Sick of carrying 2 hitch hikers about, so this is my diary

Evening Ladies,
Headache is gone, definitely stress related, had a very bad week and have been upset all week, and now tonight all my worries concerns and upset are gone...without going into too much detail, my youngest daughter and her fiancée actually split up Sunday night after 5 and half years together and just 10 months before their wedding. Very upsetting for everyone, my daughter stayed with her sister since then and her fiancée went home to his parents.
Anyway tonight my daughter popped in after work to tell us that she was meeting up with her fiancée as he had asked her to give it a few more days to see how she felt, she was adamant it was definitely over, we had a bit of a chat with her and then Mark her other half came and collected her. They were gone 2 hours and have just returned here to tell us that they are going to give it another go, but that they have decided to call off the wedding for next year (they'll lose a few deposits but hey ho) and just concentrate on each other and travelling and they are then going to concentrate on getting their own place ...yeahhhhh lol

I was very upset all week, I could see they were still in love etc blah blah but sometimes when you have a lot going on and are stressed it's harder to feel that for yourself.
So Lily's advice column is resumed :giggle:

Thank you all for your lovely messages and concern, it's been so nice knowing you are all there for me and now I have another headache thankfully not in the head though....just made the key lime pie for my nieces birthday tomorrow and now she has asked me to make a couple of other things for her too...so going to be busy again tomorrow, so probably won't be about a lot bummer lol
But will be back as usual tomorrow night (late) and Saturday, Sunday we have a lovely lamb roast celebratory dinner to plan, for the return home of my gorgeous daughter and her fiancée :woohoo: xxxxxx
 
Oh and Lo I made the Mackerel Onigiri ....I have never in my life ever had mackerel before ...god knows why cos it's bloody lovely, my Onigiri didn't look quite as gorgeous as yours but it tasted fantastic...I loved it ...so thanks again for another lovely recipe going to go see what else I can nick off you lol xxxx

Aws, I hope things work out. Me and the OH aren't rushing into getting married either (think we're at about 5 and a half years too). The travelling and finding their own place sounds like a good idea, will you miss and not miss them at the same time? lol

I'm glad the homemade furikake turned out alright, I haven't tried that since I get the readymade kind from japanese places but the recipe I found looked about right for a nori one.

Hope the next few days are busy in a fun way :) Key lime pie sounds yummy, do you have the recipe to post? Saying that I'd probably not be able to make one since it's just me who'd eat it, syn overload I expect lol

Yeah I'd miss them tons, but it is time for them to move on they are both nearly 23, they have lived together here for the last 3 years and to be honest as much as I love them both would be really nice not to have to clear off from time to time so they can have romantic weekends etc and just do what me and my old man want to do and just chill in our home lol.
Oh the Onigiri was absolutely delicious and I didn't realise Mackerel was so yummy, I am a look and if I don't like the look I'm not going to taste, but only with fish, something about fish that really makes me hold back, but not any more I think I'll try them all lol
Oh you really want the key lime pie recipe, it is to die for honest, but I think I'd make them into individual ones and maybe give some away in your case lol
So here's the recipe ...good luck lol xxx

Key Lime Pie

Ingredients
8 Reduced fat digestive biscuits, finely crushed
50g low fat spread, melted
1 sachet sugar free lemon & lime jelly crystals
150ml boiling water
2 tsp gelatine powder
Finely grated zest of 2 limes
Juice of 4 limes
400g fat free vanilla yoghurt
200g quark
6-8 tbsp sweetener or to taste
For the candied limes
2 limes, thinly sliced
6 tbsp sweetener

Method
Mix together the crushed biscuits and melted spread and spoon into the base of your cake tin, chill in the fridge for 30 mins.
Make up the jelly with the boiling water and stir in the gelatine. Leave to cool, then place in a food processor with the lime zest and juice, yoghurt, quark and sweetener. Blend until smooth and then pour over the biscuit base. Cover and chill over night or until set.
To make the candied limes, cut each lime slice in half and place in a small saucepan with 7fl oz of water and the sweetener. Bring to the boil, remove from the heat and allow to cool.

Extra easy 5 ½ syns
Original 5 ½ syns
Green 5 ½ syns

You can make this recipe with any flavour, we have made strawberry and orange ones too xxxx

P.S. We actually cut this up into 16 slices (I made it in a large flan dish) and each slice worked out to 3.5syns...a lot better than 5.5 and more than enough cake for me xxx

All the stress of the wedding has probably set off all the doubts about whether they should go through with it. The fact that Mark got in touch with your daughter will have given her a huge boost :D

I hope they manage to work things out. There's plenty of time for weddings once they've had a bit of fun.

I've made the rustic carrot cake before and I like it. I'll have to try the key lime pie sometime. Nobody else will eat them though so I tend not to make them cos I end up eating the lot :eek:

Not sure they are going to make it to be honest, I really think my daughter wants to move on, sad as it is I will still be there for both of them, Mark is a lovely lad and any girl would be lucky to have him, I just think that Kirsty has outgrown him, better now before they went ahead with the wedding I guess. They have been out for a meal together tonight but neither of them looked happy, haven't heard from them since so don't know what's happened, but they will be back here Sunday so will know more then I suppose...I am still a bit upset but a lot more resigned to it I think, was a big shock at the beginning of the week and made me look at my own relationship and the problems there....will just have to give Mal a good slap and put him back in place I suppose :giggle: xxxxx

Lol no Key Lime Pie is in the SW world of flavours cook book, but I make a bigger one than they give the ingredients for (I use half the amount again on top of what they say) and then cut it into 16 pieces so it works out 3.5 syns a slice and not 5.5 xxxxxx

