Foodie thoughts and munchie mumbles, food diary of a self confessed chocoholic

How did u find the 3Mile Leslie? It's a Mums job to make us feel bad, my mum has it down to a fine art!!! Hope u sleep well Sweetie.x

I did a different one to the one I did the other day, loved it, she uses hand weights in this one and the middle section is much fast, it went really fast so I must have enjoyed it. Did it again tonight and I'm sweating buckets :stinkyfeet: I might do a different one tomorrow or get on the Xbox and do My Shape Evolved and do some of the cardio boxing and yoga for something different.

Ended up staying for dinner at Mum's as she had made a stew especially for me, I did say last night I would only be dropping in for an hour, but I then felt bad as she had made my dinner so when Mark came to pick me up we said we'd stay for a while. Ended up getting home at half 8 lol! Bless her, I can understand, she gets lonely as she can't get about much, I'm just knackered from work and the fibro all the time. Anyhoo, like I said, she had made a chicken stew and it was delicious, she kept saying she'd only put healthy stuff in it and gave me an enormous bowl. I worked it out to about 10 pp give or take as there were potatoes, chickpeas, butter beans, broad beans, sweetcorn, chicken, parsnip, carrot, swede and onion and she had used home made chicken stock and a few herbs. I pointed it at a tbsp each for the beans, corn and chickpeas, 1 chicken thigh, 100g potatoes and there was only a small amount of parsnip, the rest was free veggies.

Here to subscribe, you are doing so well love the sounds of all your recipies
Thanks hun, really trying my best this time :)

Its a great menu
It was yummy considering dinner was chucked together, we were originally having veggie curry but the butternut squash and sweet potato had gone furry and I couldn't be bothered to start rummaging lol!

Will post today's meals tomorrow, off for a shower, a quick read and then sleep, up at 5:30 am again in the morning.

Yey for for your exercise, sounds as though you're doing really well! I didn't realise you could do exercise with the Xbox?!? I thought it was just a games console! The Stew sounds really yummy, I love all those types of beans/pulses, they make it really tasty and nutritious without adding tonnes of pp. I like how you logically pointed it too, not just looked for alternatives online as they probably wouldn't be the same. X

You can get some great fitness stuff for the Xbox, especially if you have kinect as well. I like Your Shape Fitness Evolve 2012 as it has loads of variety, there are three sections. The warm up/ activities section which has gamey stuff like hula hoop and block smashing and stomping which is like that game where you had a mat and had to follow the colours that light up. There is also football training warm up. Then there is a section for cardio and fitness training, so there are things for abs, legs, bums, etc, they are really hard work. Then the final section is classes, so Latin, African, hip hop, and bollywood dance, cardio boxing, boot camp, which is a killer lol! Yoga and something called zen which is a mixture of yoga, tia chi and relaxation techniques. So there is something for every fitness level. You can also get zumba and biggest loser, I have zumba.

The stew was lovely and my Mum doesn't do packet stuff so I know it was all healthy and nutritious :) I love pulses and beans too, I'd quite happily be veggie if it wasn't for steak and bacon lol!

Didn't manage to do any exercise today as I fell asleep when I got in from work lol! Was having porridge and fruit for breakfast and was late getting up so ended up with OSS breakfast biscuits and a banana so had my berries with yoghurt for lunch when I got in from work. It was manic today, didn't even get a break so had to keep nibbling my biscuits through the morning.

You could always have the same but use more veggies or quorn. Mark had grilled tomatoes with his instead of peppers as he doesn't like them.

I cooked the kebabs on the George and sprinkled them with lemon juice, garlic granules and a black pepper. Normally I would marinate them but fell asleep lol! The salad is shredded chinese flat cabbage, grated carrot and red onion with lemon juice, that is better making it the day before and letting the lemon juice really get into the carrot and cabbage. The rice was Uncle Bens whole grain simply steamed. I chopped some mushrooms and red onion and cooked them in the actifry with a couple of sprays of frylight and then when they were nearly done I added the packet of rice to heat through. I would normally just cook my own rice but I couldn't be bothered tonight, plus brown rice takes forever to cook! You could easily get this under 10 pp without the chicken.

It was delicious but I'm stuffed now, if I'd ordered this from our local kebab shop the chicken would be covered in oil and I would have had chips. The chips cover the bottom of a large tray, then they put the cooked chicken and peppers on top and then pile tonnes of salad on top and a huge white pitta bread. I would have ahd half atub of garlic mayo too which I know they add cream to as well as mayo! Definitely save some points lol!

I might have to try this as I have a George :) I did do Veggie Kebabs another time but we just those with Burgers, it never occurred to me to do them in Kebab Shop Style lol. That's why I love Minimins, gives me some new ideas! X

That kebab looks gorgeous. I love doing a fakeaway. Somehow it seems 'extra specially' good because it's just like a takeaway but you know you have saved loads of points!

I think I just need to buy some of the Polystyrene Trays for the real Fakeaway Effect! X

Hehe, and maybe a white plastic fork?

Oh Yey! And one of those paper napkins which are so hard they hurt your face when you wipe it! X

That's why I love it too :D When I was doing SW I spent hours trawling through all the recipes.

I know what you mean, it makes you feel saintly too because you resisted the piles of takeaway menus lol!

Would u be able to post the recipe? How many pp does it work out? I like my food hot hot hot! X

It was going to be chickpea and lentil dhal but when I looked in the cupboards I had used all my chickpeas so feel free to adjust to your taste.

Spicy lentil and mixed bean dhal
serves 4
7pp per portion (double check as different brands of tinned beans and lentils have different pp)

60g dried red lentils
1 can green lentils (I used Asda's)
1 can mixed beans in tomato sauce (I used Morrison's)
half a red onion
1 heap teaspoon each of ground cumin, ground coriander, turmeric, garam masala, 1/2 tspn hot chilli powder
1 block Taj crushed frozen garlic (Asda sell these, but just substitute with any other garlic you have lying around)
1/2 block Taj minced frozen ginger (Asda sell these, use about an inch of fresh ginger root or a couple of teaspoons minced ginger)
2 tbsn tomato puree
1 reduced salt stock cube (I used chicken but vegetable one would be fine, I just didn't have any)
About 500ml water
Couple of squirts lemon juice

I softened the onions in a bit of water in the microwave and then chucked all the ingredients into my slow cooker on high for about 3 hours, if you cook it on the stove it should take less time, just make sure the red lentils are cooked. The longer you cook it, the thicker it will get as the red lentils break down. You can substitute the beans for chickpeas and add a tin of tomatoes or passata. I just make it up as I go along, sometimes I use fresh green chillies.

I like it with hard boiled eggs, slice in half and place on surface of dhal about 10 mins before end of cooking and some of the flavour will soak into the eggs. I learnt that one at SW lol! Egg curry was a staple when I was doing SW years ago :)

If you can get the Taj ginger and garlic it's fab, lasts ages and is really cheap. Something like 97p for a bag and it lasts months and I think they now do garlic and ginger together too. Saves getting smelly hands :D
