Mix together eggs ,egg yolks and quark and season.
Remove pasta from heat and stir in quark egg mixture return to heat to heat through but be carefull not to over do it as it turns into scrambled egg if cooked for to long :)

The cabbage is really easy as well. Just finely slice cabbage and if you want an onion(I forgot to do that last night lol)
Heat a wok or large frying pan and spray with frylight. but dont allow to get to hot. Add the cabbage and cover with lid but only have it on a low heat or cabbage will burn. After a few minutes add some garlic puree and more frylight and stirfry.

Perfect thanks so much, no need to worry about measurements I always change and adapt recipes too. Making this this weekend, its the one food my family all miss, trying to find a good one and this sounds promising. I would add mushrooms, only daughter hates and she just picks out. It is really delicious and really doesnt taste like diet food. Even my fussy 16 year old loves it. I made him eat it last night and he said it was Peng whatever that means lol Think its a good thing hehexxx

Chicken tikka masala.. Was sooo good. Tasted like it was from an Indian restaurant. Best sw curry I've ever had! Made it with caulliflower rice and a wm pitta bread x
 
Here is Yesterdays Dinner Chicken Cacciatore, the base sauce would be ideal for any Italian dishes!


Pete’s Chicken Cacciatore

Serves 4

Ingredients

Knorr Herb stock pot
1 tsp dried oregano
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 carrot, chopped
1 stick of celery, chopped
2 garlic cloves, finely chopped
2 chicken breasts
6 rashers of smoked bacon, cut into strips
225g mushrooms, sliced
200mL passata
400mL chopped tomatoes
1Tbsp tomato puree
1Tbsp sweetener


Method

Spray a frying pan with Fry Light and brown the chicken, set aside and keep warm.

Add Fry Light to an oven-proof pan and cook the bacon until crisp, add the celery, carrot, peppers, onion & garlic, cook until soft.

Return the chicken, add the tomatoes, oregano and passata, place the stock pot contents on top of the ingredients, cover with a lid, bring to the boil, add sweetener, then reduce the heat to a simmer for 30 mins, add puree, continue cooking for 20 mins until the chicken is cooked.

Add the mushrooms and simmer for 10 mins, serve with pasta or roasted veg.