I wish I had tried the rustic carrot cake but I was seriously too full ...and I know there won't be any left there were only a few bits left when I left my sisters...unlike you guys Mal is the big cake eater in this house and would scoff it in minutes given the chance, which annoys me as he is stick thin darn him lol

Spanish Orange Cake

Serves: 12
Prep time: 20 minutes
Cook time: 30 minutes
Syns per serving:

For the cake
4 eggs, separated
50g/2oz golden caster sugar
5 tbsp artificial sweetener
150g/5oz self-raising flour
1 tsp baking powder
2 tbsp finely grated orange zest
juice of 2 oranges
For the syrup
zest of 2 oranges, finely grated into long strips
juice of 2 oranges
1 tbsp arrowroot
4 tbsp artificial sweetener
To serve
fresh raspberries
long strips of grated orange zest

1. Preheat the oven to 190°C/Gas 5. Line a 20cm/8in cake tin with non-stick baking parchment.
2. Place the egg yolks, caster sugar, sweetener, self-raising flour, baking powder and orange zest and juice in a bowl and whisk until thick and pale.
3. In a separate bowl, whisk the egg whites until softly peaked then fold them into the egg yolk mixture. Spoon this mixture into the prepared cake tin and cook in the oven for 25-30 minutes or until the cake is risen and firm to the touch. Leave to cool.
4. Meanwhile place all the syrup ingredients in a saucepan with 90ml/3fl oz of water and bring to the boil, whisking constantly. When it starts to thicken, remove from the heat.
5. Drizzle the syrup over the cake and decorate with raspberries and grated orange zest. Cut into wedges to serve.
 
Rustic Carrot Cake
Serves: 16
Prep time: 20 minutes + cooling and chilling time
Cook time: 40-45 minutes
Syns per serving:
4 on all plans


113g/4oz low fat spread
85g/3oz Silver Spoon Half Spoon sugar
3 medium eggs
pinch of salt
1 level tsp cinnamon
¼ tsp ground cloves
½ tsp baking powder
170g/6oz wholemeal self-raising flour
113g/4oz coarsely grated carrot
grated zest of 1 orange
1 tbsp orange juice
For the Frosting:
113g/4oz Quark skimmed milk soft cheese
artificial sweetener, to taste
grated zest of ½ orange
shreds of orange zest, to decorate

1. Line a 454g/1lb loaf tin with non-stick baking paper. Preheat the oven to 180°C, 350°F, Gas Mark 4.

2. Beat the low fat spread and half spoon sugar together until light and creamy. Beat in the eggs, one at a time, and then beat in the salt and spices.

3. Sift the baking powder and flour and fold into the mixture, a little at a time. Finally, fold in the grated carrot and orange zest. Add the orange juice so that a soft, dropping consistency is achieved.

4. Spoon the mixture into the prepared loaf tin and bake in a preheated oven for 40-45 minutes. You can test whether the cake is cooked by inserting a long metal skewer into the centre. If it comes out clean, it is cooked.

5. Remove the cake from the tin and cool on a wire rack. Meanwhile, make the frosting, if using. Beat together the Quark, some artificial sweetener to taste, and the orange zest. This looks pretty if you use an orange zester and remove it in long thin strands. Chill in the refrigerator until needed.

6. Remove the paper from the cake and spread the frosting thickly over the top. Sprinkle with the shredded orange zest and serve cut into slices.
 
1 syn cupcakes

6 eggs
56g S.R. Flour (or 28g cocoa and 28g flour if you want chocolate cup cakes) (9 syns)
9 tablespoons of sweetener
2 teaspoons orange or vanilla flavouring

Topping

4 tbsp icing sugar (12 syns)
2 tbsp cocoa powder or 1x 11g Belgian Chocolate Option Sachet (2 syn)
water to mix cocoa and icing sugar

Whisk egg whites until stiff. In a separate bowl whisk egg yolks with orange/vanilla flavouring, sweetener and ¼ of the egg whites and mix till pale yellow.
Add the flour gradually and fold into the mix carefully, when done add the rest of the egg whites and fold in . Divide between 20-22 cupcake cases and bake in the oven at 180°C/350°F/Gas mark 4 for about 10 -12 minutes or until firm to the touch.
Wait until cool and then mix the cocoa and icing sugar with water to make a thickish paste, add a spoonful to each cupcake and 3 chocolate drops and serve.
If you get a tin of light aerosol cream you can make a hole in the side and squirt some in making a gorgeous profiterole at only 1.5 - 2 syns each , after speaking to the lady who devised this recipe she feels it would be better to squirt the cream on the side and not try to put it inside.
Replace the icing/frosting with 2 tablespoons reduced sugar Jam and 1 tablespoon of desiccated coconut (still only 1 syn each cake) to make gorgeous Madeleine’s .

Makes about 22 good size cakes

I use recipes from mary berry book called cakes and bakes (she's the one from british bake off) and try and adapt as much as I can for sw treats, I just love trying out new recipes so thank you for yours. Hope you enjoy the banana and toffee in the freeze its yummy. xx
 
Love Mary Berry and the Great British bake off, was watching the Masterclass on BBC2 last night and Mal didn't know who she was ...WHAT??? I was incredulous, the original Delia is our Mary lol
I too love adapting recipes ...I have so many cook books and there are some wonderful recipes in them just waiting for a conversion ...well I am off to bed now, my body has stopped itching ..had to take a piriton and then let it kick in and now I am tired so i will say night night and sweet dreams xxxxxxxxxxx
