Red's food diary - advice very gratefully received

Yes yesterday's tea was lovely. I wrapped the asparagus in lean bacon too and used leeks, garlic and fresh thyme with the mushrooms.

I am frantically busy today so forgive me for not visiting people's diaries. I will catch up later tonight or tomorrow.

This is today's plan - not sure about tea yet - will ammend. Breakfast was yummy and once again as inspired by Britmum.

February 15th – Green

BreakfastBlack coffee, 2 slices Hovis Nimble wholemeal bread (HexB) as French toast with chopped banana and raspberries with maple syrup (2syns)

Lunch – Superfree vegetable soup, salad (spinach, watercress, tomato, radish, spring onion) with quorn peppered beef slices. Tiger Tiger Red Thai dressing (1syn)

Tea –Parsley and tarragon omelette and jacket potato and beans, bowl of salad leaves

Snacks - Options drink (2 syns), Alpen light

Syns – 5

HexA – Babybel lights
HexB – 2 slices Hovis Nimble, Alpen light

Tea – Quorn bolognaise and wholewheat spaghetti - Cadbury light mousse (3.5syns)

Snack – banana, apple 2 wholewheat crackerbread with Babybel lights.(HexA) Options drink (2syns)

Hi hun, I'm very impressed by how creative you're getting with your food!! I cook lots, but really must make more effort to try more unusual recipes!! I just have to plan! You're doing great! I'm sure you'll be rewarded tomorrow at WI!! Good luck, can't wait to find out!!X
 
How do you work out your quantities for rice and bulgar wheat hunny? Plus good luck!!

I just do half and half, sometimes and I do it by sight. Sometimes I overestimate but then I save up the excess for the next day and either use it with leftovers or add salad veg and spice to it (good for tinned tuna or salmon or cold meats) just add cherry tomatoes, cucumber, radish slices and spring onion and spice and serve with salad leaves makes a nice cold salad for lunch the next day.

Well thank you :eek: obviously I get a lot of inspiration from looking at everyone elses diaries. I have always cooked though so I've really just adapted to the SW way of cooking and with sites like Britmum's and Silvermane's diary for inspiration that has made adapting easy. At the beginning I didn't meal plan for the week and it meant I was disorganised for evening meals so I'm *trying* to menu plan evening meals for the week now (and always have soup!!) It does help that I do most of my work from home so that's a distinct advantage.

I think your diary is great, I always read it.

I'm hoping the party (or rather the wine at the party) of my father in laws isn't going to make next week a gain! But I'm going to take my own food. Will probably be a buffet so will take extra salad and I'm going to make the spicy chicken drumsticks from the latest magazine.

Fantastic news!! Great loss! Well done, it's all really paying off for you! Yes you can definitely turn your F-I-L's party to your advantage by making some healthy choices! I bet they'll be popular with all the other guests too! One of my fave party foods to make is filled jacket potato halves! I get small jackets, bake them, half them, scoop out the potato, mash and mix with things like roasted veg and sweet chilli Philly or cheddar and spring onion (anything you like really), refill and bake for a little longer! X

Well, best laid plans and all that. Didn't do the river cobbler for tea, had more of a makeshift one. Didn't eat before tutoring as I'd been working all day on cards for an order and although I made the boys soup I didn't get round to my own tea - fail.

So did a pasta n sauce instead (ermegency sachet :p) and a salad with half a tin of salmon.
 
Oh and I should add (how could I forget) thank you so much everyone for your nice words about weigh in. Always appreciated. You are all fabulous!!!

Breakfast /Brunch – Big breakfast, 2 Tesco light choice sausages (1syn), 2 bacon medallions, some light choice baked beans, egg, lots of mushrooms, onion and tomato fried in frylight with garlic with tarragon added at the end.
Lunch – some quorn bolognaise with a jacket potato and laughing cow.
Tea – Half tin salmon, salad, pasta n sauce carbonara (1syn) (mixed in a couple of laughing cows (HexA) Mullerlight yoghurt
Snack – half an apple,1 and a half a Satsuma and a banana, sup of superfree veg soup, Alpen lights, Options drink (2syns)
Syns – 4
HexA – Laughing cow lights
HexB – Alpen lights
