This Little Piggy Goes to Atkins

Just the usual flax mix (eggs, salt, flax meal), in a hot omlette pan with coconut oil. Drop in the batter in a smaller but thicker Splodge. Et voila!
 
The flax is a guesstimate of approx 40g, 2 eggs, a couple of twists of salt, all whisked up with a fork. This made 2 naan.
 
I might try that too, I've got a pack of protein powder.
Right, the curry was dead easy...chicken breast (I did 4), fried until browned and cooked, half small jar pataks tikka masala paste fried in to the chicken, add a normal size pot of double cream and let bubble got 5 mins or until thickened slightly. I chose to add a green chilli, fresh ginger, garlic and toasted almonds too. It was lovely.

The pancake is on the stove - but you need loads more water than it says - for 88g of powder, I would say 2 cups water to make it really runny to pour into the pan. On that basis I think it would make 3-4 big pancakes?

Later...well I should obviously have waited until I get my new NON STICK frying pan tomorrow because my current one has lost all its stick and was clinging on to the mixture so I couldn't turn it. So, no picture I'm afraid, because it's a mess - but a quick taste test, with some maple syrup, tells me this could be a fab breakfast. I used the Holland and Barrett 90% soya protein powder - 1.4g carbs per 100g - so for 4 scoops, it's 1.04g carbs for the whole mixture. I also didn't add any sweetener (or salt) because I was thinking savoury crepe. IMHO it's much nicer than a cream cheese pancake.

Am going to try again tomorrow - just imagine it with a creamy cheesy mushroom and ham filling.....ahhhhh...:)

Ok, will try those for breakfast and report back.

I eat such amazing things, I can't believe it's a diet! I won't truly believe it until I've had a few weigh ins where the scales have gone down -eek!- I've just had coffee with a slice of Swiss roll, oh man, that was GOOD!
 
LOL you lot are loving the Swiss roll thing - maybe I'll give the oopsies mix another go, once I've moved.

That can be my Christmas holiday cooking treat :)
 
Hey, that's great. I flipped a pancake last week, dropped it and blamed it on my husband somehow!

Oh what a shame Diem, it says it's Ok for ceramic hobs - are induction hobs different to that? (no idea, sorry).

Am going to order one today, I can see it being used a lot, love omelettes and now protein powder pancakes - which I had a bit of this morning and my word it is filling!
 
Made the protein powder pancakes, they looked great, were crunchy and the husband loved them. However, I need to tweak them as I didn't like the texture. I will try a different powder tomorrow and am hopeful.
