Well hello everyone, i hope you are all enjoying your weekend. I've had a lovely one seeing family. We went out last night with OH's parents. Massive roast dinner with all the trimmings and then loads of wine when we went out. There was also dessert! I can imagine I'll be feeling rough today... but it was a fun night. We stayed at OH's parents and we're in OH's old bedroom which is so surreal. Can't believe we are living together 2 and a half months. Love it :)

All in all the weekend has been pretty off plan but not disastrous. Waaay over syns and haven't followed SW but have not gone too crazy either. We're making roast dinner tonight when we get home. Shoulder of lamb. The stuffing etc won't be very SW friendly but we'll have lots of superfree and I'll be jumping straight back in to being 100% on plan from tomorrow morning. Will weigh in on Wednesday morning to look at my progress. I think I'm OK with being 100% on plan during the week and allowing myself some wiggle room at weekends. Still feeling so motivated and determined. Nothing is going to stop me!!

I also decided to start using my 30 minute lunch to get a walk in every day which is working very well. Means I can relax in the evenings after work and it makes me feel good to know i'm doing some exercise every day.

It's very quiet around the diaries lately, I miss having lots to read!

Today was good for me. U decided to just draw a line under the weekend and just get back to following Slimming World. Only thing to do really. Went over my syns today but I feel ok about it because I ate so much superfree today. I tried something new today too, potato rosti :) it was gorgeous! I finally figured out how to use my food processor so I needed a project. They turned out great.

Today's Food Diary...

Breakfast - a grapefruit and a kiwi.

Snack - bowl of 'creamy' tomato 'soup' whuch is the latest Slimming World craze. Basically mix together a tin of baked beans and a tin of chopped tomatoes. Heat through in a pot. Then put in a blender and blitz. It ends up being like creamy tomato soup. It was lovely!

Lunch - erin low fat savoury rice (1.5), 3 wheat cracottes (HexB tweak), laughing cow triangles x 2 (hexA), plum, banana , pear and a muller greek style (.5)

Dinner - lamb, stuffing (3), potato gratin x 1 tablespoon ( 3), homemade potato rosti, looooads of free and superfree veg, gravy (1)

Snack - packet of popcorn (6) happy hippo (6)

Syns - 21

Not too bad really! I do feel like I ate too much though.

Plan for tomorrow is to have similar breakfast and lunch and dinner will be homemade spagetti bollognaise. As for syns, I want to keep it at 10 so it will just be a happy hippo with my cuppa tomorrow evening.

Really want to be very good for the next three days and hopefully see a loss on the scales! Friday will be off-plan as I am having a girly night in my apartment with wine , take away and goodies. We are also going to the cinema. Saturday and Sunday should be pretty good though.

I will weigh in in Wednesday as planned, as an official weigh-in.

Joanne, Potato rosti was basically three grated potatoes, a diced onion, handful of mushrooms, salt, pepper, garlic, 2 eggs and a bit of cheese. Mix it all together and form patties. Pan fry till each side is golden (about 5 mins) and they will start to fall apart so gently transfer to a baking tray and bake in a medium-high oven for 40 minutes. So good!

Am so gutted for Ireland in the match tonight :-( world cup qualifier and in the last 30 seconda Austria equalised. I cried like a baby! OH is very passionate about the Irish team and goes to all the away matches which have brought him all over the world. I just felt so happy tonight when it was 2-1. Last 30 bloody seconds :-( gutted.

Today was a great day in general! Good productive work day, go out of office on my lunch and visited my grandad who I hadn't seen in months. He is house-bound god love him. Its very sad and so easy to stay away in a selfish way so I don't get upset, but today I had the urge and I'll make it my business to go once a week. He is 80 and smokes a lot. I just feel so sorry for him, it is so sad to see how little he lives :-(

Anyway, here is my good for the day...

Breakfast - banana and a kiwi

Lunch - 4 wheat cracottes (hexb) tomato mugshot, cheese (hexa) grapes, pear and a grapefruit. Muller light greek style coconut yoghurt (man these are so gorgeous).

Snack - chicken and sweetcorn mugshot, a plum, half sachet of jelly (.5)

Dinner - spagetti bollognaisse made with passata, tins of chopped tomatoes, garlic, onion, peppers, mushrooms, choritzo (2) and cheese (2).

