I've had so much trouble sleeping over the last few nights. Why is it sore throats come to life through the night! Must of spent a good few hours coughing :( so painful!

Todays menu plan - Red - Tues Oct 16th

Breakfast: 1 slice toast 1.2 Hex B, 2 weetabix 1 Hex B, 1 muller, 1 tsp flora 1 syn

Lunch: Tuna salad, light mayo 1 syn, muller, cheds Hex A

Dinner: Turkey, Bacon and Pea Bake thing!!! Just something I threw together. Peas 1 syn, Philly 1 syn, bread crust 2.5 syns or Hex B

Snacks: Ham, Alpen 1/2 Hex B, Aero bubbleball 5 syns

Syns: 9.5

Thank you! I'm slowly starting to feel better :) Leaving the rest of the moving chores until the weekend, need to have a few nights in relaxing after the last few weeks I've had! x
 
Well last night I slept better than the previous. Although I was woken up by an alarm going off! Went on for quite a while but luckily managed to doze back off!

I've now started my photo diary! yay!!! I think this will help me keep track of how much I eat and also inspire me in my time of need! They are only coming up small though when I add them..... I know when you click them it opens a new link, but how do you add them so they are a decent view-able size??

Today I'll add a few images of what I eat for lunch, snacks and breakfast. I won't do this daily as it's often the same things day in day out! I'll also have to jot down the recipe I created for what I ate last night. There was not much thinking involved, just a random concoction! but it turned out quite tasty! So I'll write it down to remember the recipe!


Wednesday 17th Oct - Red Day:

Breakfast: 1 slice toast Hex B with 1 tsp choc spread (needed a sweet fix!) 1.5 syns, with 2 weetabix Hex B and a muller. ( I have 2 breakfasts, 1 when I wake and one at work at approx 9.30am! Keeps me going!)

Lunch: Ham & Egg salad with 1 syn light mayo. Bag of cheds Hex A, 1 muller.

Dinner: Rainbow Trout on lettuce, bacon & peas. Peas 1 syn

Snacks: 2 slices ham, apple, alpen light, 1 or so slices of homemade ginger cake! Practicing the recipe for when the possible future in laws come over on Sunday. Plus I love to bake!

Syns 3.5 plus the cake..... approx 14 syns a slice.... so I'll round it up to about 25 syns! Oh well, it was worth it :)

Kind of recipe for Turkey, Bacon & Pea Bake: (well this is what I threw in the pan!)


Serves 2

Approx 420g Diced Turkey
2 slices fat trimmed Bacon
1 small red onion chopped
2 tbsp frozen peas
1 tsp thyme
28g Light garlic & Herb Philly 2 syns (1 each) ?
2 tbsp FF greek yogurt
30g diced cheese Hex A or (not sure on syns yet!)
1 slice brown bread - crumbs Hex B or 5 syns (2.5 each)
Frylight
S & P



Not really a full on method yet, I may try and measure things out so I can perfect the recipe! But I basically did the following:


Turkey, bacon and onion into a pan and cook through
Added peas, yog and philly - mixed!
Added thyme, salt and pepper

Bung it all into a baking dish - leave out water residue from frozen peas

Sprinkle over the diced cheese, then top with the breadcrumbs (I put a little thyme in this also)

I cooked in the oven on 180 for about 15 mins whilst my veg cooked!

It actually turned out really nice! Will maybe measure and perfect next week :) Then write up the recipe again!

Food looks lovely. Yes it is best to put pictures and receipes in your diary as you can refer back to them when you are short of ideas. That is the reason I started mine and if I do not lose or gain, then I can go back and see what I have done.

As for pictures, they are fine the way they are but if you want them big, I believe you have to go through a photo site e.g flickr.

That's so true! It is a great way to see what you are consuming everyday!

I thought that might be the case. I did try to find an image hosting site here but they are all blocked! x
 
Rainbow Trout, Bacon & Lettuce kind of recipe & method:

Serves 2

2 Rainbow Trout Fillets
4 slices fat trimmed bacon
2 little gem lettuces
Fish stock to approx 100ml
4 shallots
1 tbsp FF greek yogurt
S & P
Peas - 50 g 1 syn per person - optional
Frylight



Fry the shallots and bacon in the pan until shallots are soft and bacon is cooked
Add the lettuce and fry for a minute or so
Add stock and greek yogurt and simmer for about 5-10 mins (add peas now if needed)
Meanwhile season trout and set grill to a medium heat.
Grill trout for approx 4 mins both sides.
Place lettuce and shallots on to plate and top with trout!

