Here's what I had for dinner. Grilled salmon, leftover tomato sauce, steamed corn and spinach. Sauce was a bit soupy, next time I'll let it reduce some more.
Some of these pics are really inspirational .....my dinners sometimes taste good but they look like a real mess on the plate and I look enviously at the pics of meals in my slimming world magazine and think, yeah right! Well done everyone!
Here's my delicious dinner for tonight, if I do say so myself
Pan "fried" sea bass with grilled mediterranean vegetables and sweet potatoes. It was delicious and light and made me feel like I was on holiday! DH loved it too (he had 2 fillets of fish and a drizzle of melted butter on his veggies, he does NOT need to lose weight lol)
Tonight's dinner! A seafood broth soup with steamed corn.
I just boil some water and add some coarsely chopped onions, garlic and ginger. Add chilies sliced in half lengthways. Add salt, stock cube and 1 tsp splenda/sugar and simmer for 20 minutes. Fish out the aromatic veggies with a slotted spoon and add assorted chopped seafood (I use monkfish, prawns, salmon and scallops). Turn the heat off and leave to poach for 10 minutes, add a handful of chopped coriander and juice of half a lemon and serve! Free on red (without the corn) and on Extra easy. Great for days when you're not feeling well, its a healing soup! Very fresh and clean
