I see you have horses, I want to start taking riding lessons when I get to target, they're beautiful animals. There's a stables just down the road from me. Don't know if grown ups can get lessons, but I'll look into it when I'm a bit lighter and won't break the poor creature's back :)

You certainly get get lessons, anyone can. I cant ride as much as I used to cos of my illness, so I have lots of friends and family that help me with them, otherwise I would have had to sell them, which would have been very sad cos I love them so much. I am blessed to have such amazing people in my life, prepared to do so much. Although of course they do gain a lot, because they get to ride them for nothing! :) Dylan is 17 years old welsh cob, and Spirit is 7 months old (his mum is new forest cross morgan and his papa is a cob cross irish sportshorse) on the 24th Jan. They help keep me smiling, when things seem poopiepants!
 
I made these for my girls today and they looked so nice I synned the recipe, so that I could syn one for myself. Which I just ate, within my syns!

Oreo Cookie Brownies - very naughty but nice if you have spare syns!

165g butter melted (63 syns), then add 200g plain chocolate, grated (42 syns) into it until it melts (dont do this on the heat).

3 eggs (syns free), 2 egg yolks, whipped until fluffy, then whisk 165g brown sugar (30 syns) in 2 stages until you notice volume (it looks thick) .

Add 2 tbsps flour (7 syns)
Add 1tbsp cocoa powder(5 syns)
Pinch salt
2 tsps Vanilla essence.

combine all and fold gently.

Then 10 Oreo cookies, break 5 into pieces and put into mixture (25 syns) ,

Pour into grease papered brownie tray

Then add the rest of the cookies on top, broken so they sit on top, gently tap each piece.

Bake 25-30 mins 180c (check after 20 mins)

Makes 16 brownies. 10.75 syn each!

For dinner I had Poached Salmon with a mixed salad and Spinach and Ricotta Pasta (1 x HEA) which is from the new magazine, its in the little booklet. Anyhow not everyone has access to the mag, so this is the recipe.

Serves 4

Butter Frylite
1 Onion chopped (I used a finely diced leek because I ran out of onions)
2 Garlic cloves Crushed
1 Pk spinach
1/2tsp freshly ground nutmeg (or just ground)
Carton of Ricotta cheese (approx 340g, mine was 300g)
1/4 pint veg stock
salt and pepper.
dried pasta (I did whole meal 75g per person)

1) Spray a pan with frylite and add the onion, garlic and spinach and cook until the spinach has wilted.

2) Add the rest of the ingredients and herbs/spices cook for approx 4-5 mins stirring often.

Stir into your cooked pasta.

To ensure EE I served with a mixed salad, and I poached some salmon in foil in the oven.

Well they are still there and I havent touched them, but I bought myself some Sw goodies today so I make low syn puds, cos I am craving like mad cos of the *week.

My mate had one of the brownies today and wants me to make her a batch. Mind you they is lushy.

Tonight I am having chunky veg chilli con carne with brown rice, everyone else is having it on top of a baked potatoe, I just cant eat loads of potatoes. it slows my weight loss.

Then I am making a low syns trifle with banana sugar free jelly and ambrosia low fat custard. Nom! I might even have a tsp of honey drizzled on the top :) Cos I have the syns as tea is only 1/2 syn and I had left over ricotta pasta thing for lunch but wasnt a whole portion, so counted 3 for that, so I can have a nommy pudding.

One thing you can do is melt 'i cant believe its not butter light' 1tsp and 1tsp brown sugar into the butter off the heat, and stir til the sugar melts, and sprinkle a little cinnamon on it, and pour this onto a banana, with custard. Its a bit like toffee!

I am making lemon drizzle muffins for my mum tonight, she needs cheering up, and she loves my baking, and I am not synning them, so then I wont be tempted to eat one lol
 
Hmmmmm tried magic porridge, I am not sure...kinda tangy, but good for not using my milk as a HEA means I can have cheese! lol

I have never tried it. Had awful food poisoning as a child from porridge, think it was made with dodgy milk, so haven't been able to touch the stuff since. Strangely though I do like ready brek (not that you can get it here, but have been craving it since being pregnant haha).

Plus I find the fat free flavoured yoghurts really mess]with my digestive system and make me bloated, so have to watch how many I have. I can't understand how some manage to eat several in a day. Not sure if it is the sweeteners, as I dont really have the problem with 0% greek yoghurt. So think I am going to stick to that in future and just add fresh fruit.
 
