Sick of carrying 2 hitch hikers about, so this is my diary

Good evening I hope you enjoyed the market today and bought lots of lovely things.
I went to one and bought lots of naughty things:eek:

I am trying to convince hubby ours should go up tomorrow but he is having none of it. reckons we should wait till after Matts birthday on the 8th :eek:

I will be doing it myself on thurs when he goes to work if i don't get my own way before that :D

I had a lovely day at the market, shops etc with the kids and Mal, we left home at 8.30am and didn't get back till gone 4pm...not too sure I got bargains but got some nice stuff and spent a small fortune ...but it was worth it :giggle:

I had fabulous time, got a bit shirty with Mal ....every time I picked something up there he was..."do you need that, do we want that, how much?" so I said " Is it your money or mine?"..he said it was mine so I said "well p*ss off and let me spend it my way then " :giggle:
Got some lovely new Christmas decs, the kids got a hat scarf and gloves all rolled into one, don't know if you've seen them, they are animal prints with ears (except Kelsi's one which is actually reindeer lol)
Then after the market (which by the way is on a large deserted airfield and was bloody freezing brrrrrr), we went to loads of lovely Christmas shops ...was fab but I ate out, so haven't stuck to plan today at all..oh well back on 100% tomorrow, although I wasn't too naughty either, they had sausage, chips and all the trimmings and I had a bacon roll, then later we had lots of lovely cold meats and pickles with new potatoes and salad for tea, was lovely,but we also bough olives cos the kids love them and I am afraid I had way too many of the ones with feta cheese :eek: xxx

We didn't get to put the decs up today, everyone was shattered, so we are doing it tomorrow instead....can't wait to put all my lovely new stuff up and take some pics :woohoo: xxx

Kally, I went into Morrisons this afternoon to pick up a few bits and Mal decided to have a word with them about the Skate being off the other day and they asked if I still had the receipt, which i did and it was in my purse, so they offered me a full refund or replacement and a discount on my other shopping, I took the replacement, 2kg's of Smoked Haddock, just couldn't bring myself to buy the skate again so soon after the bad experience with it.
The Manager couldn't apologise enough and said even though they are hot on things like that, the odd ones do go through, I was well chuffed and on top of that he gave us a 20% discount on our shopping which was great, only went in for a few things but to be honest cos he gave us the discount I decided to take full advantage of it and ended up spending over £100 :giggle: xxxxxx

Morning Lovely, I have to say smoked haddock is by far my favourite fish, no, no kedgeree, not cos I don't like it cos I love it and so does Mark n Kirsty, but we had a discussion about it last night as Mal hates kedgeree (doesn't like rice in anything) and the grandbabies weren't keen either, so have decided while the boys put up the decs with the 3 little anklebiters, me and Kirsty will cook, and we have settled on luxury fish pie for me mal and mark and the other 4 want Russian fish pie, would love that myself but this time going to have to pass cos of the syns ...but I am happy with my choice anyway ...hope you have a lovely Sunday hun :hug99: xxxxxxxx

Russian fish pie ?

You've never had russian fish pie?...it was one of the 1st meals I learnt to cook when I was at school, mind you I did go to a reasonably posh grammar school, but hated it so got myself expelled and ended up going to a school I actually loved and ended up head girl at lol

Russian fish pie:

Smoked Haddock
Cod
Eggs (boiled)
Milk
Butter
Onions
Flour
Lemon Juice
S&P
Pastry
Beaten Egg

Poach the smoked haddock in the milk until just cooked. Drain, reserving the milk. Skin and flake the fish.
Heat the butter in a large saucepan, add the onions and gently fry until soft. Add the flour and cook for 1 minute.
Remove from the heat and stir in the flaked fish, lemon juice and seasoning. Allow to cool.
Meanwhile, roll out the pastry on a floured surface into a 45cm (18") square.
Pour the fish mixture in the centre of the pastry. Spread into a 30cm (12") square. Quarter the eggs and arrange on the top in rows. Dampen the pastry edges and bring each corner to meet in the centre. Seal and pinch the edges. Glaze with a beaten egg.
Bake at Gas Mark 7/220C/435F for about 30 minutes, until the pastry is well risen and golden brown.

It is so yummy, but way to high in syns for me to enjoy without feeling guilty after going badly over on syns yesterday xxx

Hi hun, I was so shocked about the 20% discount, I thought s0d it I'm gonna get all the stuff I was going to leave till next week ...was over £20 in discount, plus out original bill for the fish was £14.84 and the second batch came to £17.90 and they waived the difference...
The trimming is almost done, have still got to do the tree, went to put the lights on and they aren't working and cos they are so old...like most of my decs I decided we'll get new ones tomorrow, but I really ache now lol...all that walking yesterday ouch ouch....oh and did I say OUCH :giggle: xxx

Hey Lo, I have made masses of the chutney, going to put some in the Christmas Hampers at Class and giving a few to family and friends, Kelly has already nabbed 2 jars of the hot one (I did 1 batch of hot chutney and another of my normal spicy chutney) and I am keeping a massive jar for myself and my lot xxx

Spicy Apple and Tomato Chutney Yum Yum xxxx

Not sure how many I have left after all that can't wait to make more in the summer again, it's really popular even with my grandkids and they don't normally like anything like that.

Pickling onions is easy, ..all it is is onions or shallots peeled put and then boil up vinegar (I use Malt vinegar) with pickling spice you can either make your own or again buy them from the shop already made up...depends on my mood, sometimes I'll make my own other times I buy them already made and then add sugar, now I have made a couple of jars with sweetener instead of sugar to see how they come out, but anyway you put vinegar, spices and sugar/sweetener in a pan and heat (do not boil it) to dissolve sugar/sweetener.
Put the onions/shallots in the jars and pour the liquid over making sure that the jar is full no air pockets, then seal the jar and leave to ferment for at least a month preferably 2 before eating, that way they will stay crisp too.
One tip if you are going to make them, it's always best to actually use pickling onions and not ordinary onions as they tend to go a b it mushy.
So I would use :
1 kg pickling onions
4 tsp pickling spice or if making your own 1/2 tsp mustard seeds, 1/2 tsp black peppercorns, 1/2 tsp dried chilli flakes and 1/2 tsp coriander seeds.
27g salt
1 litre Malt vinegar
170g Sugar/sweetner

If you use the sweetener it's 0 syns but with the sugar about 35 syns for the batch and from the batch I made that would be about 1-1.5 syn each or there abouts.
Will let you know how they taste with the sweetner, shouldn't think there'd be a lot of difference but we'll see xxx

Morning everyone, well I am aching like a b*tch this morning, the backs of my calfs were cramping all Saturday night and again last night and today they have seized up, well that's how they feel...omg walking isn't too much fun when you overdo it is it lol
Got 2 more (at least) shopping trips planned for this week, Tomorrow with my eldest Kelly and either Thursday or Friday with Kirsty my youngest, then out at the weekend for our wedding anniversary too...it's all go isn't it.

Had a terrible weekend food wise, my scales are showing a 2lb loss hmmmm bet they don't say that tomorrow night :giggle:

Really need to get my head back into eating properly and stop with the Christmas snacking 4 weeks before the big day ooops :8855:

I made some xmas presents yay- need to get some felt to finish them off :) then need to decide who gets them, lol.

My bum hurts :( it's the muscle on the right side, i think i've pulled it- only from walking though- i did a lot more the other day. but damn- a pulled muscle in my bum- owwie!! lmao