Syns - 4 so far and will be having a kinder happy hippo with my cup of tea. So syns in general will be 10.5. Very happy with that day.

Plan for tomorrow is to have a similar day. If I can keep this up I'll be looking at a nice loss soon :)

A couple of foodie pictures. Has anyone had the banana and custard flavour Muller Lite? I read it somewhere here recently and thought it sounded gorgeous and today I found them in Tesco. They are absolutely gorgeous so I'll definitely be getting them again.

I threw in a little photo to represent today. SHOPPING! I actually ended up leaving the apartment 2 minutes after I got in from work because I realised I left my Kindle in work and I am on the clock to finish reading 'Safe Haven' because I am watching the movie on Friday. It spurred me to go for a walk across to the shopping centre and buy the book. YES, buy the book for the sake of being able to read it tonight and tomorrow morning. So worth it! On the walk I realised we have an amazing library within two minutes walk from our apartment. They didn't have the book because they were all out on loan already but I am really glad I went in, signed up and had the lovely reminder of how cool it is to live near such places.

What happened next was like a drunken shopping spree! I intended to spend €7 on the book but somehow ended up spending €90. Whoops! It was actually mainly on stuff I needed to buy though. Easter treats for OH and my brothers, Easter gift for my Nanny, a gift for my hairdressers newborn baby, wine for Friday night when I am having my cousins and sister over for a girly night, the book, and then I decided to get the €12 Tesco Meal Deal because it looked really nice. Not very SW friendly, but nice for tomorrow night considering OH is going away on Friday morning. He is going to Newcastle on Friday morning.

I was SO exhausted today. One of those days where I just felt rotten. I was planning on visiting my nanny after work because I told her I would clean out her fridge, but the thoughts of going anywhere other than home after work was not appealing. I decided to go visit her on my lunch instead. I took a long one, had a nice visit, got some fresh air and did her fridge as promised. I was glad to have it done though because little jobs like that make a big difference to my nanny. It was also lovely to see my 5 month old cousin who we are all so in love with. When I got back to work I pretty much ate my lunch and dossed on the internet for two hours. I have a day like that about once a week and I always feel so guilty after it. I have so much to be doing and sales targets to reach that I really can't afford to be lazy, and then I feel guilty because I know how lucky I am to have a full time job etc. I suppose I am human though, I ain't perfect. I definitely feel a LOT better after a productive work day though, so maybe I need to remember that. My job is pressurising in terms of targets etc, but when I am organised and on the ball it is very achieveable!

Anyway, back to food. Today was a pretty good. day. I went over my syns by a good bit but in general I am definitely back in the zone and I have a lot more willpower than I have had in recent months.

Breakfast -banana and a cup of coffee
lunch - two slices of wholemeal bread (HexB) with mayo (1.5) lettuce, tomato, sweetcorn, onion, ham and cheese (HexA) a packet of King Lights (8 - shocking, I thought they would be about 6) a curly wurly (6.5) greek style coconut yoghurt (.5) a plum and a pear.

Snack - mugshot, grapes

Dinner - Sole Goujons and a fish cake (10??), SW chips which were amazing, mushy peas.
Dessert - 2 muller light banana and custard yoghurts ( i couldn't resist) and a mini malteaster bunny (3).

I feel like I ate a lot today when I list it out, but it never feels like that. Does that seem like a lot to you guys?

Syns - 29.5

ok, so syn wise a lot worse than expected. What would I change? I wouldn't have had the King
Lights (but they were so nice) and also the curly wurly. Both of those would have kept things just about OK. Ah well, I am not too worried!

Tomorrow's dinner will be pretty off plan, and we have dessert, so will try have no syns tomorrow during the day, or as little as possible!

I'm doing a challenge where I will be losing 70 pounds (5 stone) before the end of 2013 to raise money for the children's cancer ward where my little brother was treated (he was 2 and thankfully he was cured) I want to give back to this amazing place and my motto is 'your health is your wealth'. Those poor children don't have the choice to be healthy, and I do! Please go on and have a read if you can. So as you can imagine I am feeling VERY motivated! Here is my food diary for today...

