Are pickled onions easy to do? I've never tried making them myself - do they come out synfree? xxxx
Hey Lo, I have made masses of the chutney, going to put some in the Christmas Hampers at Class and giving a few to family and friends, Kelly has already nabbed 2 jars of the hot one (I did 1 batch of hot chutney and another of my normal spicy chutney) and I am keeping a massive jar for myself and my lot xxx

Not sure how many I have left after all that can't wait to make more in the summer again, it's really popular even with my grandkids and they don't normally like anything like that.
Pickling onions is easy, ..all it is is onions or shallots peeled put and then boil up vinegar (I use Malt vinegar) with pickling spice you can either make your own or again buy them from the shop already made up...depends on my mood, sometimes I'll make my own other times I buy them already made and then add sugar, now I have made a couple of jars with sweetener instead of sugar to see how they come out, but anyway you put vinegar, spices and sugar/sweetener in a pan and heat (do not boil it) to dissolve sugar/sweetener.
Put the onions/shallots in the jars and pour the liquid over making sure that the jar is full no air pockets, then seal the jar and leave to ferment for at least a month preferably 2 before eating, that way they will stay crisp too.
One tip if you are going to make them, it's always best to actually use pickling onions and not ordinary onions as they tend to go a b it mushy.
So I would use :
1 kg pickling onions
4 tsp pickling spice or if making your own 1/2 tsp mustard seeds, 1/2 tsp black peppercorns, 1/2 tsp dried chilli flakes and 1/2 tsp coriander seeds.
27g salt
1 litre Malt vinegar
170g Sugar/sweetner
If you use the sweetener it's 0 syns but with the sugar about 35 syns for the batch and from the batch I made that would be about 1-1.5 syn each or there abouts.
Will let you know how they taste with the sweetner, shouldn't think there'd be a lot of difference but we'll see xxx
