I don't know about carrying more water after doing CD - but you'll have refilled your glycogen stores if you didn't eat low carb. You can store around 2000 calories worth of glycogen which is going to equate to 500g of glycogen weight alone. Glycogen stores three to four times its own weight of water with it - so now we're up to 2500g or 2.5kg.
2.5kg = 5.5 pounds of weight regained if you fill your glycogen store.
Any additional weight gain will be to do with increased salt intake which might make you retain say another 2 to 3 pounds worth of water. You say you're craving cheese? I'd say that's because your body is already missing the extra salt you took on board (lots of salt in cheese!)
We're up to 8 pounds already. I'm willing to lay money on the fact that in real terms, you've probably gained less than half a pound.
Three days SS - maximum 5 days - most if not all of those pounds will be off again.
