Triage is at GOAAALLLLL!!!!

They are much denser and slightly grainier like cornbread but the taste is definitely there and i'm chuffed with them.....

They would be great with thick stews and would also go great with a fry up etc instead of bread! Only 1.8 carbs each too...!

Have you tried roasted cauli? Blanch it to soften then oil or butter, salt and roast until browned.
 
Almond Flour Yorkshire Puds

2 Cups of almound flour
3/4 Teaspoon of Xantham Gum
1tsp Bicarbonate of soda
2 Eggs
6fl oz of semi skimmed milk
4fl oz of water

Mix all dry ingredients together and slowly pour in wet ingredients until a thick batter comes together.

Heat oil in a 12 cup silicon muffin tin and pour batter into each cup when smoking hot

Place tin into oven on Gas mark 6/7 and cook for around 30 minutes....

Adjust timing and temp as needed, they are still quite dense in the middle so next time I'm going to only use half the quantity of almond flour to make a thinner batter which will hopefully rise a bit more.....all in all though they taste nice and look nice!

So here was my 15 carb Sunday Roast including two yorkshires and Xantham lamb gravy!

I did, although I'm noting an increase in my portion sizes so mental note this week is to cut right back!!!

6.5 weeks until Oludeniz and the first bikini I've ever worn in my life!!!

Now if that's not enough to scare me into action I don't know what is!!

Morning all.....!

Working lates today so have until 2ish to lounge around the house, lates have to be my favourite shift as they are pretty busy until I finish at midnight!

This morning the scales say 10.2, which is a 4lb loss since last Monday after the alcohol fuelled weekend, the lowest I got to was 10.1 but that was after not eating a great deal on nights....!

Felt like I've eaten loads in the last few days, curries, roasts, wine etc but still managed to keep it Atkins friendly and still managed a 4lb loss!

Going to keep it clean n green all week as I'm away as from Friday at a spa hotel for two nights and a wedding! I'm really wanting to see the 9's for the first time ever on my scales this week but I just can't seem to get below 10.1-10.2!!

Crossing all fingers for those flipping nines. Why is it always the last couple of pounds of any stone that are the hardest??

Thanks Di.....I've just got to get my head in gear and be ultra good this week!!!

I'll even have to be good at the wedding as weigh in is the Monday after!! Thankfully they are my OH's friends and not mine so I don't know anyone!

Yes it definitely is the last few before you go down to the next stone bracket that are the worst!!

I got stuck like this in the 11's too as I was about to hit the 10's.....was there for weeks from memory!

Wow that meal looks absolutely brilliant, with the effort you are putting in you must be in with a good chance of getting into the 9's, my fingers are crossed for you xx

Right today I rediscovered my 'Miss Dahl's Voluptuous Delights' cookbook.....!

How on earth it's sat on my shelf for a year withought me clocking on that low carbing is exactly how Sophie Dahl got slimmer...! I'm actually annoyed with myself as all the recipes are fab!

So today I've made the salmon fish cakes...!

And they are absolutely fab!!! Only cost a fiver too for two generous sized portions! Crispy on the outside with soft salmon insides....decadent!

Those salmon fishcakes look just like the pro version. When's your cookery series starting, Jo??

I made some tuna fishcakes the other week - tuna, cheese, spring onion, bound with an egg - but found them too eggy. This version using mayo looks much better.
