How are the spring rolls done please?

Very true hun!

Spring roll Recipe :

Bag of 'stir fry veg'
Beansprouts
Chinese 5 spice
Garlic
Soy sauce
2 teaspoons of honey
Chilli flakes
Lasagne sheets

Basically cook all the veg together in a pan and add the soy sauce and honey at the end. In a pot of boiling water soften the Lasagne sheets. Let them bubble away for about 4/5 minutes and they will soften and become flexible.

Lay out the lasagne sheet and place the stirfry filling on the inside. Roll up the lasagne sheet aso it resembles a spring roll. Place on a baking sheet and spray with spray oil and bake for 15/20 minutes or until you are happy with how they have crisped up :)

I had mine with sweetchilli sauce, so lovely!
 
Heading to Zumba in half an hour so just letting my dinner digest now and relaxing. Work was so stressful today but my absolutely delicious dinner made up for it. It was gorgeous! Extra lean steak mince burgers with SW chips and BBQ veggie baked beans. So so tasty!

Breakfast - 1 alpen light (1/2 HexB) and a banana. Green tea.

Lunch - tomato mug shot with lettuce, tomato, gherkins, honey roast ham and 1/2 HexA reduced fat cheese. Snack size Rancheros (2.5) and Muller light Toffee yoghurt.

Snack - Kiwi

Dinner - extra lean mince burger (onion & garlic) BBQ veggie baked beans (beans, mushrooms and yellow peppers) on a wholegrain bun (1/2 HexB + 6 syns) bit of cheese (rest of HexA cheese) lean bacon light mayo (.5) ketchup (.5) and BBQ sauce (.5)
BBQ baked beans with mushrooms, peppers and smoked paprika.
SW chips

Snack - another muller toffee yoghurt, 1 Ryvita (2)

Hex A - reduced fat cheese
Hex B - 1 alpen light bar and some of wholegrain bun

Syns - 12

I really fanced some chocolate tonight but my syns won't stretch that for so I will wait until tomorrow :) x

That tea looks gorgeous! I'm the same today with chocolate, bought two of those new Malteser bars (9 syns) but am now having a synful but quick tea, so will wait and have it when I can fit it in ;-) check us out ey? X

How embarrassing, I mean't *check lol. Though I would definitely prefer of it was a 'cheque' if I'm really honest haha.

Work is a right pain at the moment. Our internet has been down for 2 full days now with no real idea of when it will he back. This is a reallu busy period for us and I have insanely high sales targets yet I can't even access my emails to respond to enquiries. It really is a disaster and I have no idea where I am with sales. My boss is naturally peed off about it so the general attitude in the office is not good at all. I also feel pressured to make myself look busy when all of the things I will actually get in trouble for (ie not making sales target) I can't do at all.Grrr! In the midst of it today I had some chocolate but I'm not putting it totally down to comfort eating as I really fancied chocolate yesterday if you remember.

OH and I are eating out tonight at a local chinese restaurant, purely because our apartment is being used for something and we need to make ourselves scarce so cooking etc isn't an option. I'm rather looking forward to it but it means I will most likely be over my syns by quite a bit. I'll just pull back tomorrow though.

Breakfast - alpen light bar (3) a banana, handful of grapes and a camomile tea

Snack - 8 lindt thins. These are teeny weeny and are apparently 0.5 syn each so that would be 4 syns. I really fancied chocolate so I had it!

Lunch - 2 WW wholemeal bread, 40g reduced fat cheddar (HexA) honey roast ham, lettuce, coriander, cherry tomatoes, and gherkins. Snack size packet of rancheros (2.5) and a kiwi.

So that's 6 syns so far today. Realistically I have 9 left so I should be OK once I order something like chicken and sweetcorn soup and chicken blackbean with veg and rice. It will definitely be either that or chow mein. I will also mention that I am allergic to oil as I so often do ;)
 
Intrigued by your spring rolls they look amazing were they like the real thing? X

They really were like the real thing!! Literally cook up some stir fry mix vegetables with soy sauce, chinese 5 spice and a drop of honey. Let lasagne sheets bubble away in a pot for 5 mins till they become flexible. Lay out the lasagne sheet and put the filling in the middle and roll it up like... A springroll :) put on a baking tray and spray with spray oil and oven bake for about 20 mins till they crisp up. Serve with sweet chilli. Just like the real thing :)
 
A very indulgent day today and way over my syns but I enjoyed it and I will make up for it tomorrow with a very low syn day and lots of superfree. I plan to have under 5 syns tomorrow and am already planning a great day!

And look what i've been reading tonight. I has four big cookery books - jamie's ministry of food, masterchief, nigella's kitchen and catherine fulvio's italian. I need to read them as I loooove cookbooks but I NEVER try recipes. I hereby swear to find at least one recipe a week from my books and I will alter them to be SW friendly!

