I'm very excited! I have just made a marinade for Nigella's 'Homestyle Jerk Chicken'! It was on her programme Nigella's Kitchen last night and I just had to try it as it looks right up my street and quite SW compatible too! And I do have her book! You use any chicken portions- I've used legs and breasts! You bung a load of ingredients in a food processor and just whizz together! Then pour all over the chicken and marinate in the fridge overnight! The ingredients for the marinade are:- 2 tbspns muscavado sugar (6 syns), 60ml dark rum (6 syns), 125ml cider vinegar, 60ml lime juice, 60ml soy sauce, 4cm cube root ginger, 2 whole peeled cloves garlic, 2 whole red chillies (seeds incl), an onion peeled and quartered, 2 tspns each of ground ginger, cinnamon, nutmeg, allspice, thyme, cayenne pepper! Wow the flavours are incredible! You bake it in the oven and hey presto! You serve it with rice and peas which is basically long grain rice made with a tin of coconut milk (I'll be using light, for 20 syns, but it will make a lot of rice), chicken stock, chopped onion, 2 chopped red chillies (this time no seeds), a tin of black-eyed peas. If both the chicken and the rice are divided into 6 portions each portion will be 5.5 syns, which isn't bad for a delicious Jamaican inspired meal! I'll serve it with free veggies!X

yummo - i have had loads of chicken over the past 2 days - i am going to branch out to a steak tonight i think!!!

Week 59- Day 7 (Mon)- Extra Easy- Working night shift 7.30pm-8am.

In work early am (2am ish).....wait for it.....colleague had brought in homemade chocolate cake- thought I was being fairly angelic by having a tiny piece, but then as time went on and the cake got eaten, I noticed that there was loads of chocolate buttercream all around the edge of the tin and blobs of it everywhere and I proceeded to run my finger through it which accidentally ended up in my mouth- lots of times!!! Ooh dear, not a good start to the day! I blame my blood sugars dropping at such an unearthly hour!! Should have been in bed anyway! Night shifts pffhh!! (?20 syns- I have no idea, this is a pure guestimate!!) Must be angelic and try and have 2 very very low syn days- not weighing until Wed this week.

At home before bed- 9am- Tomato & herb Mugshot.

On waking up- 1/2 pack Batchelors chicken savoury rice and a little stirfried veg. 28g porridge (HEXb) and Total 0% yogurt topped with 2 kiwi fruits and a grated apple with cinnamon and sweetener.

In work- A jerk chicken leg (see previous post for recipe) with 1/2 pack Batchelors savoury rice and stirfried veg (2 syns). An orange and a pear.

Milk in coffees (part HEXa).

aww poppet - dont be upset about the icing-gate.......it happens. and it could have been so much worse....because you could have thrown the whole day away, but you have recovered - back on plan straight away. Be proud of this achievement, even though you had a glitch, you are already back on plan!!

Week 60- Day 1 - Extra Easy- Day off (sleep day).

Early morning in work:-

This night shift was the turn of the Doritos and dips!!!! I am so ridiculously annoyed with myself for picking on these! There was just no stopping me- once I had started it opened the floodgates and one thing led to another!! I am ashamed of myself particularly after chocolate icing-gate during last night's shift! I hate to think how many syns I have consumed!! But I will be an angel today and tomorrow before WI tomorrow evening! How annoying! I'd been so good all week!!

At home before bed- A tomato & herb Mugshot. 2 clementines.

On waking up after post night shift sleep- 3.30pm- homemade coconut rice (from jerk chicken the other day- 3 syns). Some fresh pineapple and a pear.

After choir practice- small bowl of beef stew (beef, onion, leek, carrot, potatoes, mushrooms, red pepper, red chilli, red wine, beef stock, herbs-1 syn for red wine).

2 choc/orange Alpen Lights (HEXb).

To be continued.....cannot count total syns today due to Dorito & Dip-gate!
