This Little Piggy Goes to Atkins

Phew, just as I was starting to really panic about money in the near future, I've been thrown a lifeline. A friend needs someone to sit with a 98 year old lady she cares for. It's 3 hours a day, 5 days a week, in a lovely village not too far away. My friend will put my name forward. Hurrah, that will be just great.

All else in the world is great again.

Put the decorations up today, mainly focused around the fireplace. Will get a tree tomorrow. Christmas might be back on again!
 
Hopefully early next week. To be honest it's made me feel hopeful for now anyway, and I can't see why they wouldn't take me on my friends recommendation.
Today I feel really good, positive, happy and looking forward to decorating the tree whilst the snow falls here later this morning.

Will be cooking a nice pork shoulder joint for tea, very much looking forward to that too.

Te he, mines silly really!

Well, I've made experimental low carb mince meat, put it in a kilner for a week or so to mellow. The intention is to make mince pies with ground almond fake pastry. Gawd knows how they'll turn out, but the mince meat smelled festive enough.
I used frozen black Forest fruits, rhubarb, spices, suet, sweetener, juice & zest of an orange and a lemon, and a chopped apple, with loads of brandy. Not entirely legal, but far less illegal than real stuff.

Have also spent 3 hours uploading this years photo book, and ordering it. We've done one every year we've been together, I love looking back over them during the year.

Cooked pork shoulder with broccoli, beans and creamy sauce, twas absolutely brill!

Not hungry particularly again today. Have had flax pancake with cream, cheese with low carb savoury biscuits (another great experiment), and home made lc chutney. Pork and veg for tea.

Those photo books are great, aren't they? I'm arranging one at work for someone's farewell.
 
Hi Susie, I'm trying to remember how I did them. I thunk it was 1 cup grated cheddar, 1 cup ground flax, 1 cup ground almonds, salt, pepper and an egg. put the dough between baking paper to roll out then use a cutter to cut them out. Bake on buttered baking sheet at 180° for 10-15 mins. They will store in an airtight container.

This weekend I've been super busy in the kitchen. Yesterday pizza quiche, celery & Stilton soup, low carb creme brulee - my God, that was AMAZING!
Today, I've made low carb (12g instead of 25g per slice, so still fairly high) Christmas cake. I have to say it smells and looks just like a normal one, but contains no added sugar other than natural sugars from the fruit.

My cousin is now coming for Christmas, so that's lovely. I hope she won't mind all my experimental cooking!

Have also made a normal chocolate cake, and flapjack for my last day at work tomorrow.

Happy Monday dear reader, off to my last day at work shortly, armed with chocolate cake and flapjack.
I can't pretend not to be slightly apprehensive at what the next few months may hold, but I'm excited at the same time.

When I get home, I plan to blitz the house. I tend to do this when I feel slightly adrift; tidy house, tidy mind.
I will put my white board in my office and mark it up with daily tasks. I really don't like being without purpose or routine, especially once Christmas and new year are out of the way. I usually feel really grateful to be in work and a routine, so this year I must remember that this is my choice, and there is a positive outcome.

At least food wise I am in a great place, and in control. I am excited about being low carb and sugar free over Christmas. Oh, and 3 stone lighter too!

Ok, off to work. See you on the other side...
 
Ok, last day done. New company looking into finding new premises, so that may happen in the new year. So many possibilities, feeling excited. Have a sore throat so may have a cold coming, that's ok I can cope with anything right now.
Dh will be off weds, thurs, Fri this week. Mon I'm meeting mum in Canterbury, thurs meeting my best friend for lunch at the new Wagamama in Ashford, yum! And my new company are taking me out for Christmas lunch next week too. I'm not sure I'll ever have time to work!

My latest Jeans are too baggy now. Great news on one hand, but really, this dieting lark is proving expensive!! Lol
 
Good news, good news - I started a new job this afternoon! Looking after the old lady 3 hours every afternoon mon-Fri. It's very easy as it's her nap time anyway, but today we chatted away about our lives. It was very nice actually. I'll also be covering this weekend.
The house looks across the English channel, it's really interesting to watch all that goes on out there.

Soooo, a great day. The wolf is kept away from the door once again.

Have had a shocking head cold type thing all day though, no tablets touched it. Have eaten minimally, until roast chicken dinner tonight. Have finally perfected low carb mince pies, with the help of 2 small squares of filo and mince meat that looks nothing like it, but tastes pretty good.
