Im never going to cook eggs before work!
I love my electric egg boiler for that reason. Put a couple in it in the morning, make my cuppa, generally get on with things and they are cooked in about 5 mins. That damn buzzer still makes me jump when they're ready though lol.
I've got an emoti, which won't post on here, of a cat with a machine gun at the window and it looks just like HRH :D xx

Happy days, I've found a cafe on the university campus that does bacon and eggs :D Perfect for days like today where I'm out of eggs and completely unprepared.

Going back over there at lunchtime to get a tuna salad :)

Forgot to say - came in to work this morning and my Nudo delivery has arrived yaye :) Will try the mint oil over tomorrow's salad, and will try the choc oil over some cream cheese tonight.

How's everyone today?

It was at home hun, not work. I'm in a basement flat and part of it can't be seen from the road so I've often caught blokes coming down there to wee (people are really disgusting - even caught a guy ready to do a #2 - threw water all over him) - but this bloke started to open the window, before I screamed I was calling the police - it was only when they saw me on the phone describing them that they left. Can't wait to move to somewhere safer!

Oh god susie that's frightening! No wonder you can't wait to move, I'd be petrified having to deal with that. I hope you are ok now? Oh and by the way I have just been catching up on your diary from the past few days and love the menus :) it's very inspiring thank you.

Yes we're OK now and just really looking forward to moving :)

Forgot to say earlier, my wheat belly swollenness is going yaye, and my tum has returned to normal double yaye. Also did a sneaky wi today and it's all looking good :D
 
I was going to make a low cal version of the mini muffins last night but got over taken by other tings requiring my attention so a) didn't get to the supermarket and b) didn't get home until 8pm by which time Trev was home from work and starving and needed instant food :D

Lunch was different to what I posted on mfp, the cafe had run out of tuna salad, so had ham, coleslaw, hard boiled eggs and cheese instead - and had to give up half way through. Hopefully that means I'm coming into K :)

Broccoli and spinach casserole just cooked for tomorrow, yaye, and been experimenting with home made soya yogurt - Tesco organic soya milk, liquid hermesetas and a tblsp of Sojane uber natural soya yogurt (as the starter). It's 'cooking' now in my yogurt maker (seven very cute little glass jars) but I've had one fail in the machine before, so if it happens again, I'll put the machine on Freecycle and will stick with my easiyo container and a towel :D

Plugged the ingredients in to mfp and it's coming up with 2g carbs for each 100g jar.

Well it's taken most of the week, but I just finished your diary!!!! I have taken much advice and many recipes. I hope you are doing well with your lower carb way of eating. And look forward to all your words of wisdom x
 
Well done Kim, even I get bored after a few pages! :D

I'm loving being back on low carb, and no doubt we'll be swapping lots of recipes in no time :D

The yogurt worked, woohoo - haven't tried it yet but it has set :)

B - three egg and bacon muffins, soya latte
L - tuna pate, green salad with sugar snap peas - not massively low carb but should taste yum with the mint oil/mayo dressing
D - broccoli casserole with cold meats
S - roast beef and cheese roll ups

Big farewell party tonight so may have a few wines. In fact, there's no "may" about it :rolleyes:

Liking the sound of your yoghurts :) going to find your muffin recipe, though I'd be hard pushed not to eat the lot in one go!

Do you like Bacardi? That is very atkins friendly if I remember right.....

Can't remember if I posted the muffin recipe hun - so here it is -

- 3 rashers of bacon, cooked or microwaved and chopped into bits
- beat three eggs with about 100ml water, add herbs
- spray/oil/grease a 6 space muffin tray
- put some bacon in, then pour egg over it - don't fill to the top, it will rise a little
- sprinkle a few bits of grated cheese
- cook for about 20 mins on 200.

I usually have three as one serving, for 1g carbs. They also freeze nicely, so you can make batches ahead :)

Don't do Bacardi, don't really like spirits at all tbh (although lovely Lisa has seen me force a bit down under duress :D) - will start with G & slimline T, and try and resist the wine for as long as possible.
 
I shall be making those once DD stops forcing me to play cut the rope! I'm also gonna have your broc & spin casserole :)
 
Do you know, I love some of my fav recipes because they're so quick :)

I got home at 6pm and by bedtime had made the broccoli casserole, 6 muffins and the yogurt - and got to watch Big Bang Theory :D

I think it's quick and easy because you enjoy it. I know something's I find easy and quick in the kitchen would be a mission for some of my friends. I know some people who's idea of cooking is making cuppa soup and buttering some bread!