My tummy 'muscles' ache so bad today from Zumba. I figure an amazing day tomorrow followed by a careful weekend and a long power walk on Saturday will make up for todays mishaps. I don't feel crappy though, I still feel in control and I did enjoy my food today :)

I have been craving burgers since looking at yours so having them today, and have also got the ingredients for the spring rolls for tomorrow so thanks for the inspiration :) that chinese looks amazing too I may have to get one next week. i also tried zumba this week and I am still sore from it but loved it!! I would be really interested to see what recipes you "slimify" from the recipe books! Have a nice weekend :)

I hope you are all having a lovely weekend. I am determined to enjoy every moment of my Sunday and NOT think about work until 7am tomorrow morning. Today will be a pretty laid back day which makes me veeery happy. I am currently watching Jamie's 30 Minute Meals. I am obsessed with Jamie so this, alongside a big mug of green tea, is just about a perfect Sunday. I also hope to fit in a visit to my mam, a nice walk and perhaps some food shopping and a coffee.

Randomly I am craving a crab salad. Does anyone have a nice recipe? I am thinking of flavouring it with fresh chilli and lime or lemon juice and a big salad, but what else should I include in the salad? The weather has been quite nice so it seems like a lovely lunch. Dinner tonight is going to be Pita Bread 'pizza. which I am really looking forward too. Quite tough leaving my HexB till evening time though ;)

Food wise I am having a great weekend!

Sorry to interrupt but OMG Jamie is making incredible mash potato with sweet potato, chilli, coriander, mango chutney, onilve oil, soy sauce, salt and pepper. It looks AMAZING!!!!

Anyway, So Friday night I made 'Taco Fries' and it was just absolutely gorgeous. The mince had an incredible flavour and I would have quite happily eaten it with anything - rice, potato, pita bread. Anything! I had it with Slimming World Chips. It wasn't just a 'chilli' though. It was flavoured differently. It had cumin, cinamin and balsamic vinegar in it. My God it was just packed with flavour and it was just so so good! I was well within my syns on Friday.

Saturday I didn't have a breakfast but had a fabulous stuffed pita for brunch which was amazing. I filled it with scrambelled eggs, smoked bacon, cheese and a cooked salsa made with tomatoes, garlic, spring onion and fresh coriander. It was delicious and syn free (using HexB). Later on I had a wonderful fruit salad with strawberries, blueberries, banana, grapes and vanilla muller light.

When I went on my walk I discovered a car boot sale and within it was a massive truck which sells fresh fruit and vegetables, all for amazing prices. I got strawberries, grapes, long stem brocollini (2 packs for €1) bananas (6 for €1) among other bits and pieces. A fruit salad sounded divine and it was!

Dinner was Nandos and I highly recommend this if you are eating out as it is so low in syns. I had...

Butterfly Chicken WITH the little bit of skin (3.5)
Spicy Rice (2.5)
Side Salad with leaves and cherry tomatoes
side of grilled Halloumi (1.5)
balsamic vinegar, salad dressing drizzle (1) and about three tablespoons of Nandos lemon and wild herb sauce (1.5) The entire meal comes to 10 syns which is amazing.

Snack - packet of snack size rancheros (2.5)

Then we went to the cinema and I did have cinema popcorn but I asked for NO butter. I have no idea how many syns, I am guessing maybe 7/8 for what I had which would mean I went over my syns by about 5, and I am totally OK with that.

I have just decided that I will make some grilled halloumi with my salad because it was just SO damn good!!

When you say no butter on your popcorn, do cinemas normally add butter over in Ireland?! Totally can't imagine it haha xx

Haha Joanna you haven't lived till you try butter popcorn! In Ireland all our popcorn is salted. I couln't believe it when I was offered the sweet stuff in the UK. So its warm salted popcorn and you can have melted butter poured on top. YES! It's amazing so it was very hard to resit!

I'm quite pissed off because i went over my syns completely by accident. I read online that if you order grilled Halloumi cheese in Nandos it's only 3 syns. So today I bought Halloumi and grilled some myself. I cut two pieces that looked exactly the same quantity as I had in nandos last night. It ended up being 60g. So then I look up syns online and it says that 28g of Halloumi is 4 syns which means I had 8 syns! If that's the case HOW is it 3 syns in Nandos for the 2 slices (serving) very annoyed :(

In other news, our dinner was incredible. Medditeranian style. Amazing sirloin steak, bug salad with leaves, cooked asian greens, cooked mushrooms, grilled halloumi (grrr) and on the side a red pepper salsa, balsamic roasted tomatoes and hexb wholemeal pita. It was amazing!!

