I changed my mind about having sausage and mash so made Pepper Chicken instead. It was sooooo tasty I'll have to post you the easy recipe. There are a few too many ingredients for me to put it on my 'minimum ingredients' (no more than 10) thread so thought I'd put it on here.
Serves 4 and is roughly 3 Syns per serving.
4 cinnamon sticks 1 tsp. ground cardamom
4 cloves 2 red onions, thinly sliced
4 skinless chicken breasts
3 curry leaves 2 tsp. ground ginger
1 tbsp. Very Lazee Garlic/Ginger paste - 1 Syn
1 tsp. turmeric 1 tsp. hot chilli powder
1 tsp. ground cumin 2 tsp. ground coriander
3 green chillies, cut lengthways (I deseeded mine) and finely chopped
2 tomatoes, finely chopped
1 tsp. crushed peppercorns
2 tbsp. oil - 12 Syns
Heat the oil in a large pan over a medium heat.
Add the cinnamon sticks, ground cardamom and cloves and sauté for 30 seconds.
Add the onions, stirring occasionally until slightly coloured.
Add the pieces of chicken, ginger-garlic paste, turmeric, chilli powder, cumin, coriander and a tsp. of salt. Cook for 10 minutes.
Add half a mug of water, stir well, cover with a lid and simmer for 15 minutes.
Add the chillies, curry leaves and chopped tomatoes. Turn up the heat and cook for 5 minutes or until the chicken is cooked through.
Serve, sprinkled with the crushed peppercorns sprinkled over.
We had ours with some SW wedges and a huge salad. It's so tasty so don't be put off by the longish list of ingredients.
