I will try your curry recipe f te Quorn pieces. I tend to use my Madhur Jaffrey book (got it in the 80s!) and cut out the oil. I think the trick to a good hoe made ruby is the paste. 6 cloves garlic, inch of ginger and alf an onion, put in a blender with enough water to make a paste. Pukka. Add that to a an of frying onions , fennel seeds, chicken r quorn etc, cook it till holes appear n the paste, (water is evaporating) can cook more until the paste begins to colour a bit , add your spices of choce like your curry recipe,then a half or whoe tin chopped toms, you can add cayenne pepper, yoghurt (5 tabespoons , 1 at a time to encorporate into the toms) and splenda to sweeten if you like. Fresh coriander sprinkled over the curry gives it another authentic touch.
