This Little Piggy Goes to Atkins

It's been p'ing down all day here, but I really must make the effort and take the dog out soon.
Lunch was mozzarella, tomato, basil and then left over Swiss roll.

Fry up for dinner tonight!
 
Husband had fry up with fried bread (mim) for tea, I decided to try the Courgette noodles. Now, I've never been a fan of Courgettes, but I salted them as per ml's instructions. I don't have a spiral contraption, but I had a Julienne type peeler. I left them for 15 mins, washed them through and fried them in butter with lemon zest, capers, basil, parsley and at the end added a small amount of feta and crumbled fried parma. Delicious!

Oooo had not thought to add feta or lemon Zest to my courgette noddles - what a yummy idea :)
 
Salting really helps! Changes their texture and improves flavor. I never used to like courgette either but adore them now. Great with many kinds of sauce, cheese sauces, even pesto.
 
I think Susie was the first on here to get one! I copied her with much haste. They seem expensive for something that just makes fancy vegetables but it gets used a lot.

I really like it because it gives you three options - spaghetti, thicker ones and sort of curly things, and although it was a bit more £ it gets used almost every day. I like the fact that it's vertical because it helps push harder stuff like carrots through.

They come up on eBay occasionally.
 
Omg, I've just had Courgette pasta again! This time with green pesto (2.9g carb per 47.5g), dash o cream, capers, lemon zest, feta, diced chicken breast. Wow, I could eat that every day. A hit with Mr I Hate Courgette too.
 
Either Will be fine!

Dessert was rhubarb and ginger fool. Couldn't eat much as it's very rich, but it was simple and tasty.
