Gi Diet: Day 20

Breakfast:

2 slices of wholemeal toast and marmite.

Many cups of green tea!:)

TOTM timely arrived yesterday. Will help me to think ahead and plan how to get over this period of weightgain. It is so tempting to think of going back to CD for a while but I know that would only be a temporary solution and I don't want to slip into that trap.

I need to perservere with Gi for longer and get really used to it. Exercise is going well and really enjoyable and so I have that success to focus on to keep me going.

Going to cook Chicken Fried Rice for the whole family this evening. It is a recipe from the Gi plan and I know the whole family will love it.

Ummm. Fudge. I love fudge. So did it last long enough to set?

Any chance of sharing this recipe? Sounds like something my lot would like :)

The fudge didn't set maybe it wasn't boiled long enough or something. It is just a lovely goo! Like a caramel sauce say the inside of a cadburys caramel. Might have to buy some ice cream to have it with.

Recipe Post

Chicken Fried Rice - For one person (approx 500 calories with small bowl of grapes as desert).

45g of brown rice, uncooked weight
1tsp of vegetable oil
1 medium chicken fillet (around 130g/5oz)
1/3 red pepper
1 spring onion
60g of peas
90g of sweetcorn
1 tsp of soy or tamari sauce

Prepare the rice following package instructions, omitting any suggested fat or salt. Once cooked drain and set aside. Heat half of the oil in a non stick frying pan. Add the strips of chicken and cook over a medium heat until golden and cooked through. Spoon into a bowl, cover and set aside.

Heat the rest of the oil and add sliced pepper and spring onion whites. Stir-fry for 6-8 minutes, until the vegetables are tender and add the spring onion greens, peas and sweetcorn, cook for a further 3 minutes. Return the rice to the pan and stir-fry for another 3 minutes. Add the soy sauce and chicken and continue to cook until heat through, stirring occasionally.

It's tricky getting it dead right. I always add some cream of tartar near the beginning. That usually helps. You also need to check for that 'soft ball' consistency when you drop a bit into some cold water. Then I leave it overnight to set in the fridge....if it lasts that long :D

Even then it doesn't always work. My mum used to say never made fudge on a wet or snowy day. Perhaps that was the problem.

Still...bet it tasted nice anyway :D

Lubberly. Thanks for that. Think we'll have that tonight :)

Hi Karion

Thanks for the tips for fudge making. We will have another go sometime, may leave it a while though if Artie will let me as my waistline is already suffering. I used a recipe in the Christmas addition of Woman's Own maybe will try a different one next time too.

I'm wondering if you had the Chicken Fried Rice? We had it and it went down well, I thought it could have done with a little more seasoning but was still nice.

The caramel goo was lovely with icecream for desert!

Gi Diet: Day 21

Weight 12 st 2lb:rolleyes:

Breakfast:

60g HL Branflakes with skimmed milk
2 slices of wholemeal toast and marmite

Weigh in for ediets today so need to admit it on here too. TOTM partly responsible but really need to get back on track with the diet plan without freaking out about the gain (which doesn't help).

All I can do is stick as closely to the plan as I possibly can and trust the weight to go back down. I am currently 1lb overweight!:( Will be back to 'normal' in a day or two.

Got my new meal plan for the week from ediets today. Looks like some lovely recipes, meals and snacks and so I'm looking forward to the week. Only difficulty will be after Thursday as going to inlaws, will have to think of best way to deal with that.

Children home today and weather is awful. They are quiet right now so better make the most of that and get stuff done.

Diz, i am sure this is the top weight for you, you'll be on your way down again tomorrow.

Guess its half term for you? Mine is next week!

Artie is helping me with the housework which I am determined to get up to scratch before Thursday when we are going to West Mids. Deciding whether to go to Cadburys World!:p Black Country Museum or Think Tank in Brum.

Need to tackle the bathroom next!

Bought one of those short bomber jackets that the teenagers wear! Got it from Primark in the sale! £2!! Hehe. Its red, a size 16, which is good for me bearing in mind my top half is bigger than my bottom half. I felt really good wearing it down to school today! Its nice to be taking an interest in fashion again!:D

Dont think i could cope with going to Cadbury World! Too much temptation in the way!

Hope you're having a nice day with the boys!

Hi Dizzy - hope you're having a good Monday, ½ term here too so got my lovely DD home with me, we've not done much today, but watched a nice DVD this afternoon.

Give us a wave went you come up to West Midlands, I'm only about ½ hour away from Brum :)

Your top sounds great Bex, Primark have some amazing bargains, if you're prepared to look and pick your way through all the stuff on the floor :p

Hi Bex

Mizzy's not sure on Cadburys World either, see what the weather is like and the other alternatives. I'd like to take the boys and with Easter coming up it would be a good time to go.:)

You did really well with your tenner in Primark. That £2 was worth just the feeling fab at school. ;)

Bathroom is shiny now and the hallway and coat and shoes cupboard are immaculate too.:D

How's the SSing today?

Thankfully my boys were so good today and so was I getting the house clean and shiny and getting myself really organised for the week ahead.:D

Dinner:

slices of chicken stir fried with chinese five spice.

Bit plateful of mixed salad leaves with cherry tomatoes.

Also ate today: 2 scooby snacks (made by Artie) 2 finger kitkat (that was naughty but did stop at one)
1 wholemeal pitta with left over lowfat hummus

Changed my ticker tonight. I think now I'm exercising 11 stone is probably a good goal weight. So upped it from 10 stone 7lb. I did achieve 11 stone before Xmas. I'd love to see 10 on the scales but don't want to feel I've not achieved my goal if I don't.

I have more than achieved what I set out to when I started CD. Now my goal is to keep my weight close to that in the future and continue to exercise feel fit healthy and happy and confident about my diet.

Still have over a stone to go since the recent weight gain but am confident that I can turn that around over the coming month. If not then a new plan will need to be devised.

By the way todays menu has not been ediets. I need to do shopping and they only give you your menu for the week on the monday morning after weigh in. That is a criticism I have of ediets. You need the new weeks meal plan a couple days ahead so you can do the shopping.

Lots to do must dash!
