Week 2 weigh in and i'm 1lb down.... i think 2013 is going to be the year of the 1lb a week weightloss. Which is OK, i'll be near goal by the end of the year if i keep it up ;).

Snowed in and haven't got all that much Atkins food in, hope i can get out the house tomorrow or i might be stuck eating tins of tuna and corned beef. :).

VAT return due at the end of January, bleurghh i hate doing my bookkeeping.

Yes, got books sorted and now passed back to my accountant to do his bit. Relieved, absolutely hate doing my accounts.

Can't get out the house still today and got NO fresh food in my fridge at all, and i don't have a freezer, so i really am down to just tins of food now. My car is really not suited to the snow so it's not even worth risking it. Going to wrap up and go for a walk to the shop instead, with my 4 year old - this is gonna be fun (not), i got rid of my boots a couple of months ago, wish i hadn't now...
 
Oh no good luck with the walk and be carefull!! Damn boots lol that always happens throwing things away and needing them not long after!!

I wanted go the gym today and asda but dont think OH will take me in the snow, its not too bad but i dont blame him i suppose!

Ill hav to go asda either way tomorrow though!!

So i will be braving the walk to the shop too lol

Yes i need to get a freezer. I moved house last August and couldn't bring my old freezer as there was no space as the kitchen is tiiiinny. We survived the trip to the shops anyway, my little girl really enjoyed the walk and playing in the snow, although she got a bit fed up on the way home "mommy my feet are hurting!" The nearest shop to me is a tesco express, and they didn't really have much food in, i think everyone from around here was walking there instead of going to the bigger supermarkets cos they are too far. Got some pork chops anyway and some chicken.
 
Glad you survived! The (big) supermarket was half empty of food when I went on mon because of panic buying. It hadn't even snowed by then!
 
Just ate some "breaded" fried chicken using flaxseed instead of bread, it was really yummy! Easy to cook too..

- chicken pieces (i like slithers of chicken breast!)
- ground flaxseed meal
- other spices (paprika, chilli, anything else you like)
- salt
- egg

Dip each piece of chicken in the egg first, then in a combination of the flaxseed, salt & spices, then fry in the fat of your choice. Serve with bucketloads of mayo ;). 30g of flaxseed will do quite a lot of chicken pieces and is zero carb depending on where you look, but at worst it's only a couple grams..
 
Sounds great!

Mixing dried Parmesan into the flaxmeal is yummy too - you can use dried parm as a breaking on its own but I find that too strong.
