Minced Lamb with Mint and Tomatoes with Cauliflower, onion and tomatoes!
The mince and mint is inside the tomatoes. It was totally gorgeous!!!!
This is a Madhur Jaffrey recipe (well 2)
Minced Lamb with mint in Tomatoes
175g Onions
6 Garlic Cloves
5x 2.5cm fresh ginger, peeled and chopped
2 tbsp ground cumin
4 tsp ground coriander
1 tsp ground turmeric
1 tsp ground cayenne pepper
Frylight
4 cardamom pods
6 cloves
2lb/900g minced lamb
1.5 tsp salt
50g freshly chopped mint- grown in our garden!
1/4 tsp garam masala
1/2 lemon- squeezed
6 beef tomatoes/large tomatoes
Chop half of the onions finely and set aside. Chop the other half coarsely and put them, along with the garlic ginger and 3 tbsp water into a blender. Process into a smooth paste. Empty into a smooth paste. Add the cumin coriander, turmeric, cayenne and mix.
Spray a large pan with Frylight and set on a high heat. When it's hot, add the cardamom pods and cloves. Two seconds later add the finely chopped onion. Stir fry until they're fairly brown. Reduce the heat to medium and add the spice mixture. Stir fry for 3-4 minutes .
Add the minced meat to the pan, break up all the lumps and stir the mince until it loses all of its pinkness, then stir fry for a further minute after that. Add the salt and mix. Cover, reduce the heat to very low and let the mince cook for 25 minutes.
Remove the cover and spoon off most of the liquid. Add the mint, garam masala and lemon juice. Stir to mix and bring to a simmer. Cover and simmer on a low heat for 3 minutes.
Cauliflower with Onion and Tomato
1.5lb Cauliflower Florets
75g onions, coarsely chopped
5cm piece of ginger, peeled and chopped
Frylight
6 garlic cloves- finely chopped
1 tsp ground cumin
1 tsp ground coriander
150g tomatoes- peeled and finely chopped
1/2 tsp ground turmeric
1/2 tsp cayenne pepper
1 fresh green chilli
1 squeeze of lemon juice
1.5 tsp salt
1/4 tsp garam masala
Soak the cauliflower in a bowl of water for 30 minutes. Drain and set aside. Meanwhile put the onion and ginger into a blender along with 4 tbsp water and process to a paste.
Heat a pan with Frylight over a medium high heat, add the garlic and stir fry until the pieces turn medium brown. Add the cauliflower and stir fry for about 2 minutes or until the florets start going brown. Remove and put in a bowl.
Put the onion and ginger mixture into the same pan and stir fry for one minute. Add the cumin, coriander and tomatoes and stir fry until the mixture turns a medium brown colour.
Add the turmeric caynenne chilli lemon and salt to the pan. Stir and reduce heat to low. Add the cauliflower and any liquid in the bowl and stir gently to mix.
Add 3 tbsp of water, stir again and bring to a simmer. Cover and cook on a gentle heat, stirring now and then, for 5-10 minutes until the cauliflower is cooked.
Sprinkle garam masala over the dish and serve.
