[h=3]Ginger Cakes[/h]

These are delicious. Perfect for holiday gift giving to the low carber in your life. I am bringing them to a little get together tonight. Not low carbers, but they will like them anyway. I love the flavors of ginger and spice and these little cakes fit the bill. Old world holiday flavor. The base is almond flour, so they are rich. I love the way almond flour gives a little crusty edge. That is why I like these cakes in small baking dishes rather than a full loaf. I love the edges the most. You can use a regular loaf, but it is not nearly as fun.

Ginger Cakes
2 1/2 cups blanched almond flour
3/4 cup sweetener equivalent to sugar
4 tsp ground ginger
1 1/2 tsp cinnamon
1 1/2 tsp allspice
1/2 tsp nutmeg
1/2 tsp baking powder
1/4 tsp ground cloves
3 eggs at room temperature
1/2 cup melted coconut oil
1/2 tsp vanilla extract
3 tbsp powdered sweetener
2 tsp cream

In a medium bowl, combine almond flour, sweetener if using a dry variety, ginger, cinnamon, allspice, nutmeg, baking powder and cloves. In a small bowl, beat eggs. Add the eggs to the dry ingredients, then add the coconut oil and vanilla. If the batter becomes too thick, heat it in the microwave for 45 seconds. This will remelt the coconut oil which may solidify if the eggs were cold. Spoon batter into mini loaf pans or muffin tins.Smooth the top with the back of a spoon. Bake at 350 degrees for 30-40 minutes, depending on the size of the bakeware. Let the cakes cool in the pan.
Prepare the glaze by combining powdered sweetener and cream. Stir until dissolved and drizzle over the cooled cakes.

Makes 2 mini loaves.

I use zero noodles as my search on mfp - they have the same values as what I use.

Ginger cakes look yummy- they're from the 24-7 low carb diner site? Ave you tried them?

Me too i still have some king cake to tuck into today and i cant wait. I felt so good when i woke up this morning to get another fast under my belt and felt lighter.

got absolutely nothing to do today so not sure what to do just slobbing around at mo. woke up fairly early but slept early too, lots of thing have improved since i started the fasts including the quality of sleep.

well a little of what you fancy eh lol

i started the day with a huge fry up, so to make myself feel better after all that i did an hour on the wii burned 240 cals, i remember from my time at weight watchers meetings that if you do 45 mins of cardio it burns max calories all day. so i did about an hour altogether because annoyingly you can set it for 30 mins or 20 mins but not 45 mins.. so just thought to hell with it and did the hour. feel blooming pooped i might add!!!

so going to have a little rest before i tackle the house.... zzzzzzzzz

Well done on the exercise, hope you had a lovely sleep and are now awake...

Went to bingo with my friend Steve had a little win and did some people watching, and the special guy from last week kicked off and got thrown out. That little bingo hall never used to be that interesting!

morning all, had a very nice flirty experience in a car spares shop today, nothing like a bit of attention to make you realise that the diet is actually working!! don't get me wrong a few months back i got the eye while i was out with my son and his gf, and my son said, MUM you still got it.... trouble was he was old, bald and not sure but didn't look like he had many teeth! at least today the guy was actually nice! lol
