Silvermanes food diary - Extra easy plan

Right, so far so good had a good day yesterday, felt a bit on the hard side before tea because I was hungry, like proper growling stomache hungry, but I knew I had, had an excellent lunch and had fruit for snacks and so I kept my mind of it by clearing out my food cupboard and organising it and seeing wich herbs etc I was short of, or out of to add to my cupboard. Which actually wasnt many because I do keep quite a well stocked herbs cupboard, I had just run out of white and red vinegar, lemon juice and vegetable stock. I also need a new live basil and thyme plant as mine died due to some weird bug thing attacking them.

Anyway, I had my infamous Thai Green Curry which I LOVE, I tweak it for SW, in that I use frylite. You need to count the syns for the phili and the paste but it works out to be about 2 1/2 syns per person. When you consider how much coconut milk is, then this is certainly worth it. Its seriously nommy and creamy. The kids love this recipe. Its very versatile, you can use quorn pieces instead of chicken or you could use lean pork, which works just as well as chicken.

So today is my new day to be a success! So far so good!

Love BritMums recipes, I made her fritatta the other day and it was scrumptious!

The philly thai curry is my fav but my husband cooks it the best, it makes my eyes water!

Food is my demon also, but these boards esp the diaries keep me focussed

For tea tonight were having stuffed Chicken Breast.

I have used Philadelphia light Garlic and Herb (which I syn), and then wrapped the breasts in extra lean cut smokey bacon. Its very easy to do.

You need a good sharp pairing knife. because your going to use the tip of it to make the pocket in the breast. You make a long incision, very gently because you dont want to go deep.

Then once you have done that gently score along inside the breast on both sides. Again taking care that you dont reach the outer depths of the chicken, and then you have your pocket.

I usually use a heaped tsp of philli and stuff it, then close the chicken, the philli acts like glue, and then wrap in the bacon. I have done a collage for you, so you can see what I mean!

180C for 25 mins!

The chicken breast is very very tender. You get a lovely sauce, in the pan with it, that you can make a gravy with. It has no fat in it. So I make it up as a gravy with water, for the family, and then syn a small drizzle for me, the sauce makes the gravy taste devine!

Served with roasted sweet potatoes, and roasted leeks, with mixed vegetables.

Very yummy! :D

Looks lovely Silvermane. I used to do that pre SW with boursin, but I'll have to adapt it for SW now. I am definately going to do the Thai curry I LOVE Thai curry.

We love both meals. Sometimes we have a philli week, like this week, because I like to use it up.

This week we did SW tweaked versions of Spaghetti Carbonara, Thai Green Curry and the one above. All taken from the philli site.

I dont usually use more than 2-4 syns and it tastes so rich and creamy. You can use it to make a chicken fricassee and lots of other things, that you would normally need cream for.

The weird thing is, I dont like it in sandwiches or toast, I have only ever used it to cook with. It doesn't taste the same in cooking.
 
Well today is a new day. I did well yesterday, so I am very happy with that. I really enjoyed my dinner.

I made my daughters chocolate fudge cake for her birthday and I resisted licking the spoon! She is 12 today, and I have a houseful of kiddywinkys tonight, eating pizza and crap. I wont be having a slice of cake. The frosting alone is massively high in syns. Its is a nice cake tho! lol Although its 20 syns a slice!! (some kind person worked it out for me)

I am making fairy cakes this afternoon for snacks, again I am not going to have one. I am going to be an angel of virtue.

Trying Britmums quiche recipe tonight with a big salad, really looking forward to it. I had to buy a quiche dish as I didn't have one, I was amazed to buy one for only £3 from Asda, their stuff is very cheap I am very impressed.

Off to spend time with the horsey rabble this morning, the mud is terrible down there at the moment, would be good for mud wrestling lol Thank god for waterproofs, and insulated wellies!

I had made a delicious chocolate fudge cake for my daughter, which was 20 syns a slice. I did think about having a slice, but I decided that this would be a slippery slope for me.

I have no self discipline, I have to early in the diet go cold cake/biscuits/chocolate, because it takes me a while to develope my will power, of which, on my current Star week I have none! :p

There's some cake left today and I have plans to take it around family, as thye have all requested a piece, so the quickers its out of my house the better lol

Yesterday I did Britmums recipe for Slimming World Quiche. I have never made a quiche before, never mind an SW one lol. Anyway I did a different filling to BM's but followed the rest of the recipe.

For those that think the recipe sounds a bit too strange to do, think again! Seriously guys this is really really scrummy!!!!

I made this for my family today.

Tomato soup.

Made with frylite onion, garlic, diced carrots, potato, tin good quality Italian tomato's (I use napolina) mixed herbs, salt and pepper, onion powder, good dash Worcestershire sauce, 4 tbsps tomato purée (synned), 300ml veg stock, cook for 4 hours slowly (keep adding water when absorbed) , then cooled to blend, and reheated. Served with wholemeal bread (HEB).

I didnt have it with bread, I kept about 1/2 ladel to one side, and stirred it into Pasta NOMMY!!!
 
Love the pics. The quiche is on my 'to make list' - your daughters cake looks wonderful and congrats on not licking the spoon!! I've left any sweet things for the end of the day so I'm not tempted to overdose and it's working for me ... so far. It's only the first week, time will tell.

Did your daughter have fun on her birthday?

There's some cake left today and I have plans to take it around family, as thye have all requested a piece, so the quickers its out of my house the better lol

I am going to make some quiche tomorrow I think. Might use some leeks and bacon.

I love the grated potato base on my quiche, gives it a bit of extra yummyness ;)

She certainly did, she didn't goto bed til 3am a room full of girls giggling lol she stuffed her face for England! Lol

I synned 1/2 a piece of the cake which was easily doable. I felt very proud of myself as I wasn't in the least bit tempted to eat more.

The quiche was amazing! Only thing I need to do is learn to season more, for some things.

Well I forgot to buy bacon, so I did peppers, mushrooms, onion and I synd some quartered black olives. The base was awesome and easy to do.

It was yummy, and I have raved about it on my facebook page. You will be getting a few more visitors to your blog! I have quite a few friends doing SW. :)
