Just found this Hugh recipe- gonna sw friendly it- omit the oil and sugar and syn the 'light' coconut milk..... 15 syns for dish...

Update: right, run out of ginger, and I don't have fenugreek so left both out. I've added some spinach and butternut squash cubes to up the superfree... Omitted the oil too. I'm also using fillets instead as that's what we had... Smelling good :)

Baked chicken curry

This big, hearty, rich curry is very easy - a lot of the chopping is done in a food processor. Serves six.

2 heaped tsp cumin seeds 2 heaped tsp coriander seeds 1 heaped tsp fennel seeds 2 tsp ground turmeric 2 tsp ground fenugreek 1 large onion, peeled and roughly chopped 3 large garlic cloves, peeled and roughly chopped 1 large green chilli, roughly chopped 1 thumb-sized piece of fresh ginger, peeled and roughly chopped 3-4 tbsp sunflower oil 1 chicken, jointed into 6 pieces (or 6 skin-on, bone-in chicken pieces weighing about 1.5kg in total) Sea salt and freshly ground black pepper 400g tin tomatoes 400ml tin coconut milk ½ tsp caster sugar

Heat the oven to 180C/350F/gas mark 4. If you've got time, toast the cumin, coriander and fennel seeds in a dry frying pan for a minute or two, until fragrant. Grind the whole spices (toasted or otherwise) to a rough powder in a spice grinder or with a pestle and mortar, and mix with the turmeric and fenugreek.

Put the onion, garlic, chilli and ginger in a food processor or blender and blitz to a coarse paste, stopping to scrape down the sides a few times.

Heat two tablespoons of oil in a large frying pan over a medium-high heat. Add half the chicken pieces, season generously and brown all over, making sure you get the skin a good colour. Transfer skin-side up to a large roasting dish, and repeat with the remaining chicken pieces.

Lower the heat under the pan, add the spice mix, fry for a minute or two, then add the onion paste. Fry, stirring frequently, for five minutes, until the paste is soft, fragrant and reduced in volume. Add a little more oil if it seems to be sticking.

Tip the tomatoes and coconut milk into the food processor (no need to wash it out first) and blitz to combine. Pour into the pan and bring to a simmer, stirring constantly. Add a teaspoon of salt, a grinding of pepper and the sugar, then return the chicken pieces to the pan. Make sure they're all coated in the sauce, then push most of the sauce off the top of the chicken (if there's too much sauce sitting on them, the skin won't brown in the oven).

Bake, uncovered, for an hour, turning and basting it a couple of times, until the chicken is cooked through and nicely browned on top. Serve with lots of basmati rice to soak up the sauce.

Was really really yummy, and not too hot for the kids! Perfect for OH too after a weekend at army :)

Ow, I had the most awful tummy pain at bedtime last night, I didn't know what to do with myself :( definitely this morning sure its because I've had to up the cocodamol which seems to cause mega blockages :( (tmi!) So this morning I've taken 10ml of lax- lower than the 3-6 5ml spoonn suggested, but hoping that it might be enough to keep things happier... I know it contains sugar, so feel I should syn it? Thinking 1syn per tsp like sugar just to be on the safe side... I feel so uncomfortable and bloated though any hope of a loss this week seems distant :(

Awful day. +1lb :( 150.5lb..
I've eaten everything I could get my hands on. Usually have restraint with kids biscuits but I've eaten a ridiculous 10 syns worth. Stupid, but I've at least admitted it all..
TOTM imminent, so where I thought is sts last wk because of it being pre week, it seems this week I've gained.
Feel a bit like I've hit a wall so need to restart tomorrow.
Hoping for a better week :(

Friday... scales looking better than they were! Determined for a good weekend too - nothing much to hinder me :)

It was a really odd day, had already been feeling it when I'd been in supermarkets with the masses of Mother's Day stuff on the shelves.. But yesterday I just felt really down - probably the worst day in that respect since.. Kids were lovely though - Lil brought me my measured muesli in bed! OH was working though and I'd planned nothing to I actually do which didn't help.. But we went for a nice scoot to the park. :) it was a chilled day :)
MIL made me cross though as she rang OH and thanked him for the card but it seems she hadn't received it and she was being sarcastic! She's quite ungrateful, and when it arrives today will not at all appreciate its a beautiful card my daughter made, and would have preferred a bought one! So rude! Hey ho ..
TOTM still not started either, and now I am questioning when I am actually due on! I seem to have been grumpy for too long..

On a diet note though, I think I'm going to try two really super free days before WI on Wednesday - scales showing sts and after last weeks gain, I could really do with a loss.. Hope you're feeling better today and well rested? Will reply on yours xx

Ah love I SOOO hear ya, my mum really upset me at Xmas, I did the family Xmas for the first time, bought them both some really lovely gifts id really thought about and cooked 3 diff meats in like unusual ways I spent about 17 hours in that kitchen. And a week later we all get a really snotty email about how she had all these Xmas cards but not one from children / grandchildren. Really upset me, I did even get them one but was so busy and stressed Xmas day I forgot to give them it. Total slap in the face, she's always doing stuff like that.

Families are hard.. Can't choose them innit!

Yeah I'm ok thanks, just feel drained. Was quite upset about Mother's Day yday too, not even a call from the boys who were at their dads, sat reading all these updates on fb about how people were getting spoilt and having a lush day and he wouldn't even just get them to call me, i told dan it really upset me so he is picking them up from school and said we'll have Mother's Day today instead, which is nice, makes it better really xx
 
People can be so bizarre! I get the same about cards at Christmas from the mother in law and her mother - I only really send cards to people I'm not going to see, or we get the kids to make grandparent ones- but if I don't do it there is always some sort of snipe about it. Really makes you wonder why you bother! One thing my mum was amazing at was appreciating the small things... Like she wouldn't be bothered by Mother's Day gifts and it would mean so much more when we made the effort to see her and spend some time together. She treasured everything we made her over the years, some of it awful, but she always made us feel like it was the most special thing she had ever been given. She kept a Christmas tree dec that Lilly made her AND the wrapping, because she'd done it herself! So cute!

Glad your ok, and that sounds like a perfect thing to do by having Mother's Day today instead :) it's just a shame their dad did nothing, as ultimately it's the boys who miss out. I hope you have some lovely time with them after school!xxxx
 
Yay MRI date has come through for 2nd April...! Still a while to wait, but at least I have a date!


Been desperately trying to work out where I have gone wrong with TOTM dates.... The last I def know I had was around 16th jan, and I don't know the date I between, but I think I though it was due one before I actually am! Recon it's due sometime in the next week, but I had thought it was sometime in the last week! So silly... Oh we'll.. I hope it arrives ASAP now so I can sit tight and wait for the MRI without worrying I might be preggers!

Beautiful sunny morning and thankfully less wind so not quite as cold!


1lb off for me today, which I am thrilled with as that takes me back to 10st 9.5 lb so I feel like I am back in the game! Here's to a good week!

So I did mess up a little by having lunch out today, but I had made my salad so I had it for dinner instead. OH and I really don't get time to ourselves so was really nice to eat in a pub rather than meet him and sit in the car with our packed lunches!
