Dinner is just going in!
It is labelled as Chicken Parmigiana with Parsley Butter Tagliatelle- however we have omitted the butter, we have no Mozzarella/Parmesan and it's Penne instead
We have tried this before, but Dan (I'm sick of calling him OH) wasn't happy and wanted to try it again....
So in the casserole dish we have:
2 chicken breasts, butterflied
1 egg
Parsley 1.5 tsp
Frylight
Tin of chopped tomatoes
Tomato purée
Basil (2 tbsp)
2 crushed cloves of garlic)
1 tbsp Coconut Oil
1 tbsp Plain Flour
S&P
Method
Preheat the oven to 200 degrees. Grease a casserole or large ovenproof dish with Frylight.
Butterfly the chicken breasts, season and set aside. In a separate bowl, break the egg and wash the chicken breasts in the egg before coating them in the flour. Place in a hot pan with 1 tbsp of Coconut oil and seal, turning occasionally.
Cook the chopped tomatoes in a saucepan with 1 tbsp tomato purée, the garlic and the basil To reduce the liquid and set aside.
Place the chicken breasts in the dish, followed by pouring the tomato mixture, then the cheese and place in the oven for 15 minutes.
Whilst this is cooking, heat some pasta according to packet instructions.
Remove the dish from the oven and leave to cool. When cooked take the pasta off of the hob (this bit is optional) drain and then add parsley (2 tsp) 2 crushed cloves of garlic and 2 sprays of Frylight. Serve on a plate with the chicken, tomatoes and cheese on top.
4.5 Syns per serving- I always count it as half... However my OH eats 2/3 and I eat 1/3 of our meals. Oh well, gives me a bit of leeway
