Susie and Orbit's daily dribble

Evening lovelies - didn't get around to as much cooking as I thought - but just made courgette lasagne with homemade roasted tomato pasta sauce mmm (thanks to Hugh F-W for the pasta sauce recipe). The only pre-made item was the lasagne sheets, so am feeling quite smug. Not bad for a woman who two years ago lived off ready meals - and the kitchen smells divine :D

Going to make more pasta sauce tomorrow for aubergine parmigiana, and maybe make up courgette and mushroom bread. The vegetarian cooking adventures continue :D

Thanks hun - I am really loving the cooking (as usual, the only complaint is not enough space), there are so many brilliant recipes out there that I'm dying to try - and hopefully the tasting will be as good as the making :D I spent more on my shopping this week buying all organic fruit and veg, but it's worth it to know there are no sprays or chemicals in my fodder :)

Not very hungry at the moment, will bake the courgette later. Am just chilling out with a white wine and Classic FM, the heating is on, Orbit is snoozing on her penthouse bed, and all is well. All together now - ahhhhhhh :D

Don't know why I bought aubergines, actually, I'm not sure if I like them - but maybe a bit of experimenting with a couple of recipes will sort that out.

I keep getting up every 5 minutes and looking in the fridge and giggling - it's so full of stuff! I can even make stupendous salads now, with asaparagus, peas, beans, you name it, it's here :) And I look at the ingredient lists for recipes and think "Yep, got that, got that, got that too..." hehe. Just call me Julia Child - bon appetit! :D
 
My mum used to make a homous type thing with grilled Auvergne through it! Was the business!

Evening all - I ended up making aubergine parmigiana (didn't have any tahini for the hummus) and OMG it was lovely - not at all as fiddly as I thought and the aubergine was like meat in a way.

My baking dish makes four big slices, and I had no room in the fridge for leftovers - so of course Ms Piggy had two pieces :) The rest is squeezed into the freezer - and I'm not going to think about all the oil in it - that aubergine doesn't half soak up the stuff!

Just doing food for tomorrow - pineapple, raspberries and greek yoghurt for brekkie; a big salad for lunch - asparagus, peas, red pepper, spinach and lettuce, with lemon and ginger dressing (and a sneaky slice of organic wholemeal bread).

Can't believe the weather forecast, enjoy the sunshine while you can! :D