I'm really going to have to make any recipes I put on here user friendly. I might be able to understand them but anyone who fancies trying them out might have trouble! When I have my flat sorted out I'll jot everything down in my recipe keeper and type up on here!

The Gingerbread Cake I made last night was sooo good! It could prob do with a bit more ginger but I'll add that on Sunday and see how it turns out! It may pack in a few too many syns but it doesn't hurt to treat yourself every now and again. The smell in the flat was lovely! Yum.


Today is another red day - Thurs 18th October 2012


Breakfast:

1 slice toast with choc spread 1 syn, 2 weetabix with muller Hex B


Lunch:

Ham & Egg salad with light mayo 1 syn, 3 light babybels, 1 muller - slice of gingerbread cake!!! 14 syns


Dinner:

Chilli with BNS wedges - 1 syn for bisto grains, might freeze a muller for dessert! (maybe top with a bit of cake :confused: - only trouble with baking is the eating part!)

Could you post the gingerbread cake recipe please? I love the smell of ginger - always reminds me of bonfire night!
 
  • Of course I will! Here is the recipe I got offline below. It really did make the flat smell delicious!! I've done the syns to the best I can.... so it's about right!


  • 175g unsalted butter - 66 syns
  • 200g caster sugar - 39 syns
  • 3 tablespoons golden syrup - 6 syns
  • 250ml milk - 6.5 syns
  • 250g plain flour - 40 syns
  • 1 tablespoon ground ginger - 0
  • 1 teaspoon ground allspice - 0
  • 1 teaspoon bicarbonate of soda - 0

Total syns for recipe - 157.5

For 10 slices (generous!)- 16 syns
For 12 slices - 13 syns


I used S/S milked. I wonder if you could sub the sugar for sweetener??? Might try it one day!



Preparation method

Prep: 8 mins | Cook: 1 hour
1.
Preheat the oven to 180 C / Gas 4. Grease and flour an 20x10cm loaf tin.

2.
In a small saucepan, combine the butter, sugar, golden syrup and milk. Bring to the boil, then remove from heat and set aside. Sieve the flour, bicarbonate of soda, ginger and allspice into a large bowl. Stir in the boiled mixture until just blended. Pour the batter into the prepared tin.

3.
Turn down the oven to 160 C / Gas 2 1/2 and bake for 1 hour or until the top of the loaf springs back when lightly touched.

I know what you mean, every time I get home it's there staring me in the face! The best solution is to bake it when you have visitors, that way you can't eat as much as you want! I'll be baking it again on Sunday for the future possible in-laws, but this time I'll bring the remaining slices to work! x

Dinner: Egg, chips & Peas, frozen muller

Snacks: Apple, Alpen 1/2 Hex B, gingerbread loaf - small slice - 10 syns?


Total so far 17 syns

Oh dear what a naughty weekend I have just had!

Friday night - dominos :( few pieces of cadbury oreo choc.... yummy!

Saturday started off well and ended badly.....

BIG ooooops on the weekend. Oh well, after jumping on the scales this morning I seemed to have stayed the same. So that's not too bad I guess. It's going to have to be a strict week this week! I am at a wedding on Saturday so I'm going to have to try and save as many syns as possible for that. I don't think it helps that we don't have the internet right now, so I can't just pop into this site and jot down what I'm eating. I seem to get carried away! Going to write out my weekly meal plan today and shop exactly to the lisst, no goodies will be purchased!


Today's food: Red - Mon Oct 22nd

Breakfast: 1 x Toast 1/2 Hex B choc spread 1 syn, 2 x Weetabix Hex B with toffee muller light

Lunch: Tuna salad with 1 syn light mayo. Bag of cheds Hex A, muller light

Dinner: Pork and Leek Burgers - home made! with 2 slices of brown bread (no buns) 1/2 Hex B plus 3.5 syns

Snacks: roast chicken bites, orange rice krispie square 7.5 syns, muller greek yog 0.5 syn, white choc aero mousse 5.5 syns

Total syns - 19 syns! ooopsy