Breakfast - magic porridge made with a 0% fat free yoghurt and a banana, 2 syn for honey

Lunch - erin low fat savoury rice (1.5) a pear, plum, apple and a kiwi

Dinner - home-made fish pie with salmon, cos, smoked haddock, carrots, peas, sweetcorn, courgette, potato, cheese - philadelphia light with garlic and herb (hexA), parsley sauce (2.5) and fish stock.

Snack - 3 herbal teas, 1 banana and custard muller light (1), grapes

Hex a - light phily and milk
Hex b - 35g porridge oats

Syns - 7

Here is the fish pie. It was incredible!!

Thanks guys, I really appreciate the support. It is a big challenge but that's the point, you know? I am 5 stone away from my goal weight of 10 stone so I want to get there this year, and who could think of a better reason? Not me :)))

Here is fish pie recipe hun -

Fish pie mix (ours had salmon, white fish and smoked fish)
1 packet of knorr parsley sauce (dried)
1 fish stockpot
Mixed frozen veg (the one with peas, sweetcorn, carrots etc)
1 courgette
3 cloves garlic
1 onion
200 ml of skimmed milk
Boiling water
Salt/pepper/herbs to taste
1 tablespoon of light garlic and herb philadelphia

For the topping - 6/7 large potatoes
Hex A portion of any cheese

In a frying pan use frylight to fry the onion, courgette, frozen veg. Cook for about 10 mins until frozen veg is soft. Add the fish stock pot, about a pint of boiling water and mix through. Simmer for 5 minutes. Add the packet of parsekt sauce and the 200ml of milk. Judge water yourself but were hoping to reduce to a creamyish sauce so add boiling water as needed. When it becomes a bit reduced add the tablespoon of philadelphia.
Add the fish and mix through for 2/3 minutes till mostly cooked or fully cooked. Add salt and pepper to taste.

Pour this mixture in to a suitable dish.

In a pot boil potatoes and make in to mash using a little stock, salt and pepper.

Spread mash over fish mixture and cover all corners etc. put in oven for 15 minutes and finish over under the grill for 5 minutes before adding some grated cheese for last minute.

Hope that makes sense. I made it up but it worked and the whole thing is only like 5 syns (paraley sauce) if cheese is your healthy extra which it wouldn't even be as its so little for a whole fish pie. You should get three or four portions depending on appetite! Lol :) the smoked fish really made it!

Breakfast - melon, grapes, half a banana and yoghurt 0% fat

Lunch - at 1pm i was ravenous. Wholemeal pita (hexb) with ham, salad, tomato, pickles, onion, 1.5 tablespoon extra light mayo (1) packet of velvet crunch (4) a kiwi and a pear

Snack - apple, plum

Dinner - 2 massive bows of irish stew (carrots, parsnips, garlic, courgette, potato, onion, mixed frozen veg, potatoes, beef) 2 syn to allow for oxtail soup (1 packet is 10 syns so 2 syns per portion).

Followed by - banana and custard muller light and melon.

Snack - curly wurly , 3 herbal teas

Hex a - milk in tea
Hex b - wholemeal pitta

Syns - 13.5

I'm a bit paranoid today that i'm eating too much... My meals generally have quite a bit of superfree veg so maybe I should cool it in the fruit. What do you think? I feel like I have a huge appetite and I need to train myself to have a smaller one. I feel today i overdid it in fruit and also shouldn't have had the second bowl of stew. Hmmm... What do you guys think?

Snack - 0% fat yoghurt, thai mugshot (.5)

Dinner - homemade cottage pie (2.5) with mashed potato topping and hexA cheese.

Dessert - Scan Bran Cake (3.5) served with 'banana and custard' muller light

Hexa- reduced fat cheese (40g)
Hexb- 35g porridge oats

Syns - 9.5

All in all another very good day :)

I am so happy tomorrow is Friday! I can't wait for a lye in on Saturday. OH is going out on a boys night out and staying in his mams (as a taxi home from there to here would be EUR40 and only EUR15 to his mam's or friend's house) so I may have a friend over or something on Saturday night. Sounds sad but I have loads of bits and bobs i want to get done around the apartmet so i'm actually looking forward to getting those done on Saturday and then relaxing feeling good about my accomplishments haha!