Well done for your 6lb off, that's brilliant. Double well done for resisting those brownies, of all cakes/dessets brownies are my favourite. I have a great recipe but I think they may be eleventy million syns each!

I have to say the low fat yoghurts help me with sweet cravings, but I couldn't eat a ton of them in one day. I think 2 has been my limit.
 
Amazing loss, you are so inspirational, there is NO NO NO NO NO WAY i could make those brownies resist one I'd have eaten the whole blooming batch, your meals are gorgeous, when can i come round? and thanks for the rice tip am gonna try this (I can cook rice well cos mother in law taught me) and great ideas for puddings, can you really buy banana flavour sugar free jelly? or did i read that wrong? have fan weekend, hope you are in less pain, donna x

LOL you nana I had a banana with sugar free jelly and low fat custard hehehe! :D I did have a tsp honey drizzled onto the banana, it makes it 8 syns, but its soooooo worth it, for a really sweet kick, just when you need it. Another thing you can do it crush one oaty biscuit on the bottom of the bowl then the honey then the banana then the custard.

I must admit normally a batch of brownies would be one in one night. We are a house full of hormonal girls after all! lol Dont want the kids to go without just cos I am dieting. I made a batch of lemon drizzle muffins yesterday as well lol My mum had 1/2 dozen of them, my step dad is a massive fan, he ate 4 in one go!! lol I did syn one of the brownies! Nommy!

Actually that recipe is great for dinner partys, if you time the baking right to have as a desert, you can serve it hot while its still all gooey, with custard or cream. It would be a massive hit!

Not that I am trying to tempt you or anything lol So ignore me!

Glad you like my meals, I LOVE to cook, and do use most of my syns for cooking, because I love to cook from scratch for all those flavours!

Oooo please do tell the recipe, I love to bake for my family and eleventy syns or not, love to try baking new things. :D

I try not to eat more than 2 yoghurts in any one day (prefer to stick to 1), I am very concious of the calories, even if their free if you eat 10 mullers thats a lot of calories init.

oooh Ive just been reading some of you're earlier bits of diary....I see you have underactive thyroid? snap! I had to have 96% of it removed 19 years ago, leaving it underactive & I have to take thyroxine now.
Its a pain trying to lose weight with it huh:sigh:

It sure is, I have discovered through experimenting and a bit of trial and error, that my body seriously cant take loads of white carbs. If I eat too much of them, I wont lose. So I changed over to wholemeal pasta and rice, and Although I will have white potatoes, I try to replace as many meals with sweet potatoes as I can as their nearly 3 x more fibre in them. Although SW says we dont have to measure I have to portion control my carbs, otherwise again I wont lose. I do think its my thyroid that is the problem with it.

So far I have got away with having to have any operations because of it, but am on thyroxin. xxx
 
Dinner tonight:

Chicken and Mushroom Hotpot

Serves 4 - 3 syns person (its worth all the syns believe me!)

Ingredients

Frylite
1 Large onion chopped
2 x cloves garlic crushed
salt and pepper to taste.
1 x 250g pack chestnut mushrooms sliced.
1 x 500g pk Skinless chicken thighs, cut into pieces (makes sure any bits skin removed)
2 tbps plain flour (7 syns)
200ml dry cider (4 syns) *tip tescos do a dry cider called savanna which is 330ml bottle, so you don't feel like your wasting too much, as other bottles tend to be 500ml.
250ml chicken stock
8 sprigs of thyme leaves removed and chopped
700g potatoes peeled and sliced.

Preheat the oven 200C or 180C Fan oven or Gas 6

Frylite in your pan and sweat the onions. Add the Mushroom and chicken, the mushrooms with add lots of fluid. Cook until all this fluid is evaporated. Then add the flour and cook for one minute. Pour over the stock and cider and herbs and spices and cook for approx 3 minutes. It will thicken slightly.

Pour into a 1 litre baking dish and layer the top with your sliced potatoes. Make sure you use all of them. Spray the top with frylite.

Bake for 40 minutes and serve with lots of superfree vegetable!

This is seriously seriously nommy. I wish you could smell what I could smell as I served it up. If you want to reduce the syns you can use 1 tbsp of flour, but tbh this is worth 3 syns per person!
