Kellmo's Atkins attempt

Yeh the loaf didn't turn out how I'd hoped so ill look for another recipe. I'm going to have omelette for brekkie tomorrow cos I do actually love it but I do need a change. Might try a mim in the week!

I've made a salad for tomorrow - going to buy some mayo and keep it in the fridge for my dinners, there'll be an UPROAR at full fat mayo!

I craved something sweet again today so made Teeny's ganache. Delicious but had a bit more cream than I should have!

I should have been more prepared and made up a salad. OMG! Full fat mayo, how will you ever lose weight!!!!! :)

Funny Busy made some tonight with a little too much cream!
 
I just buy it! I love it!! I don't think I've ever had full fat mayo, apart from those sachets you get in pubs! How luxurious and extravagant!
 
Check out Susie's dairy, she made a loaf with flex flax (not long ago) and it rose and looked like proper bread.

As for breakfast, check out her bacon n egg muffins recipe, lovely on their own but I added 100g grated courgette and only used 30ml water, turned out lovely!

Thanks Susie but the first one is the one I tried, maybe I did it wrong! It tasted a bit... Fishy?!

I did eat it though. I took the last two slices to work today and had them at playtime which was a lifesaver!
 
Just made my first mim (savoury) and had it toasted with butter and cheese - it was really good, satisfying!

Back at work today :-(

Breakfast - 3 egg omelette with spinach and cheese

Snack - flax bread

Lunch - tuna mayo salad (large - very full!)

Tea - chicken breast wrapped in Parma ham with Boursin garlic and herbs

Snack - savoury mim and cheese.

Thanks. I'm having a mid-week weigh in (unofficial) tomorrow so I'll be able to see if its working. I have upped my carbs a little bit and I still cannot believe how well I feel. No cravings for bread, pasta, rice, chips etc. I could eat fruit but I adore it and could eat tonnes of it!

Mayo is divine! Got some looks of horror in the staff room!!

I don't know how but I've gained 2lbs? I'm only 10lbs away from goal and upped my carbs slightly but did not expect this?!
 
This is my current downfall atm! We fluctuate with weight from day to day and sneaky weigh ins always leave me feeling deflated and miserable. Teeny started a thread on here for a Saturday weigh in to try and help us serial weighers curb our habit. I have hidden mine as their siren call was too tempting.

Thanks but I've already joined that, today was a sneaky weigh on to make sure I'm on track! Evidently not! Being scrupulous again until Saturday with counting every carb, STILL not got my bloody scales back though.

May have been the vodka on sat??

Can I ask what you all class as a standard 'cup'? I find I eat lots of veg.

It was ok, we've been glamping this weeks so I've had the weekend off! No atkins friendly food in sight whilst cooking outdoors - I had bacon but between chunks of bread!

Back on plan tomorrow and I'll catch up with all diaries later too! Hope you're ok and thanks for checking in on me! Xx
