NannyDoreen & Upndown's daily diaries

I have a bns and red pepper recipe on my laptop, firm favourite here. I'll post it this evening from laptop.
I just throw more or less any veg I have from swede, carrots, celery, parsnip (sparingly as quite strong flavour), turnip, bns, sweet potato, onions, leeks, peppers...cut into small chunks, into my big stick pot, along with chicken or veg stock and some herbs. When it's softened, I take out some of veg and liquid, put in a jug and totally blitz with a hand blender then add it back to the rest, so it's thickened but still some chunky bits. That's how we like it but you could totally blend of you preferred.
Mmm, love soups

This is the recipe I use too Doreen, the one I promised earlier. I've used it lots of times and love it. If you fancy it, you could stir in a spoonful of quark to make it more creamy.

Now you have a choice of two recipes :)

SW Butternut squash and red pepper soup
Ingredients
1 butternut squash

2 red peppers

1 onion

Low calorie oil spray (less than one calorie per spray)
1.1 litres of vegetable stock
Salt and freshly ground black pepper
4 tbsp fat-free natural fromage frais (optional)
Freshly chopped chives to garnish )(optional

Prepare the soup ingredients: peel, deseed and cut the butternut squash into cubes; halve and deseed the peppers, grill until tender, remove the skin and roughly chop the onion.

Heat a large pan sprayed with low calorie oil spray, add the butternut squash, grilled peppers and onion and fry until they begin to soften. Add the stock, bring to the boil, reduce to a simmer, cover and cook until the vegetables are soft and pulpy.

Transfer to a food processor, season well and blend until smooth or use a hand held blender. Serve swirled with a spoonful of fromage frais and garnished with freshly chopped chives if using.

Morning ladies :)
Chilly out there today but the thick frost is melting now the sun is shining.
Wonder how Mo is getting on with the work on new house?

Hope you all have a fab day. I'm going to try really, really hard to be 100% on plan this week but it feels like it's going to be a struggle. :-/

Morning cloudy I agree with upndown just take one meal at a time don't put too much pressure on yourself

Going ok so far but I keep feeling very tempted to go and find something naughty to eat and I know if I do, it will lead to a big binge. :(
I made some lovely pea soup for lunch, followed by a big bowl of chopped up fruit but every time I eat fruit and veg lately, it really blows out my stomach and I feel stuffed.
Have got a pile of ironing to tackle and will watch something on tv while I do it, hopefully that will keep me busy. Update later

Thanks Jen.... my meals are fine, all planned and on plan but in between there is a really strong urge to raid the kitchen for biscuits, crisps or just *anything* really, even things I wouldn't normally eat. Not sure why, I'm normally fine even if there is chocolate or snacks in the house.

Well done Doreen... that pork meal sounds lovely, apart from the apples hehe. I can't bear sweet things with savoury but I did look at that recipe on Kathy's page and think I could just do extra onions, or maybe mushrooms with it instead. I'll have to order some Dijon mustard.
Anyway, that's very low syns, are you planning anything else apart from your peach? x

I had another peach and a mullerlight.

I love sweet with savoury. I think extra onions/mushrooms would be good. I think it was the mustard that really made it. Fromage frais was good too.

Just added the fromage frais to the recipe on page 39 now, Doreen, in your honour, of course!! :D Thanks for sharing.

Off to bed now, ready for work tomorrow. :(

Kathy xx

Have u ever tried SW crisps? they're a bit of a faff but very tasty, hit the spot and free! You slice potaotes very thinly (so they're transparent - a mandolin wd be ideal but if I had one I'd be fingerless lol!) Some people use potato peelers if they're suitable.

Then lightly spray a dinner plate or ur (clean) microwave turntable with frylight - then lay the sliced potatoes on the plate or t/table - don't overlap them - lightly spray again and put them in the microwave for 3 mins initially - check if they're cooked and just turning colour (crisp like!)

if they need further cooking turn the sliced potatoes over (to prevent them from sticking to the plate) then cook further for one minute at a time - checking in between until they're dry and look like crisps. Remove from plate, let them cool and season to taste Mmmmm.....

There must be other things u cd buy or make to sort the munchies but know you need to keep things under control - you've done well today - hope u can 2moro xx
