Guess which idiot forgot to weigh in this morning... D'oh!

Oh well, will have to be a Tuesday weigher, silly moo.

I was an angel yesterday. I had cake but within my syns. I de skinned a roast chicken and as I took the dripping deliciousness to the bin, the urge to be an animal, and ram it in my gob, was strong, but I resisted and in the bin it went lol.

Beef Stew for tea, which is going in my slow cooker at lunchtime. :0)

Well done for managing to over come all of the weekend temptations!! I am very proud!!

Shame about WI today!! I forgot i have to give blood tomorrow so im going to have to WI tonight instead!!

Im really loving all the piccys!! I should start adding them into my diary!!!

TY Pesty, I am pleased with myself :)

Phew I am pooped and a 1/2. Went to sort the rabble out today, and I realised why my legs have been hurting so much, its all the bloody mud. I am walking up and down paddocks with over 2ft thick mud and its killing me. Most people can cope, but then most people don't have M.E. At least that explains why I have been in more pain, I just didnt even think about it, but obviously my muscles are having to work harder, and they cant cope.

My hunky viking, has got tonsillitis so I am looking after her, she running a high fever, got to take her to the doctors later, she has tonsils the size of large gumballs bless her. So I took the dawgies for their run, and on my second load of washing, and just having a break, with a cuppa, and then gonna mop the floors. Then I can relax til its doctor time. The stew smell is wafting through the house lol Mmmmmm yum!
 
Healthy Beef stew - Slow Cooker.

Lean diced beef. for 4 ppl I use 2 pks (£6 in Asda) then I use a stew mix, which has carrots, parsnips, onions, and swede.

Then I add 3 sticks of leeks diced, and half a bag of new potatoes chopped.

For seasoning I boil 1 litre water (slow cooker adds upto a litre of water by itself) and add 2 beef oxo cubes, 1tsp beef bovil, generous dash of worcesterhire sauce. Salt and pepper, 1 level dsp mixed herbs, 2 tsp thyme.

All in a slow cooker (mine is a 2 1/2 litre crock pot) on low, I usually put it on at lunchtime to be ready for 6.30pm. 10 minutes before the end I add 8 level tsps low fat gravy (to thicken) granules (optional), which works out to be 2 syns per person.

TBH hun, I dont have any energy, Am constantly in pain, constantly knackered, as I have M.E I get really told off by the doctor, because I am not pacing, but I have kids, a disabled partner and am disabled myself, cant get any help, so what am I to do? So I just mostly get on with it! I mopped the floors top to bottom, paying for it now tho! At least they are done! :)

The doc gave my viking some Anti B's and was appalled at the sight of her tonsils bless her.

The stew was lush!
 
stew looks delicious. I love stew, is one of my ole time favourites, what with having irish blood in me. My gran made the best Irish stew ever with beef chuck, omg it was delicious. The meat used to be so tender.
 
Ok for dinner tonight I had Tescos Healthy eating cumberland sausages, which are rather yummy at 1 syn each. For comfort food I had Homity Pie and served with savoy cabbage and green beans.

Recipe for Homity Pie, which is pure comfort food!

Homity Pie

Ingredients

Frylite
step 1) 340g Potatoes cubed

Step 2)225g leeks
1 Lrg onions
198g frozen Peas

Step 3) 2 garlic cloves crushed
Handful fresh parsley chopped
Handful fresh thyme chopped (dont forget thyme can be frozen!)
2 eggs beaten
3fl oz vegetable stock
170g reduced fat cheddar (we used tescos healthy eating, which is 5 1/2 syns per serving EE or if your on a green day you can have cheese as a HeA) grated

Method:

Step 1)Cook potatoes for mashing, and mash then put to one side.

Step 2) fry ingredients (using frylite 1 cal spray) from step 2, together until soft

Step 3) mix together, step 1 and step 2 together with ingredients from step 3 - note, half the cheese is to be put to one side for the top of the pie!

Spoon the mixture into an oven proof dish and scatter the remaining cheese on top.

Bake for 20 mins at Gas mark 7 or 200C

You can make Britmums syn free onion gravy (which can have portions frozen) to go with it.

My tip for perfect rice every time (a chef taught me this)

This is very important, the rice MUST NOT be easy cook rice. It needs to be NORMAL Basmati rice.


1 mug (normal size mug) of basmati rice (DO NOT use easy cook basmati otherwise it wont steam!!) is enough to feed 1 adult and 2 children , if you doing 2 kids and 2 adults, i recommend 1 and a 1/2 mugs.

Then boil a kettle. Use a fine mesh sieve to rinse your rice under the tap. Then put rice in pan. Get a large pan that will have a lid. Salt the rice. Then add 3 cups of boiling water (the ratio is one cup of boiling water to 1/2 a mug of rice). and bring the rice to the boil.

Straight away as soon as it boils, turn the heat off, give it a good stir,and put the lid on (dont take the lid off cos its gonna steam ur rice!) . Leave for 20 mins. After twenty minutes it will be perfectly cooked, and still boiling hot. Just fluff the rice with a big spoon, and serve.
 
My mum does it like this but it always seemed mushy lol. I find the easiest way for me now is to keep the lid off and keep it boiling on a low heat, it stops the starch from making it gooey lol xx

I see you have horses, I want to start taking riding lessons when I get to target, they're beautiful animals. There's a stables just down the road from me. Don't know if grown ups can get lessons, but I'll look into it when I'm a bit lighter and won't break the poor creature's back :)
 
Pesty If its mushy its probably cos she is using easy cook rice (which like I said, dont us it), because this just does not steam properly (and like you said goes mushy). Also its essential to get the water ratio to rice right, otherwise you have too much water.
