Extra Easy Days Trefoil's Trip To Target!

I will! I'm about to start packing :D
I love Windermere and have stayed there a few times but this weekend we fancied a change and wanted to be closer to South Lakes Zoo. We tend to have a drive to Ambleside most times we go (I LOVE Lakeland plastics) and just take in the scenery. Exciting!
I think it sounds sensible to stay near where you need to be- especially transport wise, as the further into the sticks you go the harder it is and the less options you have open to you.
I think we'll be looking around Wakefield area- what we need to buy is too expensive around Hudds (house with land). Stuff comes up in Barnsley but there would be competition there for the business we want to set up (therapeutic farm).
You'd be surprised how much goes to auction- it's a cheaper way of buying if you can do it too, or so I've read lol.

Wow a therapeutic farm! That sounds pretty amazing but I do imagine that you want to get it right, and right first time in the right place etc. Wakey isn't too bad there's some nice open plan areas so I think you'll have some good areas to pick from!

Yo sushi is my idea of hell (raw fish eek) but everyone raves about it. I'm just too scared to even try it haha. Hope you enjoy it :D syns wise is it not relatively low?

Thank you! No they didn't he just made me lay my arm on a bed so it wasn't too bad :)
We didn't end up in Yo Sushi it all went to pot! It is low, as long as you know which soups are low Syn etc. The edamame beans are apparently free and there's a lot of salads and dishes that are 1-1.5 Syns a go. When it is less busy, we will end up in there!

So this is yesterday...
Went to doctors and got sorted- this was about my OH. I find myself struggling a bit sometimes with his illnesses and I've asked for some support or guidance as I worry far too much! That is now being sorted :D

Went to hospital and had my elbow looked at- the lump is due to when I fell a couple of years ago (he says it looks old) back in the main road. I saw the consultant and he said that if I had done it on my thigh there's lots of fatty tissue to protect it, but the area that I hit at such force, there isn't and as a result I have a fatty mass and it's nothing to worry about.
However- he is concerned about the nerves in my arm and believes that I have nerve damage from the fall which is why I get such pain both in my forearm and elbow. When he was rolling the ultrasound over my elbow I couldn't feel my thumb :/ but he said directly below my lump is my radial nerve. So he wants me to get checked out ASAP. I am a bit worried as if they decide to look into it, I suppose I could lose the feeling in my left hand, nerves are tricky! Anyway back to work.

Went to meet my friend at 7, to find people queuing out of the door and a 45 minute wait so we said we would come back and we went for a drink in Pitcher and Piano. My friend then came back with 2 medium glasses of wine (v nice) and we had a chat (we don't see each other often and I don't manage to get out!) and then we had another. Walked opposite to go back towards Yo Sushi and got given a free glass of Strawberry Pimms with a touch of prosecco by a newly opening bar- which was very nice. We got to Yo Sushi and they weren't quite closed but the staff were eating meals so we ended up in Wetherspoons, where I had the chicken and pepper skewers with salad. Yum yum :) (I researched on the way!) I have read that the chicken, peppers and salad are free (yay) and I did have the peri peri sauce which is 1 Syn per tbsp but there is only about a tbsp in the pot! I counted 2 Syns for the oil in the pan (as advised) but just to be sure I'm counting it at 5, with a vodka Diet Coke at 4.
Not often I get to go out and enjoy myself- I wore a new dress, thoroughly enjoyed myself and the meal was delicious. (To say it was spoons!) I am over my Syns but I'm not too fussed. It's a one off and I really had the most lovely time :D

I have worked out that I still have 13.25 Syns for the next two days per day if I want them, even with my slight overindulgence yesterday as I don't really do Syns prior to WI on a Monday!
Oh it felt good to let my hair down :)

Good morning everyone!

Took the salad to the bbq, came back with about a tbsp full. It went down very well indeed! I had about 1/4 of the bowl. 1 tbsp Potato Salad (my friend made it herself and it was lovely- Mayo free too!!) and some chicken pieces (two). I also had my diet bitter lemon, and a very small amount of prosecco to toast the birthday girl.

I also went to the bed race in Knaresborough and walked loads! Walked all the way through Wetherby too! So overall a really good day!

