planning a green week this week, mostly to incorporate the cheese we brought back from holiday before it goes too far out of date, and its good to mix things up. Have lunch out on Wednesday, but have planned it so I can EE if I need to switch for ease at a social event.

Spaghetti alla Ceci – Rachel Ray express
Much tastier than the ingredients suggest!!

spaghetti
1 Tbsp extra-virgin olive oil (3 for me)
½ teaspoon red pepper flakes
2 garlic cloves, finely chopped
tin chickpeas, drained
½ teaspoon dried thyme
Black pepper
50 – 60ml dry white wine or chicken stock
tin chopped tomatoes
A handful of fresh flat-leaf parsley, chopped
Grated parmesan (HEA)

boil for water the pasta. Salt it and cook the spaghetti to al dente. While the spaghetti cooks, heat a large skillet over medium heat. Add the EVOO, red pepperflakes, and garlic. Place the chickpeas in a food processor and pulse to a fine chop. Add the chickpeas to the skillet with the garlic and season them with the thyme, salt, and pepper. Sauté them for 3 to 4 minutes. Add the wine or stock and cook down for 30 seconds or so, then stir in the tomatoes and adjust the seasoning. Drain the pasta and toss with the sauce. Top the pasta with the parsley and grated cheese.

Eating some of the sibi (raisins) now. You need to push the skin off with your tongue and spit it out as its quite thick and bitter, and then eat the fruit from round the pit. Our guard swallows the pits, I think I'll spit them out. They are more like cherries than grapes, but with less flesh, and no juice, and no distinct flavour - just generalised sweetness.
Eating them is rather an occupation than a pleasure, but at 7p a bunch right now, thats fine!

The weda which look an awful lot like fruit brains are sour in a good way like lemons, but like lemons a bit too sour for us to enjoy without added sweetening. Apparently they are very popular with children who like to suck the seeds.