Breakfast - omlette with tomato, spring onion, gherkins, coriander and a little bit of cheese (2/3 HexA) and 2 green tea

Snack - packet of snack a jacks, salt and vinegar flavour (4) thai mug shot (1) fruit salad and a cup of tea with skimmed milk (1/3 hexA)

Dinner - sirloin steak, salad with green beans, asparagus,spring onion, chilli and mushrooms.
balsamic roasted cherry tomatoes and red pepper salsa with parsley and garlic. HexB wholemeal pita.60g halloumi (8 grrrr)

Snack - muller greek style coconut and vanilla (.5), 4 sugar free 'tea biscuits'(1.5)

HexA - 25g cheese and some skimmed milk in 1 tea
Hexb - wholemeal pitta

Syns - 15

I am so happy I was within my syns. I really didn't think I would be after the Halloumi travesty!

really enjoyed the burger the other day, but really wanted 2 or 3 of them (minus bun for others) but my boyfriend made them and his family decided they wanted in and i got barely anything :( was so annoyed as i asked for them and really really craved them haha

also made the spring rolls saturday, had a disaster with all the lasagne sheets sticking together in the water so took a few attempts, loved the filling though! really enjoying trying new recipes and figuring out the tweeks that will perfect them, made a lovely cheesecake yesterday too! zumba tomorrow already dreading the soreness but hey beach body needs the work :) hope u are having a good week :)

The Homemade Enchiladas I made yesterday, only 1/2 a syn per portion and it was soooooo good! It will be a firm favourite in our house from now on. Just gorgeous!

Tonight I am meeting a friend for dinner and we're going to this funky little cafe in Temple Bar that does amazing sandwhiches, soups and coffee. I plan to get soup and the Vegetarian Club Sandwhich which is HUGE and is full of gorgeous things like Hummous, Avocado, Sundried Tomatoes and cheese. It's definitely quite synful so I've kept my HexB to go towards the bread (all homemade and the walnut one is unreal) my HexA towards the cheese and I am hoping that my remaining 10 or so syns will cover the rest of the sanwhich. That'll be me done for the night then as it's definitely big enough to be dinner. I'll take pics! REALLY looking forward to it.

I weighed in today and I have lost 2lbs this week. I am really delighted with this. I have had a pretty good week all round with a few minor glitches but overal I was very good and I am delighted with that loss. I am down 6 pounds in 3 weeks now which is just about perfect in my book. I won't be going back to SW classes till after my holidays. I will inevitably gain a few pounds on holidays so I'll hopefully lose those again in 2 weeks or so and then I will start going back to SW when I have a nice clear run with nothing getting in my way till August. At the moment not going to class is not affecting me one bit. I am more determined than ever and I am just totally in the zone, but I did enjoy class and the social aspect of it so I will definitely return at the end of May! I also want to officially document my weightloss for my challenge so that's a good way to do it. Before I started my challenge I had gained 7 pounds since my last weigh-in. That was just after a few weeks of 'normal person' eating and a bit of excessive eating on top of it, so at least when I go back I will see a loss on their scales as I'll have tackled that big gain, and then some :D

Breakfast - Magic Porridge with strawberries and blueberries

Lunch - Erin low Fat Savoury Rice Mushroom Flavour (1.5) salad with leaves, chicpeas, tomato, and grapes. A kiwi and a plum. packet of Velvet Crunch (4)

Snack - 2 sugar free 'tea biscuits' (1), plum, Muller Light Toffee Flavour, sweet and sour mugshot

Dinner - Chicken and vegetables Enchiladas (1 and HexA cheese) with peppers, onion, garlic, coriander and mushrooms served with wok fried asian greens (asparagus, fine beans, courgette and long stem brocollini)

Snack - 4 squares of the new Malteaser bar (4) dash of milk in one tea (1) orange juice (1)

HexA - 30g cheese on Enchilada
HexB - 35g Porridge Oats

Syns - 13

Today's Food Diary (planned)

Breakfast - Banana and Alpen light bar (3)

Snack - Cup of Roibos tea with fash of lf milk (1)

Lunch - Chicken and vegetable enchilada (1) with kiwi and a plum and a muller light greek style yoghurt (.5)

Dinner - Vegetarian Club Sandwhich (HexA, HexB and probably 8 syns) Soup (3) a coffee with dash of milk (1)

HexA - Cheese on Club Sandwhich
HexB - towards bread in sandwhich
Syns - I'm guessing circa 20 syns which isn't too bad

Ah no, the cheek of them scoffing your food :p We're going to have burgers tomorrow night which I'm really looking forward to! So simple to make but so damn tasty. Think we'll have them with BBQ beans which are a favourite of mine at the moment!

I have Zumba tomorrow night too, and I am going Thursday. I've never been two days in a row so I'm a little bit nervous but I'm sure I'll be fine!

With the Lasagne sheets I find if you only put two in the water when it's literally bubbling boiling then they don't stick. Just let them bubble away for about 3 minutes and seperate with a spoon so they don't touch if you need to. The filling is lovely isn't it? I have become very in to Chinese 5 Spice at the moment!