They are a pair of weasels, 7 and almost 9 and think it's their purpose in life to turn me grey, which they are managing very well! Shouldn't complain, I love them to bits really. Could only find baby spinach, is that what you use? Had my uncle and aunt staying this weekend which has been lovely, they have just left so grabbing 10 mins to update my diary. Hope you've had a fab weekend xx

Baby spinach should be fine :) we get ours in massive bags from a greengrocer but have used baby spinach in the past too!

Yes I have been busy, but a bit worried about the effects of Friday night.... Still well within Syns but it's not often I have a proper night out (as I would call it!) so we will see tomorrow!
Oh boo to the PMS :( I would just draw a line under it after weigh in tomorrow and just get on it for next week, unfortunately it's just one of those horrible things. It's rubbish really... I'm sure you'll be alright though. Good luck!!!

Dinner!!!
Minced Lamb with Mint and Tomatoes with Cauliflower, onion and tomatoes!

The mince and mint is inside the tomatoes. It was totally gorgeous!!!!
This is a Madhur Jaffrey recipe (well 2)

Minced Lamb with mint in Tomatoes
175g Onions
6 Garlic Cloves
5x 2.5cm fresh ginger, peeled and chopped
2 tbsp ground cumin
4 tsp ground coriander
1 tsp ground turmeric
1 tsp ground cayenne pepper
Frylight
4 cardamom pods
6 cloves
2lb/900g minced lamb
1.5 tsp salt
50g freshly chopped mint- grown in our garden!
1/4 tsp garam masala
1/2 lemon- squeezed
6 beef tomatoes/large tomatoes

Chop half of the onions finely and set aside. Chop the other half coarsely and put them, along with the garlic ginger and 3 tbsp water into a blender. Process into a smooth paste. Empty into a smooth paste. Add the cumin coriander, turmeric, cayenne and mix.
Spray a large pan with Frylight and set on a high heat. When it's hot, add the cardamom pods and cloves. Two seconds later add the finely chopped onion. Stir fry until they're fairly brown. Reduce the heat to medium and add the spice mixture. Stir fry for 3-4 minutes .
Add the minced meat to the pan, break up all the lumps and stir the mince until it loses all of its pinkness, then stir fry for a further minute after that. Add the salt and mix. Cover, reduce the heat to very low and let the mince cook for 25 minutes.
Remove the cover and spoon off most of the liquid. Add the mint, garam masala and lemon juice. Stir to mix and bring to a simmer. Cover and simmer on a low heat for 3 minutes.

Cauliflower with Onion and Tomato
1.5lb Cauliflower Florets
75g onions, coarsely chopped
5cm piece of ginger, peeled and chopped
Frylight
6 garlic cloves- finely chopped
1 tsp ground cumin
1 tsp ground coriander
150g tomatoes- peeled and finely chopped
1/2 tsp ground turmeric
1/2 tsp cayenne pepper
1 fresh green chilli
1 squeeze of lemon juice
1.5 tsp salt
1/4 tsp garam masala

Soak the cauliflower in a bowl of water for 30 minutes. Drain and set aside. Meanwhile put the onion and ginger into a blender along with 4 tbsp water and process to a paste.
Heat a pan with Frylight over a medium high heat, add the garlic and stir fry until the pieces turn medium brown. Add the cauliflower and stir fry for about 2 minutes or until the florets start going brown. Remove and put in a bowl.
Put the onion and ginger mixture into the same pan and stir fry for one minute. Add the cumin, coriander and tomatoes and stir fry until the mixture turns a medium brown colour.
Add the turmeric caynenne chilli lemon and salt to the pan. Stir and reduce heat to low. Add the cauliflower and any liquid in the bowl and stir gently to mix.
Add 3 tbsp of water, stir again and bring to a simmer. Cover and cook on a gentle heat, stirring now and then, for 5-10 minutes until the cauliflower is cooked.
Sprinkle garam masala over the dish and serve.

Hope you get to the bottom of your elbow issue, it sounds quite scary but they can do amazing things with nerves. My friend has had lots of operations due to arthritis- joints replaced etc and she has never had a problem with nerves- I know it's a bit different but goes to show they can do crazy things with the human body!
Had the best weekend :) will update my diary next x

9th weigh in, 18lbs gone, no gains. Gobsmacked.
